Sick of the same if things. We eat too many carbs and not enough fibre and protein. What are you having for dinner?! I need inspiration please!

Tonight we’ve got lots of kids activities and clubs so it’s an easy one of sweet potato fries, corn on the cobs and chicken strips (southern fried style) so a home style KFC 😬
Last night we had duck fried rice, spring rolls, prawn toasts and beef in black bean sauce - again, home made ones though so a bit healthier than takeaway. Busy couple of days so needed easy oven stuff!
Tomorrow night will be chicken, leek and broccoli lasagne bake for some veggies!

Baked spiced paneer (I chop into cubes, coat with chat masala or pav bhaji masala depending on what I have to hand) with rice, kachumber salad and natural yoghurt.

Not really, I understand the concept of adapting recipes, or even just making stuff without a recipe as I generally do, but you specifically said you couldn't make something from a recipe because you didn't have an item that the recipe didn't mention.

So, I thought you might have posted the wrong recipe.

Thanks for this thread, I needed some inspiration too! Tonight dd and I are having turkey chilli with kidney beans, various veg and brown rice. Veggie dh is having mushroom omelette. Sometimes we all have the same thing or he has a variation but tonight I couldn't be bothered so he's doing his own thing.

Tomorrow is veg stir fry with noodles which dd will whinge about and prob add chicken to hers.

Last night was pasta bake, we had tuna in ours.

Any ideas for vegetarian-adaptable, easy and healthyish meals gratefully received. Bad case of January blues here.

Paneer is really versatile for vegetarians and I prefer it to halloumi. I love butter paneer and sticky honey chilli paneer. Palak/spinach paneer is lovely.

Sweet potato and lentil curry with coconut milk is delicious! I have the curry with rice then save the leftover sauce and eat it like soup for lunch with rotis.

Toad in the hole with veggie sausages for your husband? Red or green thai curry and you can add chicken or prawns to yours.

Creamy mushroom pasta, you can add chicken to yours. Cheese and leek potato bake, you could have bacon or ham with yours.

Smoky jambalaya with beans, you could add chicken and chorizo to yours.

Falafel pittas with lettuce and hummus. They're a bit of a faff to make but you could always buy the falafels.

There are lots of good vegetarian Indian recipes as vegetarian diets are very common in India.

Chilli (adapted from my basic semi-veggie batch mince with chilli powder, paprika, tomato purée and kidney beans) with tortilla wraps, salad and grated cheese.

Peppers stuffed with chilli. I don't like kidney beans so I grate a courgette and carrot into it to bulk it out and add more fibre

I’m having katsu chicken with wholemeal couscous and roasted veg. Bit weird, but I like it. Dad and DH are having homemade beef and onion pies with mash, kale and gravy. DS2 will have a pepperoni pizza when he gets home at midnight-ish, and probably a couple of homemade sausage rolls. There’s a cherry and almond cake for pudding.

Very easy dinner, which was a fillet of steamed haddock, peas, and homemade chips done in the air fryer. Cheap, filling, and tasty.

This evening we've had beef and mushroom casserole with turnips, swede, green beans and mashed potatoes, the boys have had Yorkshire puddings with it also.

Veggie chilli.
Def high fibre as it contains kidney beans, black beans, tomato, onions, peppers, mushrooms, sweet potatoes, carrots, sweetcorn, cauliflower, broccoli and Brussel sprouts!
No rice as I haven't eaten rice or pasta in years (no weird food thing it just takes up valuable space that could be used for more veg! 😂).

Low carb Pad Thai tonight...a Simply Cook meal (for those not familiar you get a recipe and 3 little pots of sauces or spices but you use your own meat / fish / veg) made without noodles - chicken, prawns, beansprouts, tenderstem broccoli, pak choi and egg with the pad thai flavours topped with coriander, peanuts and lime. Yum.

And the kids had a Wagamama Katsu fakeaway after discovering this week Ocado and Waitrose do Wagamama Katsu curry sauce in a jar - winning.

I feel your pain. I’m doing the cooking for my two kids every night and I’m honestly at breaking point with the "what’s for dinner" debate. Trying to keep it healthy and not just pasta/nuggets is a full-time job in itself.

I’ve actually been looking for a way to outsource the thinking part of it. I found a project in the works called AI-Chef — it’s basically an AI that handles the meal planning and targets those "restaurant-style" meals so the family is actually impressed, but without me having to spend an hour scrolling for ideas.

It’s still in the waiting list stage, but I’ve signed up already. Anything to reclaim some headspace and stop the kitchen routine from feeling like a chore! If you’re struggling with the mental load too, it might be worth jumping on the list: ai-chef.sarafanconnect.com

Last night: curry night - butter chicken & sag paneer (both simply cook recipes) with cucumber & tomato salad and garlic naan

Today: Put a Lamb Shoulder on the smoker this morning - will be having it later with lightly pickled red cabbage (finely shred 1/2 a red cabbage and add 1 tbsp lemon juice, 2tbsp white wine vinegar, 1tbsp olive oil and a few grinds of salt - make a few hours ahead); roasted peppers/courgette/aubergine with feta sprinkled on top; tzatziki (Greek yoghurt, grated cucumber, garlic, olive oil, salt); pitta breads

Last night DD had a burger in the pub. I came home and had ham,, egg and chips which was lush.

Tonight I’m going to slow cook a beef brisket to make pulled beef, to have with coleslaw and buns. Hopefully plenty of leftovers for DD’s lunches tomorrow and Tuesday.
