A few new ones for me - the first however isn't new but is a twist
Thomasina Miers Carnitas
Love this recipe and do it for high days and holidays as it is a long cook. I had some boneless pork ribs that needed using and tested them out as a substitute for the pork belly. The smaller amount meant the dish was done in 90 mins (and a very hands off 90 mins at that). Not quite as juicy as the fattier pork belly but cooking them in lard helps that anyway. Became a doable mid week dinner!
Sophie Wyburd Sausage, Peppers and Bean Stew
This is on her substack - It is in the paid for bit Anyhow, was part of a post about summer eating and will come as no surprise to learn that this was delicious. It involves roasting some quartered tomatoes for a good hour and then chop onions, heat, add peppers, garlic, chilli, tomato puree, beans, stock. roast sausages add all together - addition of lemon zest and juice really lifts it!
Bold Bean Co Green Goddess Salad
Another good bean recipe but stars of the show were the green goddess dressing and the hot honey halloumi (spoken as a 'not a fan of honey')
Olia Hercules Chicken Cotoletta sandwiches
Can't find an online recipe (may be on on New York Post?) But simple and delicious quick supper - bash a chicken breast until thin, cut on the horizontal, flour, egg, panko, shallow fry and then serve in ciabatta bun with Marie Rose sauce on the bread, some crunchy lettuce and slice of tomato. Delicious
Corn and Miso Chicken
Another Sophie W, on her social and full recipe on substack. Absolutely delicious, miso, butter, garlic bashed up and smeared under the skin of whole chicken which is roasted and then left to rest for 45 mins. Meanwhile fresh corn, shallots and garlic are sautéed, have a bit of a dance with some white wine, introduce the chicken juices, add in some chives a bit more miso. Pour corn onto serving platter and carve chicken into portions and devour. Delicious umami & sweet flavour combo
