Creamy fajita chicken with peppers, onions, courgette and carrot. Served with rice and wraps, lettuce and cheese etc. twas yummy!

Tonight is beyond burgers on homemade rolls with homemade spicy wedges.

I also batch cooked a sweet potato and bean chilli for the freezer and will make quesadillas with it tomorrow.

Supposed to be having the New York Times spicy black bean & cheese bake: inthekitchenwithkath.com/2020/11/05/cheesy-spicy-black-bean-bake/ but inexplicably out of canned cherry toms. We usually have it with fresh guacamole, sour cream, salted tortilla chips (or a garlic bread). Very flavourful and packed with protein, most of its store cupboard ingredients, too.

Tonight was going to be eggs and bacon with toast but going to check my cupboards for black beans now...

Stir fry, with previously cooked chicken, finely shredded cabbage, carrots, celery, coloured pepper, onions, mushrooms and leftover broccoli, sauce made from from scratch, over 3- minutes noodles.

Well, tonight home made chicken soup with an oatcake, apple and satsuma.

I changed the recipe a bit because it looked bland, so I added half a teaspoon of cayenne and some fennel seeds. I made it Tuesday was served with steamed veg so today was leftovers. If you use wholemeal flour to make the sauce you add extra fibre.

Last night was steak with steamed veg.

I've been doing a lot of firecracker chicken stir fry. Chicken, firecracker sauce from Sainsbury's, peppers, onion, serve on cauliflower rice which is about thirty calories instead of 300 for a carb.

My usual pasta dish is now served with spiral used courgette. Fry some halved cherry toms in butter or oil with garlic and some chili flakes, add in some tomato puree once the tomatoes have softened, juice and zest of a lemon. Once all mushed down, add prawns and chopped parsley. Once all warm, stir through the very slightly steamed courgette.

Just me tonight so I am having a slightly odd combination but I like it - roast cauliflower, mushrooms and broccoli with a chicken kiev.

I will manage half a cauliflower and a whole head of broccoli so it’s a fair amount of veg. Wouldn’t serve it to other people like that though 😂

Tonight is baked Asian salmon (marinated in soy sauce, sesame oil, garlic and honey), chips, steamed broccoli, mushy peas and probably a bit of sliced avocado as still have some leftover from lunch.

The key to minimising white carbs is to make the protein and veg the star of the show. If I need to bulk something out, I’ll slice some cucumber and carrots and make a little soy sauce dressing or add a boiled egg on the side for extra protein.
