Sick of the same if things. We eat too many carbs and not enough fibre and protein. What are you having for dinner?! I need inspiration please!

Easy tea tonight because I can’t be bothered! Smoked Basa fillets and a packet of pre made puy lentils, may chop extra veg if I find the energy

Supposed to be having the New York Times spicy black bean & cheese bake: inthekitchenwithkath.com/2020/11/05/cheesy-spicy-black-bean-bake/ but inexplicably out of canned cherry toms. We usually have it with fresh guacamole, sour cream, salted tortilla chips (or a garlic bread). Very flavourful and packed with protein, most of its store cupboard ingredients, too.

Dp is doing a chicken stir fry with loads of veg and noodles. I just hope he doesn't go too crazy with the chilli flakes.

Tonight is baked Asian salmon (marinated in soy sauce, sesame oil, garlic and honey), chips, steamed broccoli, mushy peas and probably a bit of sliced avocado as still have some leftover from lunch.

The key to minimising white carbs is to make the protein and veg the star of the show. If I need to bulk something out, I’ll slice some cucumber and carrots and make a little soy sauce dressing or add a boiled egg on the side for extra protein.

We had a roast yesterday, today I had the left over meat and roast potatoes.

Tomorrow it will be bubble and squeak with the left over veg and possibly a Yorkshire pudding on the side. Or I might make a pancake for breakfast instead.

For an easy higher fibre meal, beans on wholemeal toast. You can add protein by adding cheese and/or bacon/ham.

Picky bits can be tweaked to include more protein so can a tray bake.

Ymca yesterday’s muck cooked again ! Saved some of the bolognese sauce from Sunday so will reheat with some fresh pasta
