What did you have for dinner tonight?

I'll go first. I'm hoping to get some nice ideas 🙂that I wouldn't think of myself as my brain is tired of working out what were all going to eat every day 🙄

Today we had (per person):

1 large protein wrap with sliced, seasoned fillet steak, cooked rare (150g), 200g sliced and fried mushrooms and 80g fried onions and 40g grated red Leicester and cheddar cheese with garlic mayo.

It was delicious and very filling 😋

Also what's the oddest thing you've made with leftovers?

Last week, to save it from going to waste, I ended up eating diced cooked carrots and boiled potatoes mixed together with some salad cream and diced, pickled gherkins. Sounds weird but tasted okay 😂

It's just how I am, lol. Spent most of my 20s and 30s on a diet so I just got used to weighing and measuring. Now it just comes natural to me to guesstimate by eye (and I'm usually pretty spot on).

Also, if I use a pack of 500g mince between 4 meals I know it's about 125g per portion.

I don't spend hours weighing everything 🤣

Nigella's recipe for Rigatoni Al'Arrabbiata Con Crema. I add bacon lardons to it to make it go further. It's really tasty!

I had my quinoa and chicken salad again tonight
DH had lentil and bacon soup and cherry cake
Dad had chilli with cheese and spicy wedges and cherry cake
DS2 had lasagne, fish fingers and spicy wedges, and a whole angel cake

Tofu in char Sui sauce. The sauce was homemade but a portion I froze from ages ago. DH accidentally defrosted it so it was needing used. It was cracking.

Poached salmon, air fryer chips and green beans. The chips were a compromise for DD who has severe allergies and had an absolutely rubbish offering at school lunch today (they are generally brilliant, but it happens)

I had very similar except the salmon went in the air fryer too, and I had petit pois instead of the green beans.

Satay chicken with stir fry veg and rice.
But I messed up the satay sauce and it was too much like peanut butter. Everyone still ate it though.

We were supposed to have an elaborate seafood risotto but DH got stuck in meetings and I got tired and couldn't be arsed to cook so now we're having Thai food delivered. In our pjs in front of the fire.

Friend round so I did home made French onion soup ( v good, made a couple of days ago and left to 'mature' ) then sea bass fried swiftly in olive oil and I made a sort of last minute Thai broth with leftover bought fish stock, red chili, grated ginger spring onion and lemon. Served in the broth with egg noodles and broccoli to use up. Home made banana cake ( over ripe bananas) a bit later and a cup,of ginger tea. All went down very well .

Lamb and white bean casserole with mashed swede, tenderstem and cavolo nero. Two homemade florentines (not very good) and more red wine than intended.

Another salad:
1/2 cucumber, 2 tomatoes, 1 yellow bell pepper, feta, spinach, grapes, strawberries.
Vinaigrette of vinegar, Dijon, evoo, bit of salt.
Carrot cake w cream cheese icing to follow!!!!

We're having leek and potato soup today. I'm in a lot of pain, so I'm doing something easy.

Went shopping and they had bags of fresh leeks and potatoes already prepped and reduced to 41p, so I'll be adding stock and some herbs, etc, to them to make a soup. 😋

Got 4 slices of bacon to use up, too, so I may cook them until crispy and then add as a topping to the soup.

Fishcakes tonight.
Had spare mash from last night, and a bit of cod from the freezer. Last time we had fish there was some parsley goop left over, (can't call it sauce as it was thick...) we froze it in ice cube trays, so mixing the fish, potato.. a little flour and egg, and forming it round the cubes before cooking. Has worked before, so fingers crossed.

Will have with peas, green beans and Broad beans, maybe some roasted potato cubes as I want some to top corned beef hash for tomorrow.

Monday was Shepherds pie and I cooked. Tuesday was Dhaal and rice cooked by dh.Today is butter chicken and naan made by me.

Last night was a full English as requested by the youngest Ds.
I didn’t fancy it so had some left over homemade leek and potato soup with toasted sourdough.
Tonight it’s roast beef, roast potatoes, broccoli and Yorkshire pudding.

Haven't had Dhal for ages, so need to put that back on the meal plan. I usually serve it with freshly made paratha 😋
