What did you have for dinner tonight?

I'll go first. I'm hoping to get some nice ideas 🙂that I wouldn't think of myself as my brain is tired of working out what were all going to eat every day 🙄

Today we had (per person):

1 large protein wrap with sliced, seasoned fillet steak, cooked rare (150g), 200g sliced and fried mushrooms and 80g fried onions and 40g grated red Leicester and cheddar cheese with garlic mayo.

It was delicious and very filling 😋

Also what's the oddest thing you've made with leftovers?

Last week, to save it from going to waste, I ended up eating diced cooked carrots and boiled potatoes mixed together with some salad cream and diced, pickled gherkins. Sounds weird but tasted okay 😂

Things have again been hectic here as I've had exams to study for, so meals have been quick and easy, with help from dh.

So we've had:

Asian meal out was delicious. Service was a little slow and not well coordinated, but they're new, and the quality of the food and their friendliness more than made up for it.

Potato Gnocchi baked with a roasted veg sauce and some grated cheddar

Paprika, garlic and herb chicken served with peppers, onions and pak choi and Greek style flat bread

Homemade sourdough naan stuffed with cheese and garlic and leftover curry

Tuna steak with ginger lime garlic & honey glaze and rice, with pak choi and spring onions and sesame seeds

Noodles cooked with pak choi, onions, garlic, ginger, mushrooms and peppers and a teriyaki style sauce.

Another meal out after exam...Thai food.. roast duck with tamarind sauce and sticky rice

Tonight we had lamb and mint kofta served with local cucumber from the farm shop and a mint/yoghurt sauce. Also, I roasted some veggies that needed using up and we had those with it, too.

I'm marinating some pork ribs ready to (slow and low) roast tomorrow. I'm using a smoky bbq style marinade. Not sure what I'll serve it with, but probably corn on the cob and some homemade chips.

Still want to make the beef olives (& a few other things from here), but not sure when. Maybe next week, once dc are back at uni, etc?

That all sounds yum! We had homemade king prawn chow main and prawn crackers. You can't get prawn crackers here so I have to fry them up myself!

Today we have

Tomato, cucumber and mozzarella salad with balsamic vinegar
Tuna pasta bake (pulled from the freezer)
Easy peelers and ice cream.

I also have a bag of stir fried veg that needs to be used up. Im thinking of just cooking it up with alot of frozen spinach and making a cream of vegetable and spinach soup. Not sure it will work, but worth a try.

Last night - roasted lemon chicken drumsticks with croutons, salad and broccoli. Ina Garten recipe - you pour the roasting juices from the chicken on the garlic croutons - deeelightful.

I did the soup. It's gone a funny smell (probably the cabbage bits) but tomorrow I will blend it, add nutmeg and see what happens.

Otherwise we got home late so the Dcs had sausage and chips from the chippy. I performatively made a tomato and cucumber salad for the side which has gone untouched. I had toast with tomatos. Plus wine. Tomorrow's another day and I am tired of this one.

Salmon with sweet chilli, soy and ginger. Stir fried pak choi, peppers and mushrooms. Brown basmati. Healthy and delicious!

Well, the pork ribs went down a treat. They were bought from the local butcher last year and had been sat in the freezer waiting to be used. Lots of meat on them. Had them with seasoned paprika chips, but sweetcorn rather than corn on the cob 🌽 as I didn't have any cobs left. Had peas, too.

Even our daughter came home for it, lol, so it must've been good. 😅

Tomorrow is leftovers day.

Loved my summery lunch, too. Rice cakes with chive soft cheese roulade, cucumber, red onion and cress.
In winter, I always forget how much I enjoy summery foods.

This is yesterday now but One Pot Tuscan Inspired Creamy Pulled Chicken Stew.

My carer is learning to cook so I'm buying 'Hello Fresh' to make it easy, or that's the theory, not all the recipes are straight forward.

I live alone so the three meals they send actually turns in to 6 meals for me (carer eats different food) so I either eat the same 2 days running or make something with the unused 1/2 of a recipe.

I thought it was going to be horrendously expensive but for me it is less than £40 a week, which is what I would pay at the supermarket and then throw away because I wasn't well enough to cook.

Tangerines for pudding. I'm having salad caprese, then baked salmon with creamed spinach. Aldi has pre-prepared creamed spinach in their weekly special buys this week.

If you hate planning it can help, you can plan a month ahead and if you don't put anything in your basket they will chose for you.

Occasionally you need to add to what is in the pack, water isn't included (of course) and you might be asked to supply an egg.

I found hello fresh took twice as long as it said to prep and cook (gusto as well) maybe I'm just slow...

We are had homemade pork and chorizo burgers - 3 x pork to 1x chorizo, more paprika and garlic than you think you would ever need + egg, +salt and black pepper, + handful of breadcrumbs.
Was really nice.

After a week where DH is home (he works away alot of the time) we had alot of takeaway and pubs dinners out.

So tonight:

DCs- cream of vegetable soup with a slice of baguette
Steak hache with frites and a tomato cucumber salad
Mini magnums

I am having -cream of vegetable soup
broccoli and cheese quiche (thanks Mr Co-op) with a green lentil, sweet potato and feta salad.

I made the soup and the salad yesterday and the rest is easy.

We went to an amazing bbq restaurant and ordered a massive platter of meat we couldn’t finish. So we will be eating that tonight. And possibly tomorrow with mash and corn and green beans. It was so good.

Tonight is roast dinner... was not making anything on Mother's day, so we're having it today instead.

Pork with crackling, roast potatoes, roast veg, mashed swede and carrot, cabbage and gravy. Making lots of leftover mash, roast veg and cabbage for a fry up tomorrow... or maybe a corned beef hash... mmmm

Tonight it has to be easy. So i am throwing bbq ribs (Aldi) and marinated chicken wings (Aldi) into the oven, with baked potato (via Aldi) and sweetcorn.

This meal may have been inspired by @FurForksSake Smile

Sorry for the absence...life gets in the way.

Had some tasty meals over the last few weeks.

Thai noodle salad with marinated chicken pieces, which our dc made for us.

Bratwurst with mashed potatoes and cabbage.

Sausage and beans on toast

Miso and ginger marinated cod with jasmine rice

Mutter paneer with paratha

Homemade creamy chicken soup served with homemade garlic ciabatta

Duck egg and chips

White sausages with sweet mustard and a roll

Fried aubergine with ricotta and spinach tortellini and a tomato and mascarpone sauce

Lamb leg, slow cooked in stock with a mix of Greek spices/herbs, as well as onions and orange peppers, served with Greek potatoes and runner beans

Falling asleep now so I will finish tomorrow.

How is everyone doing?

You were up late/early! Hope you got some sleep. I was up around the same time- but that was searching for a wayward cat who had not come in for her dinner. (Felix, fish selections in the spirit of the thread). Turned out she was just bunking down in the spare room and she rocked up on my bed at 6 am.

The bratwurst and Greek lamb both sound good.

We have been eating out of the freezer lately. But last night I made a full roast chicken with all the trimmings (even bread sauce!0. We will have the leftovers again tonight.

Then this week at some point I am doing a red lentil dal again which is a staple. But might add coconut milk in as well just for a change.

Last night - fusilli with Italian sausage ragu, garlic bread, green salad then some fruit.

Tonight - sausage and mash with braised carrots and an apple tart (pastry in the fridge that needs using up plus too many apples starting to go soft).

Always love some muttar paneer mmmmm so tasty….
