You are all doing so well, esp getting straight back on track after Christmas
Ive been maintaining since last December - it yo-yos a bit but normally keep in range. Did have a spell of going it alone, and that ended up with an eight pound gain, which Ive been slowly chipping away at since November
Gained again over Christmas - as you do - but managed a loss over the new year, and as of yesterday I was just a pound over top of range so fingers crossed that it comes off this week
Curry recipes - I use the Hairy Bikers curry book - they are so easy. The chicken tikka masala is just lush and every recipe is so easy to make syn free
All their curries have onions as the base sauce. So I cook them with a splash of water in the microwave till soft before I add them to the frying pan with spray oil, to add garlic , ginger, and spices to cook out. Now some of the curries need a darker onion to get a good flavour, I put the soft onions in a dish, spray - air fry till right colour achieved - stirring every few mins
So everyone who likes a thick and tasty curry - give it a try, Also partial to a keema curry, cant always get 5% mince, its ok - Ill use turkey or chicken - comes out as good. Curries asking for cream - I ignore the cream and stir in a bit of yoghurt and again, I start with a third of a can of coconut milk and adjust. Sometimes I can get away with it, other times no it needs the full can
I also make up a red lentil Dahl most weeks to keep in the fridge for whenever Im starved and need filling. I use this recipe https://veggiedesserts.com/red-lentil-dahl/. To cut the syns, I use just one third of a can of light coconut milk - try for taste and add more if you want more , and again soften the onions in the microwave. To up the veg, Ill add sweet potato or squash. If Im storing it in the fridge for lunches, I dont add the spinach until I reheat, that way no slimy spinach. That recipe will give four main portions or 6 lunch portions so what few syns used are spread.
@ListenLinda dont walk past the frozen Berries, they are excellent value and actually have taste. At the moment with this cold weather, Im microwaving them till the juice bubbles before stirring in my oats then adding my yoghurt. Makes a lovely evening snack as well. Summer, I just let defrost over night
