What did you have for dinner tonight?

I'll go first. I'm hoping to get some nice ideas 🙂that I wouldn't think of myself as my brain is tired of working out what were all going to eat every day 🙄

Today we had (per person):

1 large protein wrap with sliced, seasoned fillet steak, cooked rare (150g), 200g sliced and fried mushrooms and 80g fried onions and 40g grated red Leicester and cheddar cheese with garlic mayo.

It was delicious and very filling 😋

Also what's the oddest thing you've made with leftovers?

Last week, to save it from going to waste, I ended up eating diced cooked carrots and boiled potatoes mixed together with some salad cream and diced, pickled gherkins. Sounds weird but tasted okay 😂

An amazing pasta sauce. Onion, garlic, some chorizo cooked down. Added a diced aubergine and a diced red pepper. Squeeze of anchovy paste and a couple of tablespoons of tomato paste. Glass of red. Couple of tspns of italian herbs, dash of worcester sauce, pinch of garlic salt and some salt/ pepper. Tin of chopped tomatoes. Let it cook out well then slightly mashed it up. Added fresh basil.
Served with tagliatelle and more fresh basil and sine shaved pecorino.

Goodness, it was good!

I’ve some wagyu meatballs from Aldi that we are going to cook and drop into the leftover sauce for later.

If you want it tomorrow, make it tonight and then store it somewhere cool until tomorrow.

Supper tonight is Beef Bourguignon with dumplings. Brussels sprouts with lots of black pepper and butter.
I am not feeling too well so it’s on low heat already and then I can have a lazy day.

Last night was a Lidl Deluxe pizza gussied up with extra toppings, because I had a cataract operation in the morning so took the very easy option. And, in case you missed it, Lidl's top range of pizzas got the only 5-star rating in a newspaper blind taste testing.

I love the term “gussied up”. Never heard of it but will be using it forthwith!

Sausages, mash, lots of veggies and gravy. Grandchildren here overnight so wanted something simple so we could spend time with them instead of doing a fancier meal.

It’s just me and my youngest at home tonight. Eldest is away at a convention in Manchester and DH is working. So I said fuck it and ordered a chippy. Chips and cheese for youngest; chips, cheese and curry sauce for me. Also ordered some fritters as they make a great lunch reheated the next day in the air fryer and eaten in a roll with lots of butter. 😁

Nothing for me, we had quite a late lunch out and I had 3 courses - no mean feat on MJ!
Ds is having carbonara that dd is making, dh is considering some cheese on toast.
We will have a roast tomorrow night 😂

We had a bit of a disaster... plan was curry... chicken was past its use by and smelled "funky", so curry will be tomorrow- sauce and onions/peppers all prepped and in fridge, so will be easy.
Had birds eye burgers with roast tomatoes and onion rings served with oven chips instead. All fed, none dead as they say... (if we had the chicken, who knows!😯)

Dcs had salad, rice and battered chicken fillets. Today was not a three-course day!

DS1 has requested Chinese orange and sesame chicken for tomorrow so I am trying that out. I needed to use up some fresh ginger that's going soft so it's a good opportunity.

Onions, garlic, finely shredded savoy cabbage, jar of Bold Bean cannellini beans,home-made chicken stock, grated Parmesan.

This is a nice thread! We had one of those meal deals from Waitrose. Stir fry veg, pork (or you could choose chicken or beef strips), Singapore noodles and sauce. It was tasty and my teen dd made it. Win win!

We had chicken lettuce wraps and dumplings at an Asian restaurant on the way home.
Talking about the price of fish and chips (I'm in the US) and I found a place that you can get traditional UK style fish and chips or battered sauage and chips delivered. You freeze and reheat. $30 freakin dollars a portion and then FORTY FREAKIN DOLLARS in delivery fees. I definitely don't miss home that much!

Sunday was Nigella's Vietnamese pork noodle soup. Yesterday was aubergine, squash, halloumi, mint, bulger wheat tray bake thing from the Roasting Tin cookbook. Tonight it is fennel, cannelloni bean, sausage casserole from the same book and tomorrow it is gnocchi, mozzerella, tomato bake...from the same cookbook! I use to cook from this book all the time a couple of years ago but haven't for a long time, might also do the raspberry, dark chocolate, coconut traybake "cake" from it tonight too.

£18 for 2 fish and chips sound about right where I live, and it's up north!

Ginger is great kept in the freezer. Lasts pretty much indefinitely and can be grated straight from frozen.

Last night was a shopping-coming-tomorrow, so let's eat what's left in the fridge, night.

So Tesco finest sausages. My favourite... And those flat cut potatoes in a light batter (dd favourite) with cauliflower cheese and small amounts of leftover veg of many varieties.

Was nice, actually went better together than I thought.

Cottage pie and cabbage tonight. Making plenty of leftover mash and cabbage for bubble and squeak tomorrow, and potato cakes for the freezer for next week - I find planning when to use the stuff I put in the freezer stops it becoming a bottomless pit of discoveries...

Today will be sausage casserole cooked with a tomato base, grated courgette, grated carrot, onions, celery and garlic. Served with baked potatos

Pudding - I have some stale challah so plan to make a challah and butter pudding. I will add chocolate chips to half for the Dcs and strawberry jam to the other half for DH and I.
