One Pan Dumplings
Toast and I must be on a similar algorithm as I also got the delicious looking one pot dumpling recipe on my FYP. I took her advice to cook in a covered pan (about 15 minutes) and served over rice and I loved it, it’s in the meal plan for next week.

Really liked these, they were full of flavour and very pretty.

Roasted Strawberry Victoria Sponge, Nicola Lamb, Sift
An optimised classic. I love Victoria sponge with fresh cream but the catch is storing in the fridge, and it was noticeably worse after a night in the fridge compared to Day 1. So maybe one to make if you know it will be finished in one go.

I have been making new recipes but keep forgetting to post them!

Creamy harissa and red pepper gnocchi - Emily on Toast
My vibe of recipe at the moment is super easy, but still somewhat healthy and tasty and this fit that. I always forget gnocchi exists but I always like it when I have it.

White bean and leek stew - Meera Sodha
Not a huge artichoke fan so I skipped them, and I really liked it. I wasn’t sure if it would be bland because it was so simple, but it was great.

Blueberry and halloumi salad bowl - Emily on Toast
I switched the grain for brown rice which I do for every salad bowl I made and predictably enjoyed it. There’s nothing groundbreaking here, but it meant I needed no inspiration other than checking my inbox.

Hello!! I have gestational diabetes at the moment so my diet is a bit all over the place, which sucks because I usually really love to cook haha

Tonight, because it was so hot, we had:

Had to cook the beef well done because pregnant where I'd usually have it rare/medium rare, but it was fine. I usually add rice noodles to Asian salads like this but used low carb konjac noodles instead as I can't tolerate rice really atm with my GD 😥 but it tastes mostly the same and the konjac noodles (TMI) help offset the side effects of my iron tablets 🤣

Later after checking my blood glucose, for dessert, I'll be having my raspberry leaf tea that I've chilled in the fridge with some avocado chocolate mousse I made yesterday and put in the freezer. Usually I'd have an ice cream in this hot weather but obviously not ideal with the GD - I didn't use a particular recipe for the "mousse", just blended 1 ripe avocado with 1 pack of coconut cream, cocoa powder, vanilla essence and 6 dates that I softened with boiling water. Added enough of the leftover water until it was at the right consistency in the blender and then chucked it in the freezer to make something vaguely ice-cream-like. It's very rich and I'd usually prefer it a bit sweeter and would have added honey or similar, but can't tolerate it at the moment with the GD so just sweetening it with the dates is the best I could do for today! Thankfully I seem to be able to tolerate dates in small amounts if I have them with lots of fat or protein (from the avocado/coconut cream in this) 🤞

Unrelated to this thread but I'm desperate to avoid an induction hence the chilled raspberry leaf tea and obsessively adding small amounts of dates into my meals/snacks lol

Haha, I feel like I'm being trolled by this pregnancy as my first was 4 weeks early I just know this one will try and hang in there until the very last second 😂

Tonight however we will be having Thai green curry (from Jamie Oliver) and I'll have my evening GD treat of two squares of chocolate and some pistachios (and more raspberry leaf tea)🤦‍♀️

I made Leek, Balsamic and Goats Cheese Upside Down Tarts from The Green Cookbook, by Rukmini Iyer.

I managed to pick up the wrong pastry (puff pastry instead of a larger sheet of pastry) but I was able to roll it out and make it work. This was really tasty, really enjoyed it and found it very quick to make!

I’ve been very lazy posting my new recipes, this means there’s lots to post but I will have forgotten so many!!!

Gunpowder potatoes with chicken - absolutely loved this. Full of delicious flavours and as it includes a Bombay mix topping makes it a winner in my eyes.

Chicken Cacciatore - a lovely comforting midweek meal - made better as I used cannellini beans from the Bold Bean Co. In my opinion these made a difference and I would happily pay the price difference. I’m now curious to try the other beans in the range.

Paprika chicken thigh with nutty grains & roasted peppers from The Salad Project by Clem Axby - absolutely delicious, perfect for the warmer evenings (in days gone by!). As the author says the thighs can be replaced with cauliflower and you have a fabulous vegan dish.

As I had some pomegranate seeds over from the above dish I made Pomegranate ice cream - really tasty and a bit different from the usual flavours. Very pleased I didn’t waste them.

Apologies for the longer than usual but I’ll try and improve!!

This kimchi stew was lovely. I swapped out the tofu for mushrooms as I had some that needed eating up. I had it with basmati rice and some yoghurt.

Finally got round to doing Sophie Wyburd's sausage, leek, beans - what not to love and it definitely deserves the ongoing thread praise!. If there is anyone who has not made it yet - here you go https://www.instagram.com/reel/Ce1c1_9owXq/

Also made Esther Clark's jerk ham with pineapple rice. I love jerk chicken which my husband usually makes and I saw this Esther's ham version in Modern Spice Rack actual title - spiced honey and scotch bonnet ham. This was lush and we had it with the rice on night one, we had jerk ham, egg and chips another night and have some ham cubes in the freezer for a future dinner. I use this recipe Thomasina miers empanadas but make one giant empanada/greggs style bake instead of smaller ones!

I had a craving for tandoori lamb chops and recalled seeing Jay Rayner do some stunning chops taken from his book Nights out at home. I can't find an online recipe but the surprise ingredient in the marinade was mint sauce. Chops were delicious but we opted for hassle free and baked them rather than managing multi trays under the grill. If the barbie comes out this year, will make again.

My daughter has just moved out into her first flat with her boyfriend and I gave her a subscription to Tyler Butt's Salty Flavours Club to get her going with cooking in the flat. I saw this on his insta/tik tok and made it a week or so ago. Nothing revolutionary but nice and easy and delicious. Teresa’s mango salad - Meera Sodha, Fresh India
My mango was a little too ripe to form beautiful ribbons - not sure I’ve ever had a problem with too ripe mango before - but still liked this salad. It’s such a simple recipe it was exactly what I expected and was a great side

Courgette, cherry tomato and feta tart - Gousto
I was given some courgettes from a friend’s glut, and also had some questionable looking tomatoes in the fridge and this killed two birds with one stone. I thought that there would be way too much courgette but it worked really well

Summer Salad with Pan-fried Salmon -BBC Good Food (although I did it in the air-fryer rather than in a pan) - a heart friendly recipe. Really enjoyed it, but I would probably add the spinach raw if I made it again - the wilted spinach texture marred the overall freshness of the salad.

One-Tray Spiced Mushroom Pilaf - BBC Good Food was an absolute winner, although I did add more spice. I halved the recipe and there was still enough for two adult portions and two smaller lunch portions. You would not know this is vegan.

Curried Mango Glazed Chicken Burger - BBC Good Food is barely a recipe but produced the most wonderful combination of sweet and sticky coating to some chicken thighs. Again, I opted to air-fry rather than barbecue.

Tuna Melt Nachos - Good Housekeeping such a comforting eat and really quick to knock together too. I didn't have any guacamole so just served it with some sliced avocado.

Cookie balls are a freezer staple in this house, so when Beth shared her emergency cookie recipe on Instagram I screenshot it for a rainy day. Really fabulous, they make a thinner more chewy cookie than the trendy thick gooey centred ones, and I really like them. I still have about half my stash left.

Asparagus Risotto - Feasting at Home
I have eaten so much asparagus this year, fancied something a bit carby and indulgent and this ticked all the boxes, definitely over salted it but I wasn't complaining.

I revisted thread favourite Mezcla this week and made Ixta's Caldo de Feijão with spicy pine nut oil.
The base is a simple black bean soup/broth, I had a tin in and a merchant gourmet pouch but I'd imagine the Bold Bean Co black beans would be excellent. I also had some chorizo to use and as Ixta said it would often have pork in Brazil, I thought why not! The real flavour came from the spicy pine nut oil - delicious - pan fried pine nuts and very fine chopped onion, with garlic plus paprika, cumin, cinnamon, hot sauce and tomato puree and lots of olive oil. The sauce and accompanying blob of creme fraiche (and some spring onions) gave a real heat, and an almost alpine-y flavour to contrast to the black beanness of the broth. Very very easy to do and will make again

Have left over sauce and am making eggs en cocotte for dinner so will use up left overs and will report back!

This took longer to cook than suggested, perhaps because low on my hob is very very low and I was cautious. The texture was perfect and silky. Next time I would plan for more cooking time and a further 15 minutes for it to sit before eating as it really holds heat.
