What did you have for dinner tonight?

I'll go first. I'm hoping to get some nice ideas 🙂that I wouldn't think of myself as my brain is tired of working out what were all going to eat every day 🙄

Today we had (per person):

1 large protein wrap with sliced, seasoned fillet steak, cooked rare (150g), 200g sliced and fried mushrooms and 80g fried onions and 40g grated red Leicester and cheddar cheese with garlic mayo.

It was delicious and very filling 😋

Also what's the oddest thing you've made with leftovers?

Last week, to save it from going to waste, I ended up eating diced cooked carrots and boiled potatoes mixed together with some salad cream and diced, pickled gherkins. Sounds weird but tasted okay 😂

We had something like bolognaise but with pork mince and mixed taco beans to save ££ but keep the protein! We have it most Mondays 5% fat pork is also not vacuum packed in Sainsbury’s! I can’t buy their beef now it’s awful!

M&S do better mince.. not vacuumed packed and cheaper than sainsburys.

Used up all my leftovers - made haggis, neeps and tattie bubble and squeak cakes and added a blob of Epoisse that didn’t get eaten at Christmas sort of embedded into the top of each one.
Was absolutely delicious served with beans but not terribly healthy

I made a beef casserole with lots of root veggies and red wine. It was bloody delicious and I made double so another dinner in the freezer when we need something quick and easy. Served with crusty bread and yoghurt and fruit for dessert except for DD who had blueberries and squirts cream.

I had loads of sweet potato and red peppers so also made a soup for lunches this week.

I have my dinner mid day and tea at evening. I had early dinner at 12 of kipper and poached egg and a slice of butterd whole meal bread.
For tea l had loads of things to use up.. celery / a leek/ a carrot bit of swede and a baking potato along with an onion and cheats garlic and a veg stock pot it went into my soup maker. 😋Frozen a tub for another day.. For afters l had chopped apple / melon/ strawberries/ pineapple and a tangerine with some blueberries and walnuts. Dr Amir Khans idea.

On a Monday I get my grandchildren give them dinner and look after them after school till parents finish work.
Parents are vegetarian however the kids get what they want.
We had homemade lentil soup, tenderised chicken dipped in egg with seasoned breadcrumbs, chips, mixed salad and coleslaw and red berries with melon as a dessert. However as a naughty gran a wee sneaky doughnut as a treat. Plates cleared, happy children and happy gran. 😀

I’m single and nearly 70, and swing between eating sensibly and…. not eating sensibly. I’m tired, irritated by hip pain, and stressing about a couple of upcoming commitments to help various friends and family, that I don’t want to do but can’t let any of them down at such short notice. When I feel like this I just want carbs, which probably make it worse.

For breakfast I had porridge with cinnamon and flaxseeds, blueberries and a chopped pear, with two mugs of instant coffee.

Lunch was four Ryvita thins with butter and cheddar cheese. One coffee.

This evening I ate a handful of Pringles (bought for Christmas but nobody visited), with a spoonful of cottage cheese, and later had a tin of rice pudding,

Tomorrow will be better. It has to be.

We had a Simply Cook meal. Spicy chicken sausage pasta with peas running through it. I’d definitely recommend it. Fast, easy and tasty

To be honest that just sounds like a salad olivieh missing a few ingredients. And absolutely TOP dish!

We had gingery salmon with rice, courgettes and avocado. Something a bit faux Asian.

Now I'm angry-snacking on bread sticks while trying to avoid the work I need to do...

My son is learning to cook.
He made chicken stir fry.
Lots of garlic,ginger and chilli.
It was really nice.

We had roast chicken crown with sourdough (torn into big chunks and thrown in with the chicken for the last 10 minutes until crispy on the top and soaked in juices on the bottom) with green salad and green beans.

Holy moly this sounds epic

Pasta with chicken breast, spinach, red onions, garlic, chestnut mushrooms, fresh basil with steamed asparagus. The lads had crème fraiche mixed in, I didn’t as due to high cholesterol and a newly diagnosed heart issue I’m trying to readjust. Chicken cooked in a splash of olive oil and then water added to also steam it through post fry.

I had a very small portion of pasta as I had porridge oats cooked in water with a splash of milk and a handful of bluberries for I would say pudding but it wasn’t really was it.

🤔 I've not had haggis for a while. Really like it, so will be adding that to one of our upcoming meal plan, thanks 😊

We like Asian style food, pork and chicken so might do some kind of ramen dish and maybe a mutter paneer curry, too.

We're all meat eaters but try to have 2 to 3 meat free meals a week. I implemented that a few years ago for health reasons and we mostly stick with it.

I tried Gousto and hellofresh when they had an offer on a few years ago and it was nice not having to think or prep much. Too expensive to have regularly, though.

@YourWinter... that sounds like me. I've been stressed lately and not eating as well as I should. Keep meaning to start meal planning and eating better but it doesn't last. I'm constantly exhausted and falling asleep at the drop of a hat, too.

We batch cook so use them Monday - thursday. We have about 8 Meals on rotation so it's never the same thing week on week. Tonight was Spanish chicken with chorizo sausage and rice.

Dinner never takes more than 15 minutes in the week!

Would you share some of the meals you have?

It’s a firm favourite here. We are huge hairy bikers fans here. Their recipes are so reliable.

I'm making mushroom risotto tonight, using chestnut mushrooms, onions, stock, grated red leicester cheese and butter to get it nice and creamy.

Sure! We make it in a big pot and get 6/7 dinner out of them.. takes about an hour but time well spent!

Chilli con arne
Spanish chicken and chorizo
Spag bol
Chicken jalfrezi
Korma
Sausage casserole with potato dumplings
Shepherds pie
Meatballs
Mushroom and lentil ragu
Lasagne

Everything is put into two portions then when needed 10 mins in the microwave along with rice/pasta or a salad. So easy!

Last night was a spicy tomato and lentil soup with a cheese toastie.
Tonight is firecracker beef noodles.

Last night we had aubergine katsu with rice and also some smoked haddock on the side.
Tonight it's bean chilli with rice, tortilla chips, guacamole and sour cream.
Tomorrow tofu red thai curry
Thursday, might do homemade pizza.

Off to google some Hairy Bikers recipes as they sound epic!

I had a bowl of homemade broth, a bit of stottie with cheese savoury filling and a fruit scone with strawberries and clotted cream.
