Trying to get my cooking mojo back (I have some good/bad days on chemotherapy) and love seeing what other people are cooking and sharing ideas.

Please indulge me with photos too!

So, what are you cooking today?

Easy one for me to start with, going to make this with sweet potato mash www.bbcgoodfood.com/recipes/one-pot-sausage-casserole-with-garlic-breadcrumbs

DH made chicken and pork belly noodles last night with peppers and mange tout, very good.

I think the cannelloni beans would be just fine for the chilli stew!! I prefer them over kidneys actually lol

Pickled onions, I sliced 3 onions thinly, then did a mixture of 250ml hot water, 120ml apple cider vinegar, tablespoon sugar, and heaped teaspoon of salt. Add to onions, leave in fridge for 10 mins for quick pickle or can be kept for 2 weeks.

Flat bread (4 medium rolled out) 150g any flour, teaspoon baking powder, 70-100ml liquid (I use water or milk), pinch of salt and a tiny glug of oil and usually I use a tablespoon of yoghurt too but thats just extra boujie lol..mix and knead for 5 mins until smooth and not sticky. leave under tea towel for 10-15 mins, chop 4 pieces, roll out with pin or wine bottle, chuck in dry pan. It's more naaan flatbread but eh, it's easy to whip up if you are out of bread and wraps

Maybe I wasn't quite ready to be cooking Blush because I burnt the chicken! It still tasted ok, it was just the marinade that caught.

No cooking tonight as I am out for afternoon tea with friends later.

Pea and parsnip soup, was feeling the cold today!!

I chopped two small onions, half a leek, 1 carrot, 4 parsnips and veggie broth, chucked half a bag of peas in and stick blended for creaminess. I just eyeballed amount of broth and water as needed.

Served with pizza toast ?tomato puree and cheese lol.

I've been in hospital for a few days, the food was so dire!

Home now and planning to start cooking again tomorrow. First up will be Nigella's Sunshine soup to restore my energy!

Simply cook subscription - Chipotle honey salmon. Definitely recommend we have 4 a month and have a simply cook every Saturday

I tried Simply Cook a couple of times but they are mostly too spicy for me and I got bored of the few non-spicy/mild ones. Would love to see the photos of your salmon though!

Sad to hear about your hospital stay! That tagine looks yum

DH cooked mostly. He did oatmeal for breakfast and aubergine veggie lasagna for dinner

I did leftover lunch with burrito beans and potato salad. And dessert of chocolate oatmeal pudding..

Making a pea soup in the Habitant (French Canadian) style, plus a loaf of no knead bread with a bit of maple syrup, bacon, and cheese baked into it. Just about to turn the oven on to preheat with my Dutch oven in there ready to bake the bread.

So sorry you had some time in hospital. In know what you mean about dire food. I found some borderline inedible.

Have your self a nice chicken soup with some ginger and lemongrass in it. So good and nourishing.

I did a chilli, served with cubed smoked paprika potatoes. Prefer those to rice

I am craving nourishing food, so that's a good idea!

Wow WeeFae that looks delicious. Tonight I am going to make a one-pot wonder.

I cook a bunch of ground turkey, season generously, usually garlic and Lebanese zatar. Also shallots.

Clean and cut up a huge bunch of kale, and cook that in the same pan with lid on. I usually add a bit of cooking sherry for moisture.

Then I make up a box of Annie's organic macaroni cheese and stir that in at the end.

I know it is slacking to use the boxed pasta, but it simplifies things and tastes good.

Warm and comforting. And nutritious.
