L: grapes, 2 plums, sticky rice traybake with butternut, cashews and broccoli
S: handful of pistachios
D: potato and violife feta bake with cherry tomatoes, beetroot and Bombay carrot salad

Today is strawberries and Elmlea plant based cream at lunch.

Dinner is homemade pizza, I like to top with hummous instead of tomato, no cheese but then plenty of oumph spiced kebab on top :)

I also made a garlic and herb focaccia. Tried to get a picture but every time I go in the kitchen another slice has been snaffled by the teenagers 😂

Wow, that focaccia looks just wonderful.

B: grapes, peach, strawberries, nuts, seeds, soya yogurt
L: shroomdogs, flat mushroom, wilted spinach
D: courgetti spaghetti with quorn pieces, sun dried tomato pesto, nooch, and steamed veg
S: plate of raw veg, TOO MUCH CHOCOLATE, heavy sigh. Today it was Green and Black's velvet salted caramel. Extremely delicious.

Yesterday was
L: large bowl of overnight oats with soya yogurt, lots of seeds, mango and strawberries
D: bbq at my parents house. Posh crisps and hummus, good life katsu burger in a bun, salad, tomato, beetroot, quorn sausage and lovely salad potatoes
S: raspberries, M&S magnum, walkers lime and coriander sensations

It was delicious!! I can see why it's one of the best vegan cheese.
I also got a Mexicana one so I'll try that another day.

I had a bit of a find actually at the bigger Asda in my nearest city. Loads of great things.
Including the Kirstys carrot cake which got put in the fridge insteaf of the freezer last night so we had no option to have it for breakfast.
So my topsy turvy kind of Sunday brunch today was carrot cake followed by cheese on toast.

I am so intrigued by this applewood cheese but live abroad so it’s a rotation of various ones for me.

Yesterday started well and then I had alcohol and it went to shit 🙄

L: hearts of palm, tomato and chickpea salad followed by mango
S: figs
D: lasagne
S: 6!!!! Slim Oreo cookies (2glasses of wine and 2vodkas)

Better today mainly because we had friends over who have been fostering a kitten we’ve now adopted (he’s gorgeous and is called Oberon Kenobi) so we had a massive lunch and it’s kept me full AND I didn’t drink!

L: hummus and bitchin sauce with cucumber, peppers, jicama and some crisps, then DH hm pasta with fresh tomatoes and tofu ricotta, then cheese less cheesecakes from our local supermarket which were AMAZING, with figs and raspberries

L: 3 plums, large tomato, beetroot, wholemeal bap with coronation chickpea, spicy mango chutney and a roasted red pepper.
D: itsu spicy veg bao bun, veg gyozas and wok fried greens (pak choi, tenderstem, green beans)
S: M&S dark chocolate, orange and raspberry buttons, small handful of salted cashews

Ooh your dinner sounds gorgeous @PartTimeDomesticGoddess

Yesterday I had a wholemeal pitta with low fat plain hummous that i jazzed up a bit with coriander and lemon.

Then for dinner just the mashed potato, carrots and steamed greens from the roast dinner DH made as I outright refuse to prepare or cook chicken. I love chickens and see them as pets not dinner!! The veg was lovely though and he makes a mean mash.

Does anyone have any ideas for batch cooking with mushrooms that I can then freeze in portions without the mushrooms going watery? I've got a big bowl of mushrooms that desperately need using up!

@cricketmum84 it was, I love itsu! My only complaint about them is the amount of packaging, but I've never had anything of theirs I didn't like

I'd make mushroom risotto or mushroom stroganoff (frozen with rice and green veg to make a complete work lunch)

cricketmum would a stew work? I do a stew with leeks, carrots, butterbeans, tinned toms, and mushrooms, and any wateriness obviously gets disguised among the stew juices...

PTDG I've never eaten at itsu, but I love wok fried greens.

B: peach, melon, grapes, nuts, seeds, alpro yogurt
L: salad, avocado, slice of seed loaf. I only ate a tiny lunch because of...
D: afternoon tea at a fancy hotel. It was half price under the eat out offer thing, which was just as well because I would have been underwhelmed otherwise. I ordered the vegan tea, and when they brought the food I checked, "This is the vegan tea, yes?" Oh yes, they said. However on inspection there were egg sandwiches. I asked them to check again and they came out with replacement sandwiches which were literally bread and cucumber, no spread, no seasoning. There was also a pepper sandwich which was literally a piece of pepper between dry bread! However, to make the selection more exciting, there was also an aubergine and pomegranate sandwich (wtf???) Me and my friend found it extremely funny but I guess in retrospect it was a bit disappointing.

The cakes and scones were lovely, however, and I couldn't finish it all. At one point they said "Would you like more sandwiches?" and we had to try hard to keep straight faces as we politely declined. (One plain pepper sandwich and one aubergine and pomegranate sandwich were enough for this lifetime Grin).

B: peach, 2 small slices sourdough toast (one with naturli and marmite, one with marmalade)
L: Jacket potato generously topped with coronation chickpea, large salad (lettuce, cucumber, tomato, beetroot, artichoke hearts)
D: oyster mushroom and veg pie, parsnips, peas, carrots, green beans, broccoli and gravy. M&S magnum
S: 3 plums, small pear, small packet of salt and vinegar kettle crisps

I've just read this thread in one go as love hearing about food Grin and then thought I'd join in!

B: avocado, rocket and tomato sandwich (went to a lovely local cafe for breakfast but fancied a change from what I usually order - a vegan fry up!)
