Trying to get my cooking mojo back (I have some good/bad days on chemotherapy) and love seeing what other people are cooking and sharing ideas.

Please indulge me with photos too!

A recipe by Nigel Slater for a mushroom and dill tart was on CBC's website yesterday. It looks delicious. Of course I had to get a tart pan with removable bottom so I can venture into tart making.

Pastry has always been a bit of a nemesis for me. My Mom however could bake any kind of pie and make it delicious.

I hope you are feeling well WeeFae. I had surgery last year to remove my ovaries and also an infection that left me in hospital for a week. I find cooking and baking a good way to gradually improve my stamina. It is also just plain fun sometimes.

I choose things I can make in stages with a bit of rest in between.

I hope you are well recovered now, @LoveFall, I plan to have my ovaries removed at some point soon as well.

I find cooking something I enjoy while I am basically self-isolating between chemo sessions, when I regain my appetite. I find food and eating comforting at the moment.

Your baked squash sounds delicious! My DH wouldn't eat but I am sure I wouldn't ned his help anyway Grin

I have really wanted to try Bento boxes for my lunch! Where do you get your recipes & ideas from?
There are loads online. Most are for cold food as it's mostly a packed lunch.

I have an old 'Asian' cookbook with sections on Japan, China, India, Singapore... you get the idea.

Basically a bento needs protein, carbs and veg. I tend to go for protein, carbs, veg/salad and fruit to make a balanced meal.

There are various planners on line, this one is free and will give you some ideas.

Plan for today is microwave shakshuka for breakfast, unsure about lunch then another Gousto meal for dinner - green chicken tacos with crispy corn and pickled shallot.

Well I braised some cabbage - and ended up having an egg on toast because it was disgusting.

The recipe sounded really nice and the carrots that were braised alongside the cabbage were nice.

The gusto meals look good but I think the minimum they do is for 2 people, and I would absolutely eat both portions.

The Gousto meals are great but I only use them when I have a discount and only go for the 3 meal/week ones as I like to use my recipe books for the other days.

No cooking last night besides boiling eggs, as we went for a really simple salad. My DH doesn't like "fancy" salads, so it was really basic.

Not sure for tonight, not much in and I go for chemo tomorrow and will be out of action for a few days. I might treat us to a takeaway while I can still enjoy food!

There's a link to kebab masala on the website but it looks like a job for another day - I'm just going to use garam masala and fenugreek leaves!

How did it turn out @grooveonthemove?

I had my 4th round of chemo yesterday so just had some M&S ready-made dim sum dumplings for dinner. Feeling ok today so may attempt to cook something this evening but I am out of inspiration!

The gunpowder potatoes were amazing Shock You know that moment when you take a bite and your mouth has a tiny orgasm?! Grin They were a bit faffy to make because it was the first time and dry-frying the spices made my house a bit pungent but well worth the effort. I would post a picture but they're all gone now Blush

I'm halfway through making a chicken tikka masala now, I've had to take a break and open the windows 😁 If I could send you some I would Smile

Roast chicken, pigs in blankets Blush roast potatoes, carrots, cauliflower cheese and tenderstem broccoli. Finished with some chicken gravy.

Roast chicken, roast potatoes and parsnips, spring greens, peas, carrot and swede mash, stuffing and bread sauce.

I've also made dolma, Moroccan spiced roasted veg soup and tomorrow's dinner - aubergine parmigiana.

Mmmm at all the roasts happening yesterday!

I am not able to cook at the moment, side effects at the moment include bone pain and swollen fingers, so letting DH do it all just now.

Meatless Monday (or most days as am mostly plant based)

Took me about 1hr to prep and cook.

Black eyed peas sauteed with red pepper, red onions, kale ( pinch of cumin and chilli powder for flavour), topped with avo and Greek yoghurt guac (stick blended for creaminess) homemade pickled onions, and home made flatbread because cba going to shops.

Pickled onions, I sliced 3 onions thinly, then did a mixture of 250ml hot water, 120ml apple cider vinegar, tablespoon sugar, and heaped teaspoon of salt. Add to onions, leave in fridge for 10 mins for quick pickle or can be kept for 2 weeks.

Flat bread (4 medium rolled out) 150g any flour, teaspoon baking powder, 70-100ml liquid (I use water or milk), pinch of salt and a tiny glug of oil and usually I use a tablespoon of yoghurt too but thats just extra boujie lol..mix and knead for 5 mins until smooth and not sticky. leave under tea towel for 10-15 mins, chop 4 pieces, roll out with pin or wine bottle, chuck in dry pan. It's more naaan flatbread but eh, it's easy to whip up if you are out of bread and wraps

I have put two packets of frozen mince, a chopped onion, a chilli con carne seasoning mix and two tins of chopped tomatoes in the slow cooker. Will serve with rice for men folk and a green veg for me.

I don't have any kidney beans, is it ok without or will cannelloni beans do just as well, I have two tins of those...?
