i normally buy a chunck, what i would really like if if was a casa, some nice guanciale, absolutely delicious, but pancetta will have to be.

Oh yes, guanciale is delicious... mmmm. Now I feel like having a huge bowl of amatriciana (the best one I've ever had was in a restaurant in Orvieto. I'd love to go to Amatrice and try the real one )

though the tesco's stuff is ok, if I had a deli round here, I think I'd spend a bit more for a nice chunk of guanciale... actually, need to check out the new deli in town, keep on forgetting, maybe monday. oh, I sooooooo miss carpaccio, maybe they'll have some (ok, I could theoretically make it, but I like it really thin and I can't slice it like that thin...). just realised that between dc and I, we've eaten half a cake!! DD must have had a quarter herself!

talking of food, better start thinking what to cook tonight....

You'd def need an affettatrice for carpaccio (that's something I'd love to have, the affettatrice... but it takes up too much space)

I bought one, affettatrice, for DH for Xmas so we can cut the prosciutto my mum gets us when it gets to small. Not one of these expensive ones though. You can fold it and put it away.

MIL was going to give us an affettatrice some years back, but as we really don't have the space, I told her to just keep it... might look for a foldable one then, nad then bring back whole crudo e speck.... oh, I feel like Alex the lion now, seeing prosciutti everywhere...

Yes I was looking at the more expensive and professional looking ones but tbh I haven't got the space and I would not want it sitting on my counter all the time. So this seemes a good option. My mum had one and seemed to work fine. Will let you all know after Xmas.

You don't know what I did today... I have deleted all my pictures from the comp. Completely! I was about to kill myself. Some fatastic mnetter told me how to possibly recover them and I am trying it now. Keep fingers crossed for me. All our life was there. Somehow I managed to delete them from the memory stick and the comp at the same time [dumb emoticon]!

oh, pinco, that's my fear! we bought an external hard drive to put all the pics there, though I still haven't done that, and so I have a box full of sd cards... it happened to us 2 xmases ago, ikea staff present was a digital camcorder. we recorded ds opening presents with my sis, took lots of pics, then a few wks later dp took it to his parents to show them. told him not to as he'd previously managed to delete pics from the camera, and guess what, he deleted (or as he put it, the camcorder deleted) everything. lucki;y I had about 3 xmas pics on my camera.... and that's why now wenever have pics of me as I'm always behind the camera!

yes, read that, but especially stews are not the same without at least a drop of wine imo

Pinco DH says there is free software you can download to recover deleted files, even if they're not in the trash can, just Google recover deleted files. Good luck, I would be totally gutted if I lost my photos.

Thanks Sputnik. I am doing just that. Estimated time to scan is one hour though so I might have to go to bed and pray. When I realised what I had done and that they were not on the recycle bin I wanted to shoot myself. minipippi decided to start crying at that moment and I swear only her cute face saved her from extinction .

MI: congratulations on the new job. I hope it works out better than you expect.

AllIwant forXmas: I am not sure whether/where you are in London, but if you still have not found pancetta/guanciale, how about [these people www.natoora.co.uk]. I use them when I need to do a big Italian shop (you know, stracchino, robiola, scamorza, their pasta is half the price of the supermarkets- because of the bigger packets- and there is more variety) and usually also get meat and fish at the same time. The pancetta I got last week was good, it came as a thick long slice (about 200g) and then I had to chop it up myself. DH very pleased with resulting pancetta and chestnut soup. Don't be put off by the huge prices on some of the packages they do- I had been for a long time but one day I actually sat down and compared prices with Ocado and found that for the things I buy they were mostly the same or cheaper (and the vegetables and fruit were riper and lasted longer).

Pinco: any luck with the pictures? We are getting (I hope) external hard drive for Christmas to use as backup but up to know I have just made CDs/DVDs of all pictures and stored a copy at each set of parents. Obviously not great/up-to-date but might be a good interim solution once you get them back?
