What did you have for dinner tonight?

I'll go first. I'm hoping to get some nice ideas 🙂that I wouldn't think of myself as my brain is tired of working out what were all going to eat every day 🙄

Today we had (per person):

1 large protein wrap with sliced, seasoned fillet steak, cooked rare (150g), 200g sliced and fried mushrooms and 80g fried onions and 40g grated red Leicester and cheddar cheese with garlic mayo.

It was delicious and very filling 😋

Also what's the oddest thing you've made with leftovers?

Last week, to save it from going to waste, I ended up eating diced cooked carrots and boiled potatoes mixed together with some salad cream and diced, pickled gherkins. Sounds weird but tasted okay 😂

I made my own homemade beef olives yesterday, made enough for tonight's dinner too 😋. Tomorrow its bolognaise to use up the rest of the peppers and onions.

Loving this thread and the inspiration! Havent made beef olives for years. That might have to be on the menu this weekend. We had homemade burgers with sweet potato wedges and salad.

We had a large salmon steak which had been reduced by 30% in Aldi, with broccoli, spring onions, garlic and sweet chilli sauce, and some egg fried rice. Rice was left overs.

Its my polish papas recipe, I haven't made them for a long time because its a faff but we fair enjoyed them. I love a homemade burger, i might make them at some point this week 😋

Hot dogs! I haven't had them for ages and dd had a craving for one so thought why not! Used a part baked baguette though rather than a typical hot dog bun which was delicious! Followed by a creme egg! (Diet went out the window today!)

We had chicken goujons in wraps with the only salad that my kids will eat but they love it and eat loads (finely diced tomatoes and cucumbers with seeds removed, finely diced red onion and coriander )

It had to be a quick dinner as my stepdad with Parkinson’s fell badly so had to help him and my mum out and DS1 had a counselling appointment at 6.45.

Tomorrow we’re having make-your-own pizzas.

Made from scratch vegetable rosti’s, roasted. Topped with two poached eggs, smoked salmon and kale and sweetcorn. For dessert, 3 spoons of 0% Greek yoghurt topped with a few crumbled caramelised pecans and drizzled with a half teaspoon of good honey. Very tasty and two veg rosti’s to save for tomorrow when I’ll have them with beans.

I had chicken wraps with slaw and spicy mayo ‘with a side salad
DP - had a tomapork with dauphoise potatoes
DS - had a tomapork With mashed potato’s
dd13 - had a pot noddle with hash brown fries on the side 🤭

tomorrow is just me and dc and we are having homemade chicken burgers with bacon jam 🙃

We had steak with salad, new potatoes, homemade peppercorn sauce and my new favourite addition to a steak dinner, a couple of slices of pan-fried halloumi.

all prepared by my personal chef aka Mr KnitFast, he’s a dab hand in the kitchen and does 90% of the cooking AND washing up.

Sushi from yo.sushi in tescos, then i made a spicy Asian style broth and prawn wontons, followed by frozen mochi.Prawns and mochi were in the freezer. Just had to buy greens and sushi. Was lovely, but not filling enough.

A sort of scotch broth made with lamb mince, pearl barley, carrots, leek, swede, celery, potato and onions. Served with bread and butter

Tomorrow is garlic and chilli pasta with steamed broccoli. Wednesday is** jacket potato with miso tuna and Thursday will be blackened chicken salad with quinoa.

Op can I ask why you weighed out the servings per person? Only asking as I’m being nosey 😂 we just serve on to the middle of the table and everyone takes what they want, I don’t know how many grams of anything I have let alone anyone else!

We had cottage pie with leftover slow roasted lamb shoulder last night, green beans and Cavalo Nero. Ds had ice cream after.

I portion stuff before I freeze it. I took out 450g of steak between 3, I didn't weigh it onto plates as such, I just shared it out by eye. I guess it would be more accurate to say each portion was between 130-150g. The mushrooms were a pack of 400g, shared between 2 of us, so again an estimate. Onion was one of 4 (bit bigger than the others) and the total weight was 800g.

I'm just pretty good at estimating weights and portion sizes as I've spent years on diets in the past, lol.
