L: grapes, 2 plums, sticky rice traybake with butternut, cashews and broccoli
S: handful of pistachios
D: potato and violife feta bake with cherry tomatoes, beetroot and Bombay carrot salad

My Green Roasting Tin book has arrived! And it looks amazing, every page a winner, and I love how it's structured. My eldest is cooking tomorrow (home economics day) and she has decided on the roast miso aubergines and tofu, which is very exciting.

I like the sound of your posh beans @Breathmiller ! I really like hearing people's names for their standby favourite dishes.

Today:

B: tomatoes on sourdough toast
L: lentil soup, hummus sandwich
D: linguine aglio et olio, salad
Snack: big glass of oatly choc deluxe.

@ZaraTheWonderDog, yay for the green roasting tin (I'm not on commission, I promise!) And having someone else cook for you from it is even better 
@Breathmiller I also love the sound of your posh beans. Reminds me of my favourite school dinner, which was called cowboy hotpot. My mum is an amazing cook so most school dinners were a poor sub for eating at home, apart from cowboy hotpot which wasn't like anything she cooked at all. Maybe it's time to try and recreate it..,

B: trek peanut bar and dates
L: oven baked minestrone, satsuma, pineapple
D: loaded sweet potato wedges from one pot vegan (sweet potato wedges, black beans, fajita spice, mango:red pepper/coriander/lime salsa, avocado, and a cashew/nooch/sweet potato savoury dip). Was very nice
S: posh hot chocolate

@Kobanidaughters I got the peanut butter and kimchi idea from a food write I follow on Instagram. I love the contrast between the sweet peanut butter and the spicy savoury kimchi

Not a very healthy day but it’s MLK day so a day off today and we went for a bike ride and I did an an workout so whatever

B: waffles (I never usually have breakfast but DS cooked these all by himself so it would have been rude not to)
L: antipasti on rice cakes and a handful of trek mix
S: orange drizzle cake using the oranges off our tree!
D: smoked tofu with cabbage (instead of fennel), pal Choi and peanut satay dressing and DH is smoking tofu in our stove top smoker

D. Green lentil shepherd's pie, peas, corn on the cob and roasted beetroot- the beetroot is our last pickings from our winter garden.

D: miso roasted aubergines and tofu from the green roasting tin: absolutely delicious. We had it with steamed basmati. The only bummer was that neither of the children liked it, which was a shame for my eldest, who made it. I think the dressing was a bit too citrussy for them. But I ate all mine and most of my youngest's portion, so basically an entire aubergine and half a block of tofu to myself. And I'd do it again, I tell you!

Snacks: banana, satsuma

L: chilli miso rice noodles with spring onion and 3 gyoza dumplings
D: fennel, carrot, red lentil and sundried tomato stew with homemade flatbread, coconut collaborative choc pot
S: salt and vinegar chipsticks and an orange calippo found in the back of the freezer!

Now we need to know what's in a cowboy hotpot 😁

I was watching a programme last night with a scene set in the "rustic' 1920s german countryside. And they were eating a bowl of something that you couldn't even see. In my mind it was a veg stew with chunks of carrots and potatoes and....i don't know ..kale or cabbage? Maybe some lentils to thicken it. That's what I imagine cowboy stew to be a bit like? Maybe with some beans thrown in for good measure. A real hearty winter warmer stew.

I fancy that now.

B: date/coffee/pb/soya milk/banana smoothie
L: aubergine curry with rice and piece of naan bread, pear
Dinner was what DH calls a mixed grill and the rest of us call a fry up 😂. I had 2 Richmond sausages, 1 hash brown, black pudding, baked beans, spinach, roast cherry tomatoes and a slice of wholemeal toast with naturli. They all had a fried egg too

@ZaraTheWonderDog what a shame for your DD, especially when she chose and cooked it. I hate when a recipe disappoints! Excellent effort from you though Grin.
DD14 isn't good with citrus either. Last night I did 3 versions of the mango salsa for our dinner - a portion for her with the merest suggestion of lime and no coriander, a portion for DH with no red pepper and a sharing portion for me and DD17 with everything in HmmGrin

@Breathmiller I wish I knew what a cowboy hotpot was, that's the problem Grin Although I think your posh beans is probably really close to it.
I've just asked my siblings if they remember it. DS thinks it was a liver, bacon and gravy thing with beans in it, but not sure we're thinking of the same thing. She's going to ask the catering manager where she teaches, and is confident she'll remember. I asked if the catering manager was a hundred years old, as I'm pushing 50 so we'll see 😂

That’s not very much food. Are you ok?

I’m sure I’ve cooked that orzo, tomato dish before from the green roasting tin. I don’t use mine as much as I should, the nutrition is some of the recipes is a bit off for my liking.

Oh, thank you for thinking of me - yes, maybe didn't describe the volume very well! My main meal is dinner, and the portion size was massive. I did a kale pesto with almonds, and felt substantial.

Today I had:

Breakfast: Tofu scramble
Lunch: ryvita, tofutti spread, apple and almond butter
Dinner: Butternut squash panko/rice/katsu curry sauce. (hidden veg for kids)

@ilovemydogandmrobama2 ah that makes sense and today's dinner sounds delicious.

Today I had:
B: granola with added dried cranberries, raisins and flaxseed with oat milk, orange juice coffee and toast with naturli spread and lime marmalade.
L: toast with bean feast spread (by vegideli) a few potato wedges and fizzy rhubarb drink
D: puy lentil, smoked tofu, courgette, beetroot and red pepper dish with balsamic and paprika dressing, glass of white wine
S: Jammie Dodger with cup of tea and 2 booja booja truffles

L: parsnip and red lentil soup
D: portobello mushroom cassoulet type deal with some purple sprouting broccolli. Husband made it, having found and adapted an obscure internet recipe, and it was delicious. Though he did make enough to feed about 12 so we've got plenty in the freezer for lunches.
Snack: banana, handful salt and vinegar 'proper chips'

@PartTimeDomesticGoddess I missed your three versions of your mango salsa! I've never tried mango in a salsa but I bet it would be lovely. Today everyone agreed we could try the miso traybake again but this time have the dressing on the side so we could all add our desired amounts (When Harry met Sally style).

I think portions are so hard to judge
@Kobanidaughters that's a shame about the tomato and orzo dish. Me and DD17 liked it when I made it (would have just used marigold stock as that's standard)

B: oats with soya milk/yogurt, blueberries and seeds
L: veg stew with one dumpling (freezer portion)
D: burnt garlic and black bean noodles with cavalo Nero and broccoli (Meera Sodha in the guardian)
S: Apple, dates

Oh i love a mango salsa. Mango, red grapefruit, spring onion, tomatoes, lime juice little oil and chopped chilli. Masses of coriander. We have it on so many things.

L. Ginger butternut squash soup. Oatcakes, houmous and cucumber.
D. Pasta and Pesto with a spinach, roast beetroot and walnut salad.
S. meridian peanut butter straight from the jar. Mmmm.

Had a bit of a busy day and weirdly wasn’t hungry for me - maybe all the snacks have caught up with me!

D: okra and mushroom dish from green roasting tin and galangal marinated tofu, orange drizzle cake
