Trying to get my cooking mojo back (I have some good/bad days on chemotherapy) and love seeing what other people are cooking and sharing ideas.

Please indulge me with photos too!

We’ve got leftover hello fresh roast cauliflower, lentil and harissa pie with cheesy chive mash top. I’m trying to find a link but it keeps opening in the app. It was really delicious and I’ll be replicating it again myself.

Going to attempt Thai fish cakes using bbc good food recipe. Not sure what else to do with them.
I’ve made them before but I can’t remember.

We’ve got leftover hello fresh roast cauliflower, lentil and harissa pie with cheesy chive mash top. I’m trying to find a link but it keeps opening in the app. It was really delicious and I’ll be replicating it again myself.
That looks amazing! How spicy was it? I have a Gousto box coming mid-January (the first I could get!) and really enjoy the recipes.

We've just joined Green Chef after quitting Gousto at the end of last year. Tonight we'll be having their gremolata baked feta with courgetti (though I doubt the results will look as nice as the picture Grin)

I got a Pinch of Nom cookery book for Christmas and am so excited to try out all the recipes! Tonight is day 1 and it's Thai Basil Chicken 😋

That sounds lovely! Take a photo and report back Grin. I have a Pinch of Nom book but haven't tried anything from it yet. I absolutely love cookbooks, I have an entire bookcase of them and always looking for more!

Roast chicken here - mainly because it involves no real thought - and then I can get creative with leftovers for the next couple of days.

I'm doing a spicy pork with rice.

I made it by accident a while back. Pork belly strips in the oven for 30 mins, the pork is cooked but greasy and the crackling wasn't, well, it didn't crackle.

So I was doing a spicy tray bake so I added the pork in small pieces and it was good.

So the pork has been cooked, it is being left to cool.

Later I'll put a tiny bit of oil in a dish, add spices, then slice up the pork into cubes, rub in the spice mixture and oven bake while a cook some rice.

@WeeFae it'll be our first, though I think Green Chef is actually owned by Hello Fresh (it's just their healthier version!), which we used in the past for a long time and enjoyed, apart from it becoming a bit samey after a while.

I love pork belly! I am a bit of a wuss with spices though, what are you using?

I know how you feel, my chemo has really affected my tastebuds and I am often feeling sick! How are you feeling now? And which foods appeal at the moment?

Caponata style aubergines with olives, capers and tomatoes. It’s from the Green Roasting Tin. I haven’t made it before, I’m looking forward to it and added bonus it looks super easy.

If you are a wuss with spices then Schwartz do a 'Spicy Season-All' it has chilli and pepper in it but isn't really spicy, about as spicy as KFC.

For something a little hotter I'd add chilli.

I'll probably use the SSA mix and add a little parica and cumin.

Ginger is good for nausea.

For an easy SE Asian style broth I stick a frozen cube of ginger and a frozen cube of garlic in a pan and add boiling water, that can be expanded easily by adding spices, veg and meat - spicy pork meatballs go well but you can use anything including left overs.

Spaghetti or noodles are also good in this broth.

It's also useful if you have an unexpected vegan / vegetarian guest because it take 10 mins and looks and tastes good.

The last 9 weeks I've been eating LOTS of carbs and not many vegetables.

Just making Nutella's sunshine soup - it says ideal for a nutritional boost which is exactly what I need! Will feedback with my findings.
