I am generally focused on eating 3 healthy meals a day, when I want them. Often, on day 1, 2 or 3 after the injection, I only have 2 meals.
And then healthy snacks for the weird days when I am hungry. Nuts, fruit, protein yoghurts.
My favorite repeat meal is baked chicken thighs, with asparagus and maybe baked carrots. Or roasted Brussel sprouts and lots of Korean pickled radishes and kimchi. I am definitely cutting back on empty carbs as I know it helps with my diabetes and inflammation.
I always have baked chicken thighs, protein yoghurts and protein shakes/ plain yoghurt with protein powder in the fridge, so I can make quick meals. Some new meals added to rotation: savory egg bites (mainly breakfast), chicken sausage air fried with peppers and onion, baked salmon and asparagus. I am eating between 850 and 1200 calories most days, with the occasional 1,400 day when hungry. Very little alcohol - I just don't fancy it right now. And my water consumption has gone down, I just can't do more than about 1.5liters, but that is likely because I was drinking so much with my diabetes going a bit wild before.
The most surprising is how consistent I am able to be so far.
