Trying to get my cooking mojo back (I have some good/bad days on chemotherapy) and love seeing what other people are cooking and sharing ideas.

Please indulge me with photos too!

So, what are you cooking today?

Easy one for me to start with, going to make this with sweet potato mash www.bbcgoodfood.com/recipes/one-pot-sausage-casserole-with-garlic-breadcrumbs

Made the fish cakes, but it got too late to cook them. Going to add prawn toasts and sour prawn soup to tonight’s menu. All bbc good food recipes .Will post pics later.

Picture of finished meal.

To the broth I added a stock cube, broccoli, a bit of carrot and some frozen spring greens and coriander.

I made too much rice so I might be on fried rive today, unless anyone on here has any suggestions?
OP I'm in a similar but totally different situation, I have arthritis so there are days I cannot cook, if I'm having a flare up it can be weeks (that's when meals on wheels come in handy).

Can I make a small recommendation? Take someone with you to the fitting if you are going to have prosthetics. I went with my mother, she said afterwards she was glad she wasn't on her own.

That dinner looks great! Very fresh too. Thank you for the advice, I will take a trusted friend.

Cook things that either freeze or reheat easily! I try to cook so that I’ve deliberately got leftovers for lunch the next day or portions for the freezer.

I'm having pasta, pesto with olives, bacon and cream.
It's an old favourite that came from a Sainsburys recipe card at least 25 years ago when pesto was fancy!

Leave them out, I often do variations with broccoli, peas, cherry tomatoes, no bacon etc.
It's just turned into a versatile 'chuck whatever in', over the years.

DH made flatbreads for lunch which we had with a mezze. I mashed up the leftover roasted butternut squash to make a cheese sauce with sage from the garden. I'll freeze that for a weeknight mac and cheese. While I was cooking, I roasted some vegetables to use for lunches this week.
Tonight, I'm making a black bean curry, which I'll serve with rice. Might also make up some flapjacks in the oven while I'm cooking. I don't normally cook this much in one go as have a 3mo, but it's a busy week so wanted to save some time.

Nothing particularly fancy here this week.

Today is lean beef mince with onions, mushrooms and mashed 'floury' potatoes with some blue cheese we need to use up (just a tad, we had this mash once already and it is delicious). Seasoned with some herbs and half a sachet of fajita mix we have to hand. Served with broccoli from the freezer.

Other meals this week include:

A stew made with frozen and tinned vegetables and other store cupboard basics and a fresh potato, plus some leftover meat

Stir-fried sweet and sour pork with beansprouts, pineapple, sweetcorn, mushrooms and onion and a sauce sachet. I do know how to make the sauce from scratch but am busy. I'd put a red or yellow pepper in but have run out and not shopping again until the weekend.

Egg fried rice with a few peas and maybe sweetcorn, with finely diced pork (bought a big pack of pork!) and whatever veg from the freezer I feel like. Maybe green beans.

The above works fine with turkey thigh, pork, lamb or Quorn mince, and chicken or turkey in place of the pork. We've done similar with all the above in the past. Simmer Quorn mince with tinned tomatoes for longer than you need to fry off the meat, to avoid it being tough and horrid, likewise turkey thigh (and if very lean, the other types of mince) also needs more liquid, either stock or tomatoes. (We fry with a very small amount of live oil in a non-stick wok-type thing, even less if using lamb or not-very lean beef mince.)

Instant pot gammon (last of the Xmas shop) not done before but very easy....oven chips, kale and fresh pineapple salsa/salad ...pineapple needed using up and v success ful...veggie sausages for dc..
Easy dinner after fancy cooking last couple days! Did cauliflower /tahini from green tray book a few days ago which recommend..
Red cabbage/blue cheese/quince salad also lovely based on Thompson miers in guardian.....am in using the fridge mode...for veg guests m sodha in guardian recipes have been very reliable..

1) watch old episodes of ready, steady, cook
  1. plan which meals are likely to have left overs and use your oven efficiently. So if I have a baked potato I cook too many and the next day make gnocchi. There are various gnocchi recipes but the easiest is just the potato from baked potatoes (or mash) with flower.

If you are roasting a chicken make a stock from the carcass, you don't have to use it immediately, you can freeze it.

  1. have things in the cupboard that will make a meal of left overs, condensed soups make great sauces and fillings for pies.

Passata makes most things into a meal.

Frozen pastry to make pies and pasties.

If you have room in your freezer have a drawer you put left overs in to

Made banana blueberry pancakes for breakfast. Just 1 banana, 2 eggs and a handful of blueberries.

Was quite dizzy last night so didn't make the planned curry, will do it today instead.

I did some rice and a prawn soup thing, which was ok but not delicious.
I did red cabbage with red wine, sugar and vinegar
On the hob for ages. That was lovely actually.
