S: handful of pistachios
D: potato and violife feta bake with cherry tomatoes, beetroot and Bombay carrot salad

I Love naked potato and hummus!

Brunch: banana, coffee, date and almond butter smoothie and two potstickers (random)
L: half a beer, courgette stuffed with lentils, quinoa, sundries toms and olives with a captesw salad
S: brownies made by DD
Still full from lunch so having a vodka for dinner

Had a tortilla with hummous and salad for lunch

We braved pub tea for dinner. First time we have been out for a family meal since lockdown so I was a bit nervous! But it all felt very well managed and safe and clean.

I had a lovely beetroot steak kebab on a skewer with grilled peppers and onions with a flatbread and salad. Bit like beetroot falafel.

B: overnight oats with nectarine, strawberries, seeds and soya yogurt
L: peanut sweet potato stew with brown basmati, broccoli and a couple of tomatoes
D: chipotle, Black bean, Sweetcorn and quinoa soup with avocado and crusty brown baguette spread with naturli
S: 2 large plums and I'm currently eyeing up the last of the carrot cake...

L: roast artichokes and lemon tahini sauce, some cucumber and cream cheese
D: split pea and jackfruit Ethiopian stew and lettuce
Evening snackage Blush: bolognese as it cooked for tonight’s dinner, mango, dates and cheese, 2 slices of toast and marmite

Yesterday's meals are sounding gorgeous!!

I had my leftover soup for lunch, just threw all the ingredients (usually almost gone veggies) in my soup maker. I used broccoli, green beans, celery, Edemame beans, spinach, 2 chillis, garlic, ginger, coriander and lime and then stirred through Elmlea plant based at the end. It was really lovely and I have a portion for today too!

Lovely DH made me and DD a veggie mince Bolognese last night. I'm trying to be low carb so I had mine with sliced raw yellow pepper instead of pasta which was a really nice option as the pepper was lovely and sweet and crunchy :)

@cricketmum84 it was and is pretty staple for me - literally stir tahini and lemon together Grin I tend to start with a teaspoon of each, it really thickens so then you can add more lemon or just water to get it the consistency you want, sometimes I mince something garlic into it, usually just salt and pepper though

Yesterday was a weird one, didn’t eat anything until dinner when we went to an omusubi for take away and sat on the beach to eat it. They’re stuffed Japanese rice balls, I had one with miso aubergine, one with enoki mushrooms and one with pickled seaweed and fresh wasabi

Wow, lemon tahini sauce does sound delicious!

PTDG we tried the sticky rice traybake. It was so delicious and creamy with the coconut milk, we loved it.

Today was
B: pear, strawberry, grapes, nuts and seeds, yogurt
L: Pea and lemon risotto, very unusual but gorgeous, with rosemary fries.
D: chickpea chuna, cocktail sausages (from sainsburys, not a hit), aubergine and garlic pate, salad leaves
S: raspberries, grapes, pineapple, soya milk, green and blacks ginger chocolate, ritter sport. Slipping back into old ways of too much chocolate again. Probably because I'm short on sleep.

@cricketmum84 how hard is low carb and vegan?? I can only think of macadamia nuts to get excited about (and I've successfully low carbed in my omni past)

Although it would last several weeks in my fridge! We use the stayfresh bags that Lakeland sell. I promise I don't work for either company, but they're amazing and really do work. It seems counterintuitive as they're plastic, but they make most of our produce last considerably longer in the fridge. We also wash and reuse them for ages (although washing up and drying the bloody things are a chore)

@IJumpedAboardAPirateShip (hopefully!) here is a screenshot of the sticky rice recipe. It's not my recipe, it's from The Green Roasting Tin. Only half of the book is vegan recipes but it's still totally worth it. DD and I have enjoyed everything we've tried so far (probably 6 or 7 recipes) and have loads more bookmarked

@PartTimeDomesticGoddess I loge veggie delivery day! I get a surprise box once a week and it's mostly local and seasonal. You can order individual items instead but I like the surprise boxes otherwise I just eat them same veggies all the time.

Defo trying that Jamaican cabbage recipe later this week when I do Richmond sausage and celeriac mash.

Great thread.

B: 2x Linda McCartney rosemary sausages and 2x hash browns.

L: Home-made five bean burger, roll, spinach and vegan mayo.

D: will be a shared Clive's vegan mushroom pie with green veg.

Snacks: vegan mug soup, slice of toast with hummus.

I'm not eating as much veg as I should at the moment as I'm feeling quite finnicky about food, so I'm supplementing with some vegan vitamin tablets.

Chinese takeaway. My local does a rice noodle dish that they make just with vegetables for me. I used to get stressed out with limited vegan choices from some places but actually I've found a lot of the time if you just tell them what you want they will make something a bit different for you :)
