I'll go first. I'm hoping to get some nice ideas 🙂that I wouldn't think of myself as my brain is tired of working out what were all going to eat every day 🙄

Today we had (per person):

1 large protein wrap with sliced, seasoned fillet steak, cooked rare (150g), 200g sliced and fried mushrooms and 80g fried onions and 40g grated red Leicester and cheddar cheese with garlic mayo.

It was delicious and very filling 😋

Also what's the oddest thing you've made with leftovers?

Last week, to save it from going to waste, I ended up eating diced cooked carrots and boiled potatoes mixed together with some salad cream and diced, pickled gherkins. Sounds weird but tasted okay 😂

Still in "quickly throw stuff in a pan" mode, though this one took 20 mins. It turned out ever so well - and I've got nowhere to congratulate myself unless I start taking photos of my food for Instagram! So here goes:

Wholewheat fusilli

Bacon
Sofrito
Chopped onions
Chopped garlic
Sliced green beans
Chopped mixed peppers
Thyme, rosemary, marjoram
Firm tofu
Smoked paprika
Salt, pepper
Greek yoghurt

All veg from frozen. I used soya yoghurt because can't eat dairy, but no doubt it'd be even better with cream instead! Dairy eaters could also use halloumi or mozzarella instead of tofu 😋

Had cottage pie last night, veggie Dd here so made it with this is not mince, was great. Had buttered cabbage with it, haven't had cabbage in ages.

Tonight, pork and chorizo burgers. Time for the magimix to take the preperation strain.
Will have with potato cakes (deliberate leftover mash again!) and maybe beans (tesco own brand is best!) Or corn on the cob.
Have enough pork mince to make some of the mix into meatballs too. Either for me and Dh as a main dinner meal or me, Dh , non veggie dd, on pizza or a sub for lunch.

Mine was a lazy meal today as I was alone.
Cheese pierogi, dry fried in a pan and served with pickled white cabbage, onion and green pepper.

I love pierogi. But tend to smother mine with sour cream and paprika. So Not Healthy [insert voiceover of doom]

Thanks, and that sounds great. Never tried it with a sauce.

Have had homemade leek and potato soup today. Plus banana & oat pancakes.

@GarlicBound oops, sorry! 😆 your pasta dish sounds delicious. I'd probably use halloumi, though.

Tonight is prawn stir fry with noodles. I have cleaned out the freezer following a rogue defrosting incident so filled it all up again with lots of lovely frozen vegetables. Including sliced peppers. So it will be onion, peppers, carrots, mushrooms, and prawns. Takes 5 minutes. Even fusspot DS1 loves that so hopefully a win. (However, like a cat he will suddenly go off things he previously loved).

Found some lovely organic braising steak on the yellow sticker shelf when I was looking for milk.
Cooking it with some red wine and mushrooms, will make tarragon dumplings for dinner.

It's a really quick and easy recipe, too. Just banana, egg and oats. You can make it moist, by adding yogurt or milk, and I added some cinnamon as well. I vary the ratio to use stuff up, so atm, I'm adding lots of oatbran. This is a good basic recipe. I do love a stir fry, so quick to make. I often buy presliced peppers, onions, mushrooms, etc, from the reduced section in Asda... they come from the pizza counter, so you can get 500g for about 50p or less. I freeze them for quick, minimal prep meals.

I struggle to chop stuff, so it really helps.

Needed a quick and easy tonight, so we had Waitrose chilli con carne meatballs with fries and sweetcorn/peas. Was lovely.

The prawn noodles went down well. I discovered that the frozen pepper strips cook right down into incredibly thin little lines which for DS1 is brilliant because he 'hates' cooked vegetables. He couldn't separate them out from the noodles so just ate them. Big Win.

Today we are having individual chicken pies with wedges, sour cream, peas, runner beans and sweet corn. I bought the runner beans a few days ago and forgot I had them so I think they need to be eaten today.

I plan to do apple and cinnamon pancakes for dessert.

I usually grocery shop each day, either after the school run or after work. It's just what i have always done. It means I spend too much and have the daily pain of wondering what to cook. My big stock up a few days back for the freezer has actually meant so much of the mental load has been taken away and it's been cheaper. This won't be a revolutionary lightbulb moment for most on the thread I am sure- but it's game changing for me!!

I have some leftover braising steak from the other night, so I’ve made Rumbldethumps, (leftover mash, cabbage and some spring onions), topped the beef with the Rumbledethumps and some cheese.

It’ll be a chunky Cottage Pie ensemble, with some Sprouts and extra gravy later.

Tonight DDs23 and 25 are out. So we will be having fish! - one is a veggie, the other hates fish. So cod or haddock in a beer batter, and chips... (and curry sauce from an M&S tub.)

Now I do know liver isn’t everyone’s favourite but I like it as long as it is cooked correctly. The liver was hard and revolting. I undercooked the cav nero, and the mash where I tried a new pressure cooker method ( don’t try this at home) was disastrous. Gluey wet, inedible. Probably the worst meal I have ever cooked in fifty years.

Onwards and upwards!

Followed by 10% fat Greek yoghurt, strawberries, half a banana and some chia seeds. It was delicious!

Am on WLI and trying to keep cals to 1400 and protein high.

Oh dear, that sounds unfortunate!

It happens to all of us at some point, though. My last disaster was forgetting about the dinner on the hob, and coming back from doing a few household tasks to find it burnt to a crisp and stuck to the pan 😭 unfortunately as my memory is bad, this does happen occasionally.

For liver and onions (I hate with a vengeance due to childhood "you will eat what you get... " etc)
If for one person - Dh loves it - the best ready meal is the Waitrose one, according to dh, it is the best by far.

I remember once making a truly dreadful something that I had made many times before. DH put his fork down and said 'what happened?' I had to admit I had no idea! I can't even recall what it was.

Roast pork tonight with jacket potatos and veg. I am really enjoying organising and stocking my freezer. We had so much old rubbish and so the unexpected defrosting episode was perfect. It's only a small one with four drawers. Top is meat. Second is vegetables. Third is fruit. Bottom is icecream and other frozen puddings. I feel like at the age of 53 I am finally getting the hang of being an adult!

Some time back I saw this Ocado recipe for Rumbledethumps made with celeriac & swede - intrigued by the name I gave it a go and it was delicious!

I've made it a few times since - think I'll have it this weekend. Mine was more buttery and cheesy than the photo😊

I'm very ocd when it comes to organisation of my freezers.

I have lists pinned outside, with what's where and use by dates, etc, and can tell anyone who asks where exactly what is.

Eg, hash brown are in freezer 2, 3rd drawer down lefthand side at the back.
Lamb leg is in freezer 1 drawer 4, and the whole duck is also freezer 1, but 2nd shelf lefthand side behind the pork joint.

Broccoli is in freezer 2, drawer 4 right side at the front.

🤣🤣🤣 it's a bit sad, 😂, but I prefer to be ready for anything 😂

So I ended up making an Korean stew with my beef. It was very nice and had made enough for Tuesday and yesterday. I went easy with the spices, as I was worried it would be too spicy, but I would add a bit more next time. Only used about half what was suggested, will try 3/4 next time.
