Trying to get my cooking mojo back (I have some good/bad days on chemotherapy) and love seeing what other people are cooking and sharing ideas.

Please indulge me with photos too!

So, what are you cooking today?

Easy one for me to start with, going to make this with sweet potato mash www.bbcgoodfood.com/recipes/one-pot-sausage-casserole-with-garlic-breadcrumbs

Butternut squash, chickpea and carrot curry in the slow cooker. Trying to up the veggie ante - so far so good

Boring old bolognese tonight.

But two from this week's meal plan which might be good if chemo has affected your taste buds are shakshuska, which is tasty but not spicy, and a cabbage, pork mince and noodle stir fry with lots of fish and oyster sauce

Absolutely nothing because I'm at my lovely Mummy's. She is the best cook I know, so my sole job is to arrange the cheeseboard... and remind Father to fill the glasses occasionally Wink

Had a sad looking cauliflower and some sweet potatoes so I've roasted them with a bit of cumin and turmeric, and I'm going to add them (cooled) to some salad leaves with a lemon, garlic, yoghurt and turmeric (again!) dressing. Will probably throw some assorted seeds in as well for crunch.

And I just made a cinnamon bun cake, in case the salad is too healthy.

Tandoori Roast Chicken and Garlic Mushroom Biryani from the new Pinch of Nom book. Looking forward to it!

Tomorrow is Cauliflower and Potato Madras, probably throw some frozen peas in it for some extra veg!

I too was very poorly earlier this year (tho not cancer, hope your treatment is going ok @WeeFae ) and have put around 21lb on from meds etc, and DH, bless him, has decided he needs to loose weight (he doesn't really) so is supporting me in my latest cookbook purchasing spree!

DH does the cooking here (also having cancer treatment so very happy about that) - for lunch he made steak in red wine and shallot sauce with roast potatoes, long broccoli and carrots. Had a glass of asti with it from NY.

Will probably have something very light for dinner as I had some quality street as well infact it maybe another milky coffee with quality street. Xmas Grin

He made a lovely cauliflower, broccoli and potato bake yesterday and a homemade veg sou.

Sorry to hear you are having cancer treatment too, which one are you having if it's ok to ask?

My DH has been doing a lot of our meals, he made a lovely salad for our lunch today. But cooking is something I really enjoy and I know I am having a good day when I feel up to standing at the cooker Grin

I made really good prawn fried rice tonight.

Fried finely chopped spring onions, carrots, mushroom and garlic until soft, with some Chinese 5-spice powder and red chilli flakes. Microwaved a packet of basmati rice. Added prawns to the veg to heat through, squeezed in a lemon, a tsp honey and some soy sauce. Scrambled an egg into it then added the rice. Stirred it all up and finished with chopped coriander. Very tasty and easy.

WeeFae Sorry you are having cancer treatment as well. It's fine to ask anything or message me if you prefer that. I have stage 3 invasive lobular breast cancer, not got all treatment plan yet, just diagnosed start of November 2021, so lots of tests and a mastectomy with sentinel node biopsy so far. Results from that on 14th January then as I woke from surgery they said maybe more surgery to remove lymph nodes, radiotherapy and hormone therapy. I am hoping it means I escape chemo but not sure, think they may be spreading the bad news so I don't run away. Think it will depend on lymph node results as HER2 negative.

Glad your DH is doing some cooking, hope he is looking after you.

I have invasive ductal, bilateral. In the middle of chemo, my surgery will be in April, double mastectomy and full lymph removal followed by radiotherapy. Also HER2 neg, but hormone positive. What a 2021 we have had!

My 2021 was not too bad but when people wish me a happy 2022, its well intentioned but I am Xmas Hmm as I have cancer treatment quite possibly for whole of it. The mastectomy I recovered from quickly, apart from excess fluid but that is pretty standard, very little pain just needed paracetamol every 6 hours for a week. Mine was single and less lymph nodes, though they said depending on results may be taking them all later now. I will have delayed reconstruction as they were going to delay for reconstruction and just wanted cancer out asap though its a 1 to 2 year wait for that.

Hope your treatment goes well and hopefully this time next year we will both be cancer free and all behind us.

Roast chicken meal yesterday, so this evening was Chicken & Mushroom risotto - cooked by son.
We had sourdough (discard) pancakes with berries/youghurt and/or bacon/eggs for very late breakfast and bread is proving overnight ready to bake in the morning.
Best wishes to those of you going through treatment at the moment.

To the broth I added a stock cube, broccoli, a bit of carrot and some frozen spring greens and coriander.

I made too much rice so I might be on fried rive today, unless anyone on here has any suggestions?
OP I'm in a similar but totally different situation, I have arthritis so there are days I cannot cook, if I'm having a flare up it can be weeks (that's when meals on wheels come in handy).

Can I make a small recommendation? Take someone with you to the fitting if you are going to have prosthetics. I went with my mother, she said afterwards she was glad she wasn't on her own.

Smoked haddock risotto for us. DD2 not happy, but I’m looking forward to it.
I make a dish with no name, smoked haddock, rice and a 50/50 mix of water and orange juice, just stick in a pan leave until the rice has cooked.

Thanks for the sausage casserole recipe was wondering what to do for dinner today. Limited food stores as Covid house at the moment but I have everything to make your recipe.
