Sick of the same if things. We eat too many carbs and not enough fibre and protein. What are you having for dinner?! I need inspiration please!

Chicken stew. Chicken, veg and stock. No extra carbs. Comforting, warm and I've made plenty so if the power goes down, I can move it to the log burner to keep warm.

Learned to debone chicken legs today so just making an easy tomato and basil pasta sauce, veg, chicken and pasta topped with grated cheddar. Will make enough for tomorrow too (just me until DD is back on Sat)

I was hungry when I got home from work and wanted a quick dinner.

3 egg omelette with bacon, cheese and mushrooms.

I had it with toast and it was lovely.

Supposed to be having the New York Times spicy black bean & cheese bake: inthekitchenwithkath.com/2020/11/05/cheesy-spicy-black-bean-bake/ but inexplicably out of canned cherry toms. We usually have it with fresh guacamole, sour cream, salted tortilla chips (or a garlic bread). Very flavourful and packed with protein, most of its store cupboard ingredients, too.

It doesn't seem to have tomatoes in it?

Chicken legs are brilliant. I bone them out and then pan fry with thyme & lemon juice. Much more flavour than chicken breasts, for about 70p per person 😋

Absolutely! I was surprised how easy it was, even though I’m urgently in need of sharper scissors. I’ll never buy boneless or skinless again.

Thanks for this thread, I needed some inspiration too! Tonight dd and I are having turkey chilli with kidney beans, various veg and brown rice. Veggie dh is having mushroom omelette. Sometimes we all have the same thing or he has a variation but tonight I couldn't be bothered so he's doing his own thing.

Tomorrow is veg stir fry with noodles which dd will whinge about and prob add chicken to hers.

Last night was pasta bake, we had tuna in ours.

Any ideas for vegetarian-adaptable, easy and healthyish meals gratefully received. Bad case of January blues here.

Found a lone chicken breast in the freezer this morning so made a Hunters chicken type thing? Wrapped in bacon, bit of bbq sauce and cheese. Served with mash, carrots, broccoli and sprouts

They're still pretty cheap buying boneless ones, I use them for stews and curries.

Over Christmas I made pasties with all of our left over turkey, gammon, pigs in blankets, stuffing, roast vegetables and cheese and bagged them up in the freezer.

Tonight was a "CBA cooking" night after a long day of work so we just stuck the pasties in the oven and had them with beans. I have never been more grateful to past me for helping out current me with a home cooked meal.
