I do any green veg like cabbage, leeks, or sprouts, with carrots and mashed potatoes (which could include leftover roast potatoes squashed in).

It's the frying and the crispy bit round the edges that turns it from colcannon into bubble & squeak.

Left over roast potatoes and brussel sprouts mashed up and pan fried, with a fried egg and sausage on the side. With a dollop of HP. Absolutely gorgeous

I cook extra brussel sprouts so I can make it the next day 😊

Our family puts any leftover roast veg in (bonus if it includes roast parsnips) and a bit of leftover gravy! Heavenly with lots of white pepper on it. So savoury.

Bloody love bubble and squeak with Tom sauce. My mum always made extra veg for Sunday lunch so we could have b&s on a Monday tea

Absolutely. It's hardly exotic. It's a fairly standard English dish, so I don't see how anyone could get it wrong.

Does anyone just make this with the intention of making it rather than using leftovers to make it. Does that even make sense???

It sounds amazing but I never really have leftovers!!

I spread the chopped vegetable and potato mixture over the base of the frying pan into a large B&S 'cake' then fry it in beef dripping from the roast until crisp and brown underneath. Press it down well to make sure. Flip the whole thing over and brown the top side.

Serve with poached or fried eggs and a rasher or two of bacon for a perfect brunch.

I'm guessing that it had;

Peas
Sweetcorn
Mushrooms
Random herb like mint added

Or was fried in duck fat or something weird...

Or topped with cheese (though I'd love that!).

Mashed potatoes or mashed left over roasties and mashed veg. A little chopped fried onion gives it a bit more flavour. If we have it, it's with cold meat and pickles.
