Sick of the same if things. We eat too many carbs and not enough fibre and protein. What are you having for dinner?! I need inspiration please!

Not really, I understand the concept of adapting recipes, or even just making stuff without a recipe as I generally do, but you specifically said you couldn't make something from a recipe because you didn't have an item that the recipe didn't mention.

So, I thought you might have posted the wrong recipe.

We didn’t have tomato puree either! Tinned toms and tomato puree are perfectly interchangeable in the context of this and many other recipes requiring a tomato sauce.

Peppers stuffed with chilli. I don't like kidney beans so I grate a courgette and carrot into it to bulk it out and add more fibre

@80smonster it's my own creation that's has evolved over the years to adapt to the family. I use 5%steak mince, onion, garlic, couple of peppers chopped in and fried together. Once the mince is browned I add a generous amount of tomato puree, couple of teaspoons of chipotle paste and chilli powder to taste. Then top up with boiling water to mix it in and a carton of passata (the kids didn't like lumps of tomato when they were little). Then finally throw in grated courgette and a grated carrot and simmer for a while. Then hollow out the peppers and fill them with the chilli and top with cheese and put them in the air fryer for 20 mins. ☺️

Chicken Breast marinaded in tikka paste done in the air fryer with rice friend with onions, green beans, chilli flakes, garlic and turmeric

prep time less than 5 mins
total cook time 25 mins

It’s cold, windy and raining here so am having comfort winter food tonight. Steak and stout stew with cheese scone dumplings, a Yorkshire pud, petit pois and carrots - can’t wait.

Tomorrow, I’ll be batch cooking a sort of chilli/bolognaise mix - tomorrow’s portion will probably be with some rice.

Buttery mash, bread sauce, sausages, tomatoes roasted with basil. Sriracha. Pint of low alcohol beer.
Contemplating hunting for masses of leftover sweet carbs to go with brandy butter, but cba at the mo.

He's having pie surprise (he tends to put leftovers in an individual pie, using a hairy bikers pie maker, so I'll grab one from the freezer. Could be beef casserole,venison casserole, or some chicken thing I think from the current stock. No way of telling from the outside. I'll have a cod fillet in a foil parcel. Chips and mushy peas for both of us.

DCs are having jacket potatoes with cheese, a slice of leftover vegetable pizza each, broccoli and carrots. Odd combo I know but they will eat it.

I have pasta pesto. It's a 'tired and leftovers will do' kind of day.
