What did you have for dinner tonight?

I'll go first. I'm hoping to get some nice ideas 🙂that I wouldn't think of myself as my brain is tired of working out what were all going to eat every day 🙄

Today we had (per person):

1 large protein wrap with sliced, seasoned fillet steak, cooked rare (150g), 200g sliced and fried mushrooms and 80g fried onions and 40g grated red Leicester and cheddar cheese with garlic mayo.

It was delicious and very filling 😋

Also what's the oddest thing you've made with leftovers?

Last week, to save it from going to waste, I ended up eating diced cooked carrots and boiled potatoes mixed together with some salad cream and diced, pickled gherkins. Sounds weird but tasted okay 😂

We had something like bolognaise but with pork mince and mixed taco beans to save ££ but keep the protein! We have it most Mondays 5% fat pork is also not vacuum packed in Sainsbury’s! I can’t buy their beef now it’s awful!

I had red, white and black quinoa with cubed butternut squash, edamame beans, chicken, peas, carrots, chickpeas, peppers, parsley and red onions, in a ginger and lime dressing. Followed by fresh cherries and an orange.

DH had homemade fish pie and peas followed by apple and blueberry crumble and custard. My dad had homemade shepherds pie and peas, and the crumble and custard. (Dad hates fish and white sauces - I batch cook various pies and freeze them in portions so DH can sometimes have something Dad doesn’t like).

DS2 will be home in the small hours, and will have chicken and leek pie with wedges and peas, then he’ll probably polish off what’s left of the crumble.

I’m impressed that you weigh everything.

I had homemade chicken and vegetable soup, made from the leftover roast chicken and 7 or 8 vegetables over the weekend. I also had some granary bread to dip.

The veggies in salad cream reminds me of a dish my mum made called Russian salad. It was tangy.

Sainsbury's Prawn, Chilli & Garlic Ravioli with a homemade tomato, garlic and olive oil sauce. It was bland, and will not buy it again.

We had chicken thighs peppers and cherry tomatoes cooked in one of those Maggie garlic chicken bags. With chips, carrots and sprouts (veg that was left to use up before Tesco delivery tomorrow.)
Was delicious and is added to our low effort meals bank.

Toasted wholemeal pitta, cucumber sticks, red pepper, dipped in houmous. And some blueberries. But I had a very late lunch of sweet potato, more cucumber, tikka soya protein pieces and avocado.

Leftovers for some, so we all had different things.
Texmex beef rice bowl.
Haggis and mashed tatties with freezer veg.
Fried egg sandwiches.
Tomato soup with bread and butter.

Tomorrow is mac and cheese with optional fried bacon lardons, leeks and mushrooms.

@sprigatitodo you run a short order cafe?! One meal on the menu here, chicken thighs, roasted with new potatoes, Lemon & garlic, with steamed broccoli. No pudding but noticed the teens tucking into their chocolate stash a moment ago…

I did a lentil and bacon hotpot thing that I made up. Its basically a lentil and mushroom 'mince' ragu with some fried off pancetta added, with sliced par boiled spuds on top, baked until golden brown. Had it with peas and broccoli.

It does feel a bit like it sometimes 😆 but I’m not a martyr, honest! Dad is underweight and has Alzheimer’s so his taste in food is too restrictive for everyone else. DS2 is also underweight (different health issues) and he works antisocial hours. And I am trying to lose weight, so what’s good for them is totally unsuitable for me. I don’t spend my life cooking though, I batch cook and then DH does the heating up and serving.

i tried to make crispy tofu as an accompaniment. It didn’t really come out right as I followed the recipe and pressed the tofu to extract liquid but I pressed too hard and it fell apart so it was in random small pieces rather than regular slices.

We also had rice and pakchoi cooked by dh and that was delicious.

Poached salmon, air fryer chips and green beans. The chips were a compromise for DD who has severe allergies and had an absolutely rubbish offering at school lunch today (they are generally brilliant, but it happens)
