Mixed berry ice drink.
Loads of water.

In the spirit of honesty I have to admit that I do this after my dinner so never put in what I munch on at night in front of the telly. Last night was far too many oatcakes with tahini and cucumber then another packet dipped in chilli sauce. And an ice lolly. Oh an an apple. I had the munchies Grin

Today's meals were...
B. Porridge with peanut butter & maple syrup
L. Spiced ginger and butternut squash soup. Half gf baguette
D. Mushroom and kale risotto with garlic kale chips. 2 small slices gf garlic pizza bread.

And now that I've thought about it I might go have another ice lolly tonight

@Breathmiller - I also don't always report what I've eaten after I've posted. I snack less during the working week, but last night I had a packet of vegan cheese ball crisp things. Made me remember I don't really like cheese ball crisps much, vegan or not 😂

L: a peach then a thrown together kind of salad of new potatoes, artichoke hearts, roasted red pepper, cucumber and beetroot dressed with the liquid from the artichoke jar
S: snack a jacks, 3 plums
D: rice/black bean/tomato/celery/onion burrito bowl with vegan sour cream and avocado

I wish i had ice lollies,what a good idea in this heat.

B: pineapple, spinach and soya milk smoothie, with ground almonds, ground chia, ground flax and pea protein powder. Was a very nice one today.
L: coleslaw with apple, raisins, grapes, toasted seeds, celery, plus beetroot and avo on the side. Gorgeous and would make again.
D: linda mac Lincolnshire sausage, some leftover tofu, steamed veg, more coleslaw
S: ritter sport, rhubarb and custards. Still battling the snacking urge but distinct improvement

Can i have the recipe for the garlic flatbread please? I like really simple ones like that as i am useless as baking! I do potato cakes and just fry them in a pan too.

L: Sweet potatoes, toasted sourdough bread w/applewood slices & fake bacon
S: Cola lolly ice & late night snack of toast, peanut butter & jam

Will eat more veggies tomorrow!

We have this planned for tonight - should be nice with brown rice.

Making an extra effort on weight loss so I think I'll just open a big tin of grapefruit salad and snack on that during the day, may throw in some celery sticks.

For the flatbreads - to serve 4 I use half a big pot of unflavoured soya yoghurt and then the same amount of self raising flour. You want it in a dough consistency that you can roll without it being too sticky so it's a bit of a game of adding a bit more of each sometimes :). Add flavourings depending on what you are serving them with so I do garlic and coriander for curries, garlic, basil and oregano for pasta. Pinch of salt and pepper too. I then separate into 6 balls and roll out to about the size of the frying pan and dry fry over a medium heat for a few minutes each side.

You can increase quantities and do a big batch and then freeze them with a sheet of grease proof paper in between each one :)

L: kimchi, beetroot, cucumber, Jacobs mixed grain crisp breads and blue mountain nut based cheese
S: Apple, plums, half a pack of lentil chips
D: brown basmati rice with tofu, mushroom, cabbage and green pepper hoisin stir fry (recipe by Vegan Richa, thanks to a previous thread recommendation by @IJumpedAboardAPirateShip)

@Breathmiller applewood is in all of my local ones (Sainsbury's, tesco, Asda). I'm sure it varies between areas...

I couldn't find the applewood either until I had to buy someone else's shopping and realised it was in amongst the dairy cheese (so they could put it next to the non-vegan applewood). It's the same reason I couldn't find the Meat Free Richmond sausages for ages as well - all the other vegan ones are together but they're in with the meat alongside the standard Richmonds in my local supermarket. Not sure if it's just mine doing that or if it's a brand thing!

Thanks Smile that's how i do my potato cakes too- keep adding more of whatever until i get the right consistency! Will give these a go i love stuff where i dont have to weigh out Smile

Re the applewood

Ive noticed Tesco & Asda have started splitting the vegan stuff across several aisles.. think theyre trying to do a trojan horse and infiltrate the meat aisle so people pick up veg stuff either by mistake or out of curiosity!

Yeah its a pain. I'm also gluten free and Tesco do a lovely vegan amd gluten free filled pasta. For a while it could only be found with the ordinary filled pasta which is somewhere i would never look.
But they moved it to the vegan bit which makes more sense.
I'm not going to look through all the meat aisles in the hope there is a vegan sausage tucked away beside the steaks.
If they want to attract meat eaters then fair enough put some there to tempt them but have a dedicated aisles too.

Absolutely agree about putting vegan products in the meat aisle. My son calls it the death aisle and won't go down it!

B: blueberries, melon, nuts, seeds, soya yogurt
L: peanut butter and banana on lentil rice cakes
D: baked potato with coleslaw and avocado
S: too many snacks again, I hadn't slept well and I think it makes me prone to overeating. There was a LOT of chocolate, glass of soya milk, a plate of raw veg, crisps, and more chocolate

On a more constructive note, I saw a £10 off code for the meals delivery service from allplants and decided to give it a go. I thought it would be useful to have a stash in the freezer for when the family are having something I don't eat (several omnis in the house). The selection looks lovely and a lot of the kinds of meals I would normally choose anyway. I can't speak for the quality until I've tried them, but if anyone wants to test it out themselves, I have a referral code for £20 off and you are welcome to message me for it. (hope that's allowed to mention, thought it might help anyone interested).

Few vanilla wafers
Not the healthiest day!

Also did 25 minutes on my rowing machine and a 30 minute bike ride.

Hello fellow vegans! Caught up with the thread after a week away camping where most breakfasts were nothing or porridge with hemp and chia seeds and dates cooked with oat milk or fresh fruit and bagels, most of our lunches were picnic style so I’ve had a lot of things like hummus and cucumber and pita bread and falafel and occasional leftovers. Found vegan marshmallows so toasted those every night, stopped for accidentally vegan cinammon rolls on our journey north and we spread them out over several days by frying them in (obvs v) butter over the campfire. The less said about snacks the better (especially today which was a 9hour journey fuelled mostly by peanut butter stuffed pretzels, crisps and dried mango) BUT no booze, loads of hikes and kayaking and I outdid myself on campfire vegan dinners:

Sat: pasta pesto (ok quick and easy and no fire and we arrived late)
Sun: reggae reggae jerk tofu and mushroom skewers over the fire, corn on the Cobb and baked potatoes in the coals
Mon: campfire sheperdless pie
Tues: Moroccan cous cous and chickpeas with fire roasted red peppers
Weds: tofu scramble with tinned potatoes, more fire roasted peppers and broccoli
Thurs: bean chilli and rice

Tonight we are home and have food being delivered 😆 everyone else is getting pizza but I ordered a warm salad bowl with ALL the veggies and fresh green leaves. And a beer

That all sounds fab. What a great adventure food and otherwise. I've often wondered if vegan marshmallows toast.

We had a celebratory meal last night and ate far too many snacks.

B. Yoghurt, prunes, hazelnuts
L. Veg. Sushi
D. Starter- wok fried greens (stem broccoli and kale) with ginger and garlic
Main. Tagliatelle with homemade lemon and mint pesto and peas (a bit of a disaster as the gf pasta broke up stirring the too thick pesto in- but it was a nice flavour so i will tweak it and try again.)

Dessert. Home made raw lemon cheesecake which was delicious. Decaf espresso and vego pralines.

S. Hummus lentil chips. Spicy channa nuts. Salted nuts. Nosecco and pink lemonade.

Oh and I got really excited yesterday in tesco when I saw Applewood cheese in the normal cheese aisle but sadly not vegan. But then dh said he has seen it in Asda so I'm off there today. Smoked applewood he said. And a Mexicana which we might try (he's not vegan but us lactose intolerant).
Has anyone tried making their own cheese? I make a soft one with cashews and chives which is nice but haven't tried a hard one yet.
