S: handful of pistachios
D: potato and violife feta bake with cherry tomatoes, beetroot and Bombay carrot salad

Hello, thank you for the new thread. I'm really aiming to regularly report what I eat in hopes it might help me with some overeating issues... Just help me be more aware of what I'm consuming?

B: peach, blueberries, nuts and seeds, soya yogurt
L: shroomdogs, cauli hash browns, wilted spinach, a portabello mushroom
S: raw veg, dark choc, ritter sport and skittles sweets!! My sweet tooth is out of control
D: vine leaves, hummus, falafel, artichoke hearts

D: chickpea and apricot tagine with noodles (couldn’t find the couscous!!) was delicious. I had seconds 😋

Yesterday

B - overnight oats with berries
L - pasta with crushed avocado, onions and tomatoes
D - tofu with peanut butter sauce, noodles and mixed veg.
Snacks - Alpro yoghurt, banana

Today
B - stewed apples and raisins with plain Alpro yoghurt and cinnamon
L - hummus, Pitta bread and red pepper
D (will be) - veg bhuna rice and chapati from the local Indian - can’t wait!
Snacks - Cacao and maca protein shake.

Ooooh Rocky Road. My daughter makes the most delicious vegan rocky road for any treat days for me. Gluten free and rich and quite dark. It's sooo good. I might start hinting for my birthday next month. Just in case she thinks I'm sick of it. Grin

B. Toast and my neighbours lovely homemade raspberry jam.
L. Jack Monroe's lentil, spinach and lemon soup. Cucumber and mayo sandwich.

D. Chipotle Tofu steaks , roast carrots, garlic, onions and beetroot with loads of rosemary. Potato salad with tatties from the garden. Which according to my DS made them extra tasty.

Everybody's food is making me feel quite hungry 😊

L: chickpea "tuna" salad, couple of leftover falafels, sun dried tomatoes
D: pesto rice salad with pinto beans
S: raw veg, rhubarb and custard sweets, dark choc and ritter sport... But smaller quantities than usual!

B: white chocolate and raspberry bar thing that claimed to be flapjack but wasn't very flapjacky
L: pasta salad with sun dried tomatoes, olives, pine nuts and roasted broccoli. Pineapple and cherries
D: chickpea, tomato and spinach curry with some alpro plain yogurt and a naan bread
S: 4 dates, half a packet of mushroom crisps

@Estrellente, here is the sticky rice tray bake recipe. It's from the green roasting tin. Also freezes well in portions

150g Jasmine rice
400ml tin coconut milk
1 tbsp soy sauce
2.5cm ginger, grated
1 clove garlic
300g squash, peeled and 1cm cubes
300g broccoli, cut into small pieces
30g toasted cashews

Dressing
2 tbsp sesame oil
2 tbsp lime juice
2 tbsp soy sauce
2.5cm ginger, grated
1 red chilli, finely chopped
Fresh coriander, finely chopped

Preheat oven to 180 fan
Mix rice, coconut milk, soy sauce, garlic and ginger in a small roasting tin and top with the squash. Cover tightly with foil and cook in oven for 45 mins*
Add broccoli, re-cover and cook for 15 mins more. Toast cashews on an oven tray for 10-15 mins
Mix together dressing ingredients, adjusting soy and lime to taste
Tip dressing over hot roasting tin ingredients, scatter with toasted cashews and serve hot

*split the cooking time according to how long you like your broccoli roasted. I like mine with a 35/25 minute split. I also like with steamed broccoli instead of roasted

L: Homemade soup (potato, onion, kale, brocolli, garlic & beetroot)
D: Bistro salad bag w/ toms, cucumber, capers, artichokes, seeds, mushrooms, freefrom cheddar & onion
S: Frys strawberry cream, deliciously ella salted caramel cups

And my evening snack will be Applewood smoked slices on toasted sourdough 🙂

B. I had planned a berry smoothie and nuts but it wasn't very nice today so i ate the nuts then i had toast and lime marmalade.
L. Roast veggies from last night (garlic/carrots/beetroot/onion) whizzed up with the leftover Chipotle marinade from the tofu last night and made into a soup. Delicious. Couple of slices of gf baguette .
D. Half sausage and olive pasta and half cauli and brocolli 'cheese' bake with Engivita. Sounds like a weird mixture but it was really nice.

Im currently fasting on 2 meals a day.

Breakfast- lettuce and spinach salad, with avocado, curried chickpeas and buttered mushrooms.

Dinner: Wicked Kitchen sausage And veg pasta, with half plate of broccoli

Had some carrot sticks and hummus and a cheeky packet of Aldi’s Pickled onion monster claws for snacks in between!

B: Most of the contents of my wonderful vegan box from The Vegan Kind, love delivery day!!!!
L: Massive salad with all kinds in plus fava bean protein pieces
S: Dates dipped in peanut butter. Galaxy vegan oat milk drink. And shortly i will have some dorsey nutty muesli with dried tropical fruit on top. And maybe some more toasted sourdough 🙈

S: 3 plums, sandwich made with 1 slice of white bread spread with naturli and filled with slices of yellow tomato and black pepper
D: quiche with new potatoes, green beans, broccoli, peas and half a beefsteak tomato

I definitely want to try the sticky rice too!

B: peach, melon, nuts, seeds, alpro yogurt
L : chickpea 'tuna', hummus, salad, beetroot, sun dried tomatoes, those crispy bean things (can't remember the name)
S: cherries, ritter sport, rhubarb and custard sweets (smaller portions so progress!), pistachios
D: baked tofu rolled in nooch and spice mix. I thought it was going to be like southern fried chicken. Spoiler : it was not. Also french fries (root veg and potato kind) and steamed carrots, broccoli, red cabbage and cauliflower.

Ooh can I join in please? I'd love some new ideas.

Yesterday I had a coconut milk iced latte in the morning. Then my vegan kind lifestyle box arrived (favourite day of the month) so I had a packet of corn chips and a few chocolate covered "honeycomb" bits.

For dinner my 11 year old made us open tartlets with jus rol vegan puff pastry, tomatoes, violife cheese and vivera plant shawarma with butternut squash wedges. They were absolutely gorgeous and my DH who usually will not eat a meal without meat had the same and said they were great! 2 wins in a day :)

@Wavescrashingonthebeach I had the sweet chilli corn chips for lunch. Yum! And the dr paw paw balm is coming in handy for the MASSIVE mozzie bite on my leg 😂

Tonight's dinner is a pasta bolognaose made with the meatless farm mince and home made garlic flatbread that are made with self raising flour, soya yoghurt, fresh garlic and mixed herbs, rolled out and cooked in a dry frying pan.
