Trying to get my cooking mojo back (I have some good/bad days on chemotherapy) and love seeing what other people are cooking and sharing ideas.

Please indulge me with photos too!

So, what are you cooking today?

Thought I'd mention we had home made chicken noodle soup last night. With freshly baked 100% whole wheat bread.

I am a bit obsessed with the no knead breads that seem to be popping up everywhere. This is the one I made:

It turned out well. Baked in my ancient cast iron dutch oven. I sprinkled the top with pumpkin seeds. It made great toast this morning too.

@LoveFall I made bread in my dutch oven years ago, it had a lovely crust on it! You have inspired me to try making it again, thanks for the recipe link.

I made it up myself, I use frozen cooked chicken pieces from Aldi, add smoked pancella lardons, some red onion cook it off in a pan on hob then make a white sauce or a cheese sauce, add some dijon mustard to sauce, put chicken and bacon in a oven dish cover with sauce then I blitz some breadcrumbs, cheese and butter in a food processor, cover chicken mixture and cook on 180c for about 20mins until crumble topping is brown, very tasty and quick to make

Made a version of this for breakfast, but added fridge stuff that needed to be used. I added a spoon of red pesto, used jarred roast peppers instead of salsa. Didn't have any pitta with it, it was filling without, though if I was doing this for lunch I'd probably add it. Very tasty!

Today I cooked mushroom, chickpea and spinach curry, enough for tonight and spare to freeze for a cooking free evening.

I’ve also done a load of lentil and bean chilli and a tomato & red pepper soup, both also for the freezer.

If that sounds industrious of me it’s only because I’ve been awake since 3am and up since 5 🙄.

Sausage penne with tomato sauce (from freezer) with peppers, onions, jarred artichokes, fresh tomatoes, basil, fennel and lots of garlic.

Just couldn’t sleep @WeeFae. I reckon it was down to a lack of wine so I’m glugging a few glasses now in the hope it helps me sleep tonight Grin.

Still, I suppose it does mean some time saved on a couple of lunches/dinner this week.

Cooking from ds1’s Kung fu panda cook book today. Made the sauce, very spicy.
Fried pork wrapped in lettuce leaves. I will have veggie version.

Last night chicken baked in the oven with a crispy coating. Small new type potatoes baked also, plus a whole butternut squash cut in half, cleaned and the baked in tin foil with a bit of butter, mixed spice and maple syrup.

Also steamed broccoli.

Between DH and I we ate the entire squash!

For some reason DH and I find that meal comforting and familiar. Kind of the meat, potato, and two veg thing probably. We have it probably 2 or 3 times a month in winter.

I am a bit weird as well as I love to sprinkle nutritional yeast on my vegetables to add a bit of umami.

I made a cinnamon raisin bread in the bread machine last night and really enjoyed it as toast this morning. I used a white bread recipe and just added the raisins and cinnamon when the machine beeped,
