I made Meliz Berg's take on Mac n cheese with roasted sweetheart cabbage and simmer/boiled cavolo nero tonight - its on her insta and really very good indeed! Proper winter warmer!

NYT Gochujang Caramel Cookies NYT
Someone bought these into the office and I had to give them a go, mine weren't as spicy as the ones I'd tried so next time I'd do 1.5 tablespoons or even 2 of the gochujang - they have such a lovely subtle heat. They do spread quite a lot, I did 35g portions of the mix.

I liked this, but it was fairly mid compared to most Mezcla recipes I’ve tried, can’t see myself making it again.

I had this dish in a restaurant and have put a lot of effort into recreating it. This is pretty close.

Mackerel Cured in Sherry Wine with salad and a creamy sauce (serves 4)

Ingredients:

  • Fresh mackerel fillets, pin-boned
  • Dry Sherry wine (like Fino or Amontillado)
  • Sea salt
  • Sugar
  • Lemon zest
  1. Mix equal parts salt and sugar (about 2 tbsp each) with lemon zest.
  2. Rub the mixture over the mackerel fillets and let cure for 20–30 minutes.
  3. Rinse gently and pat dry.
  4. Place fillets in a shallow dish and cover with Sherry wine. Marinate for 1–2 hours in the fridge.

Creamy sauce (Ajo blanco):

  • 100g blanched almonds
  • 1 garlic clove
  • 50g stale white bread (soaked in water)
  • 2 tbsp Sherry vinegar
  • 100ml olive oil
  • 200ml cold water
  • Salt to taste

Blend almonds, garlic, soaked bread, vinegar, and water until smooth.
Slowly drizzle in olive oil while blending to emulsify.
Season with salt and chill before serving.

Green Apple & Celery Salad:

  • Julienned green apple
  • Thinly sliced celery
  • Capers (rinsed)
  • Lemon juice
  • Olive oil

Toss everything together shortly before serving.

To serve:

  • Spoon a pool of chilled ajo blanco onto the plate.
  • Lay the cured mackerel fillet gently on top.
  • Scatter the apple-celery-caper salad over or beside the fish.
  • Drizzle with dill oil or garnish with microgreens
  • Top with any leftover ajo blanco

Hong Kong-Style Clay Pot Rice with Beef, Wanting
The baking soda quantity seemed far too high so I presumed it should have been 1tsp not 1tbsp. I also increased the amount of beef by about 30% and used bavette steak. I cooked in my rice cooker and maybe that made a difference, but this wasn’t the best one pot rice cooker meal I’ve made.

Does this even count as a recipe? An easy way to get more protein and fibre while still enjoying white rice. As intended the quinoa and lentils don’t have a discernible impact on the flavour or texture.

Really good paella, I feel like every attempt I make is a bit crap but I really enjoyed this. Usually I’m a fairly selfless server, but I did give myself more of the blackened bits at the bottom today!

Red curry sweet potato gratin, Ixta Belfrage, Mezcla
Very easy and perfect as part of a spread. Though I didn’t think it was worth opening a second tin of coconut milk just to drizzle the top with a couple of tablespoons.

Lamb and pistachio patties with sumac yoghurt sauce, Ottolenghi
Simple and delicious.

Kidney bean and sweetcorn curry - Meera Sodha
I used chickpeas instead of kidney beans because the Bold Bean kidney beans were sold out and I was committed to being fancy. Simple and good curry. One I might make again and might not. I’d be curious to try it with the kidney beans though.

Really lovely. I was pretty apprehensive after my last foray into alternative fish pie was so bad I refused to eat it. I’m glad I was brave though as both DH and I really enjoyed this, and I can see myself making this without the potato and serving as a stew.

tomatillo salsa verde
I love tomatillo salsa verde and so bought some fresh tomatillos from Cool Chile Co and made some. The 500g of tomatillos gave me two batches of salsa. The whole tomatillos lasted a good couple of weeks in the fridge. I used batch 1 to go with some pork pibil I made and batch 2 has just been used as a dip (I like tomatillo on cheese in cheese baguettes!) and yesterday I used it with some corn tortillas, topped with a fried egg, some left over steak slices for a bougie brunch

Chicken Yassa
I first head of this Senegalese dish on the first of these threads - a poster referenced a book called Africana which was on Jamie Oliver's book club and then Felicity Cloake has done her 'how to make the perfect' take on Yassa. I really enjoyed this - the cooking the onions is as ever key but all very chilled. I'd increase the heat by slicing rather than piercing the habanero but loved the mix of citrus/sweet/heat - as per food content creator 'toast with hope' says re her restaurant reviews - I'd definitely recommend and will return!

Sticky Toffee Pudding Cookies - Ash Baber
I couldn't find the caramels to put in the middle of these and I was impatient so I made them without, in hindsight I wish I'd waited to find them. Mine don't look like the picture, for some reason they didn't flatten out and are still quite ball like. I've kept most of the dough in the freezer and will try and flatten a bit before the next bake. Really delicious and do indeed taste like sticky toffee!

I thought I'd already posted about one of these but it turn out, I hadn't!

I've had Zaitoun - recipes from a Palestinian kitchen for ages but never actually cooked from it - am now loving it- all three below are from the book. Can't find links for for all of them but Yasmin's insta is yasminkhanstories for delicious looking photos of food!

Tangy gazan beef stew
this was so good - my shin took longer than the recipe says but I anticipated that so stress free adjustment. I put more pomegranate molasses in because I really wanted that big tang flavour. It delivered - would defintely make again.

Hummus with spiced lamb
I somehow always forget how easy it is to make hummus at home - i should get into the habit of making a bowful at the weekend. This was very easy and great - the sumac flavours really shone through. Also meant I had hummus left over for a hummus/jammy boiled egg/halloumi/cucumber breakfast!

Spiced Chicken with dried lime pilaf
Gorgeous - I had bought some dried limes at the same time as purchasing black limes for Noor Murad's spatchcock chicken. Oh my, the dried limes pack a punch (although I accidentally used 2 when 1 was correct for my recipe portion - however, I may stick with the over-liming) The recipe doesn't call for marinading time but I added it in anyway. Served with everyday salad which requires teeny tiny chopping but as was only making for the two of us, I didn't get chopping fatigue!

Sumagiyya: Gazan Beef, Chickpeas and Swiss Chard

This tastes even better the next day, so is a great make-ahead dish.

Spicy pumpkin soup - really delicious but maybe(?) just a tad too hot. Enjoyed very much on these grey overcast days.

Cinnamon Rolls - whilst these had a great flavour I did take the advice from the writer and use self raising flour which I personally felt was a mistake. I’d make again but use bread flour.

Chocolate, cherry and amaretto cake - loved this and it would be really good for Christmas. As a side note it travelled well in the car too!
