Trying to get my cooking mojo back (I have some good/bad days on chemotherapy) and love seeing what other people are cooking and sharing ideas.

Please indulge me with photos too!

So, what are you cooking today?

Easy one for me to start with, going to make this with sweet potato mash www.bbcgoodfood.com/recipes/one-pot-sausage-casserole-with-garlic-breadcrumbs

Chicken tikka skewers (plain for 5 yo), mango chutney, spinach salad and brown rice. Norwegian custard buns (skoleboller) for afters.

GoldilocksZone · 04/01/2022 12:19

Patatas bravas with aioli for dinner tonight, have to de-chilli the sauce for the kids though!

@BlueFlavour

I did some rice and a prawn soup thing, which was ok but not delicious. I did red cabbage with red wine, sugar and vinegar On the hob for ages. That was lovely actually. Pancakes look good *@WeeFae* Hope today is a good day Smile
Much better day today, fingers crossed it stays that way!

Do you have any meat or cheese or something with it?

No, it's plenty fine on its own. One of our few veggie dinners. I use felicity cloake's method online. Just lots of yummy roast potatoes!

WeeFae · 04/01/2022 20:26

I made both the curry I planned and also a quick tomato & roast veg gnocchi bake. We ate the gnocchi, the curry will probably taste better after a night in the fridge anyway.

Cooking a simple chicken stir-fry for lunch and having the coconut & sweet potato curry for dinner tonight, with naan breads.

Looking good @WeeFae
Not sure about today. Might do a chicken curry, but only ds1 and I like it Grin
Oh well.

WeeFae · 05/01/2022 10:26

How many of you are there? Here, there are too many different tastes/dislikes so often someone has to fend for themselves or we'd be limited to a very limited range of dinners! We have a veggie, a veggie avoider, one who likes "traditional" food and one who dislikes pasta/egg/cheese! And I can't have anything too spicy.

I'm going to sound like I'm trying to enable you to waste your life on social media, but....

I was feeling massively stuck in a rut cooking-wise and then I listened to an episode of The Food Programme on R4 the other day about the huge popularity of Tiktok for food and cooking. I downloaded Tiktok a couple of days ago and I haven't felt so inspired to cook for years! I only follow cooking accounts, so I'm not glued to videos of lip-synching teens and cats doing stupid stuff, honest!

MackenCheese · 05/01/2022 11:01

I've got some beef mince in the fridge. I was planning to do Jamie's chilli con carne meatballs. We watched it on TV last night, so I'll have to guess the quantities. Now I'm regretting giving away the book!

I am already addicted to Tiktok (on those days where the chemo brain fog rules out reading etc), any recommendations of who to follow?

You give away cook books Shock

I did actually give away 2, the Pinch of Nom one and Two Chubby Cubs - both were awful and I hadn't realised they were Slimming World based.

If you saw how many cookbooks I have you'd be giving some away too 😂. And I'm still stuck in a food rut.. Just need to find some tins of beans at the back of the cupboard.......

These? Jamie’s website is great. I use it a lot for veggie recipes.

Well I'm only a couple of days into my addiction, but so far I like cookingbomb, samseats, cookingwithayeh, thomasstraker, thatfoodiejess, shreyacookssss, theemoodyfoody, hungryhappens and justinesnacks. But now that I'm following all of those, I get lots of other great cooking videos on my 'for you' feed too.

The first thing I tried was just a simple lunch omelette-in-a-wrap thing, but it was really good!

I had this for lunch and it literally took me 5 minutes. Was so tasty!

Fresh tuna steak pan fried in a bit of soy sauce
Jasmine microwave rice
Tom sauce I used a tomato bruschetta sauce, and a teaspoon of satay sauce
Avo - bit of salt and lemon juice.

Took minutes and was really tasty!

What are you cooking today?
WeeFae · 05/01/2022 15:18

That looks really tasty @feedthepeony!

I ended up having the sweet potato and lentil curry for lunch, no rice but a bit of naan with it. I'd use less stock next time, but it still tasted great.

That looks lush, sweet and sour chicken is one of our household faves 😋

Tonight, I'm going to make baked bean dirty rice from Nadiya's Fast Flavours book, to use up some store cupboard items.

Tipped a bag of frozen peppers in an oven dish with a sliced onion and some tomatoes, chilli, herbs and oil. Roasted until they got a bit blackened on edges. Cooked a bit of chopped up bacon. Mixed the cooked veg with the bacon, some sundried tomato pesto and spaghetti. Parmesan on top. It was very nice and used up a lot of random odds and ends.

LoveFall · 06/01/2022 21:56

Mexican bowls. We have molds that turn tortillas into a taco salad bowl without needing oil. Just bake them.

Then fill with a variety of taco fillings, just as spiced mince beef, chopped tomatoes, shredded lettuce, black beans, chopped onions, sour cream, and salsa.

Very tasty.

I use cumin and chili powder in the meat.
