Trying to get my cooking mojo back (I have some good/bad days on chemotherapy) and love seeing what other people are cooking and sharing ideas.

Please indulge me with photos too!

So, what are you cooking today?

Easy one for me to start with, going to make this with sweet potato mash www.bbcgoodfood.com/recipes/one-pot-sausage-casserole-with-garlic-breadcrumbs

Caponata style aubergines with olives, capers and tomatoes. It’s from the Green Roasting Tin. I haven’t made it before, I’m looking forward to it and added bonus it looks super easy.
I bought that book for my veggie DD, the recipes all look great and easy. I look forward to your verdict!

If you are a wuss with spices then Schwartz do a 'Spicy Season-All' it has chilli and pepper in it but isn't really spicy, about as spicy as KFC.

For something a little hotter I'd add chilli.

I'll probably use the SSA mix and add a little parica and cumin.

Ginger is good for nausea.

For an easy SE Asian style broth I stick a frozen cube of ginger and a frozen cube of garlic in a pan and add boiling water, that can be expanded easily by adding spices, veg and meat - spicy pork meatballs go well but you can use anything including left overs.

Spaghetti or noodles are also good in this broth.

It's also useful if you have an unexpected vegan / vegetarian guest because it take 10 mins and looks and tastes good.

I do often have an unexpcted veggie/vegan, when my student DD pops home! It would be great to have a couple of easy dishes to rustle up or keep in the freezer.

I love paprika, that spice mix also sounds nice. It's really just chilli I struggle with, a tiny bit of burn and I can no longer enjoy what I am eating.

Oh, please share the recipe for sunshine soup! Sounds like something I'd enjoy, especially on my sick days. I am in between chemo sessions and just home from a spell in hospital, but my appetite has returned and I am feeling energetic enough to cook this evening. Carbs really help with the nausea, don't they?

Brunch was eggs and toast after a run. Tea is the last picky tea to eat up what's remaining as we've got party food bits still, pie and a camembert to dip in.

Buffet foods today. Was meant to have people round yesterday but we are all poorly. Not Covid , a horrendous chesty cold. So didn't want to spread the love.
No room in freezer so will cook it all to be picked at over .

I do love a buffet tea, we have had many over the last few weeks! Craving proper dinner food now. Might still have cheese and crackers for lunch though!

WeeFae will probably do biryani tomorrow night with leftover chicken, then mushrooms and chicken in a creamy sauce with pasta on Tuesday if there's any left

I'm going to make Jamie Oliver's Hit and run chicken. I use the ready prepared Mediterranean roasting vegetables from Tesco and skinless chicken thighs. I put loads of garlic cloves in - far more than he has in the recipe. I also quadruple the paprika, using hot and smoked, and add a lot more oil and vinegar as with the chicken and vegetables there is a nice juice for the rice. I usually have some of the roasted vegetables left over which I either use in an omelette the next day or as a vegetable accompaniment for another dish.

I’m making a roast chicken with roast potatoes, broccoli, carrots, Yorkshire puddings and gravy. Tomorrow with the left over chicken I’m planning a chicken and mushroom pasta.

mmmmmdumplings.....dh is grateful to you for that comment, I couldn't think what to do with the beef I have in the IP today.

Got some braising steak in the "whoops" counter at the co-op remembered the bendy carrots in the fridge drawer and bought mushrooms to make a nice redwine beefy affair. SO now it's RedWIneBeefyThing with DUMPLINGS!

Tagliatelle with prawns

First, roast some pine nuts till pink. Crush half of them in a mortar with salt, pepper, lemon zest and s bit of lemon juice and a bit of parsley.
As the tagliatelle only take about 2 to 3 minutes to cook (depending on the brand), start sweating some garlic first, add prawns and a dash of lemon juice. Add about 4 tablespoons of pasta cooking water into your pine nut paste, then add it to prawns, then add the pasta and stir well together, making sure not to break the pasta.
Taste to know if you need to add any seasoning, add chopped parsley, serve on warm plates.
I usually serve it with a bit of grated young Parmesan but you can add garlic croutons instead.

DD mentioned we hadn't had risotto for a while. True, it was ex's favourite and I haven't made it since we split up. So, chicken risotto is bubbling on the hob.

Slow roasted a leg of lamb. Me and dh had a lamb dinner.

Tomorrow I will do a lamb hotpot, enough for four people, plus a meal for dh to take to work.
