Continuing one of my favourite threads on MN. I've tagged everyone who's been on the thread this year, but it's not an exclusive club - the more the merrier!

Thanks toast!!! I’ve loved the thread, it’s been so helpful for getting me out of my comfort zone.

Hot Cross Buns, Nicola Lamb
So soft and tasty, I loved these, Nicola is so good for enriched breads. As I’m not a fan of traditional HXB I made these with white chocolate and sour cherry rather than citrus peel and currants (a la Benjamina Ebuehi).

Sweet Spiced Nuts, Brian Levy
The texture of the meringue coating the nuts was really lovely, and a great way to use eggs whites. However, doesn’t quite beat my longterm favourite spiced nuts recipe (which also uses egg white!)

Prawn burgers with pineapple and Scotch bonnet salsa, Ixta Belfrage
This has been in my bookmarks for so long that the recipe has now disappeared from Ocado’s website 🙄 so I guessed the best I could based on the insta video and vibes - and the result was really good! Perfect for the sunny weather we have enjoyed.

thank you for the thread
made Mexican Rice, from a slimming eats website
delicious
with added feta and olives and lime wedges

Conqueeftador · 27/04/2025 22:11

Thank you for the new thread and tag. I’ve been a bit rubbish at posting recipes regularly (lots of ongoing family health problems meaning I’m a bit over whelmed) but have loved seeing all the amazing dishes everyone has posted. I hope to add more myself this time round!

So, this isn’t mine exactly, but my neighbour (who is usually quite restrained when it comes to flavours and spices) made us this last night and it was really great. I will definitely be making it myself soon, though I’ll probably use thighs rather than chicken breast, just because I prefer the flavour.

It has celeriac in it which I’m recently a big fan of. I’ve recently made this dauphinoise with celeriac which was just as great as a potato one.

Thanks for tagging me! I've been a bit lazy about posting recently but i did try this and it was really tasty. It makes loads of sauce - I ended freezing half.

Bavette picanha resting over tomatoes with black lime and maple butter, Ixta Belfrage, Mezcla
The star of this years first barbecue, already planning when we can have it again! For veggies who don't want to miss out I think this would work well with halloumi.

Spicy Gochujang Chicken, Brian Lagerstrom
The star of our second barbecue! This was a really well balanced marinade, I loved that all ingredient was store cupboard staples.

Robin60 · 04/05/2025 19:21

Lime and Blueberry Ring - this has been a family favourite for years and never fails to please. I made it again after sidelining it for too long, it’s absolutely delicious and stays good for several days.

Overnight Foccacia - worked very well and was very little effort. Infinitely better than anything shop bought and minimal effort required,

Recently I’ve been using Biber Salcasi (Turkish Red pepper and chilli paste - the mild version) in recipes and found it totally delicious. My brother offered to pick me up a jar but bought the hot/spicy version! Does anyone know how much hotter it is? Or, should I mix 50/50 with a tomato paste to try and temper it?

Thanks

Taiwanese Three Cup Vegetables- Marion’s Kitchen
Simple and really tasty. As ever Marion is super reliable.

Halloumi resting over tomatoes with black lime and maple butter - Ixta Belfrage, Mezcla
Shamelessly just copied Summa above. We had our first barbecue of the season and this was a stunner. Fits the bill of being totally delicious and also low effort. This is one I can see myself making again and again.

Sausage Mushroom Orzo, Sophie Wyburd, mob
The flavour of this dish was divine and panko topping was tasty and provided a welcome crunch, but I felt I was missing more bite here as the sausage, mushroom, and orzo ended up indistinct small pieces. I would play with the form factor next time - sliced mushrooms rather than blitzed fine, and maybe even topped with whole grilled sausages rather than the meat broken up in the initial stages.

Doenjang Jjigae (Korean Soybean Paste Stew)

which dd makes for us

This weekend we were having a BBQ and it seemed the perfect time to try out the Beef Satay skewers and peanut sauce from Sama Sama by Julie Lin. I’m so pleased I did as they were absolutely fab, and went down a treat. I still have plenty of peanut sauce left so as we’re continuing with this phenomenal weather I might just need to try it out again before the weather changes. If you’re strapped for time the marinade is tasty enough on its own and well worth the effort. Also, if you’re not a peanut fan I’m sure they could be replaced with cashews.

Blackcurrant and Frangipani Tart - this was good just not great. I’m sure I’ve made this (?) or something very similar and it was far better. It took over twice as long to cook as the recipe stated and in my opinion it wasn’t blackcurranty enough! I did make a blackcurrant ciukis at the last minute to ‘help’ it along.

Granola - a wonderful recipe and everything I want from a granola. I have been double batching this as my DD has just had a baby and it’s so versatile - breakfast, nibbling or topping ice cream.

Julius Roberts - Brocolli Pasta
No recipe per se but guessed it from the video, this was fine. Nothing too exciting don't know if I'd bother making it again but it was lovely and fresh.

Spring Cous Cous Salad - Munching with Mariyah
I got served this on my FYP on Instagram and have since saved several recipes from the site. This was delicious, super easy to pull together and I had most of the ingredients in the house.

I made the Cheddar Loaves from Bread Everyday by Bake with Jack again the other week (incredible!) and also made some of his dips - Pistachio Pesto Dip, Whipped Feta and Roasted Red Pepper & Hazelnut Romesco. Would make all again - the dips were a chuck it in the blender situation and very simple. I can't spot any of the recipes online but I'd really recommend the book, it's one of my favourites.

SummaLuvin · 18/05/2025 18:07

Miso Ramen, Felicity Cloake, The Guardian
I saw someone on another thread suggest a cheat to this recipe by using a quality shop-bought stock and left over meat rather making those elements from scratch - which is exactly what I did! This was brilliant, and the shortcuts made it so quick and easy - I did find the amount of miso too much for my preference.

Coconut & Tamarind Chicken Curry, Meera Sodha, Made In India
Really good curry, perfect balance of sour, spicy, and creamy.

DiggoryVenn · 18/05/2025 18:28

Pork tenderloin with apples and walnuts Jose Pizarro
I didn't like the idea of serving the pork cold, so did it hot. It was really lovely, a great summery dish.

Somerset Chicken (Sainsburys Mag)
This was lovely but no idea why this was in the May magazine as it was more appropriate for autumn. Omitted the grated cheese, as that was really gilding the lily!

Pork tenderloin with apples and walnuts recipe | Sainsbury`s Magazine

Pork and apples are a match made in heaven. In this pork tenderloin recipe, the pairing is elevated with Spanish touches such as smoky paprika and tangy vinegar, plus toasted walnuts for crunch

Grated halloumi salad - Emily on Toast
The fried grated halloumi was delicious, the rest of it was fine, probably nothing I couldn't have thought myself (though I did remove the cucumber which will have changed it) but it was a minimal effort midweek meal, I didn't actually have to think of.

@Pompoms88 thanks for sharing that Spring Cous Cous Salad recipe. I’ve put it on the meal plan for next weekend and have shared it with 5 different groups of people! It looks gorgeous.

Peanut Butter and Purple Sprouting Broccoli Pad Thai, Meera Sodha, East
This was so so, probably won’t bother to make it again.

Poached Chicken, Garlic Rice & Spring Onion Sauce, Finn Tonry, mob
I was a sceptical of the chicken cooking method but it worked perfectly and this meal as a whole was great, will be going into the rotation.

Spicy Gochujang Beef Pasta, Meg Robinson, mob
Really solid, tasty, low effort meal - feels sort of reminiscent of gousto pasta dishes, I added some green beans.

Pineapple Poppyseed Cake, andrewinthe_apls
I disagree with his assessment that ‘lemon drizzle has had its moment’ but this cake was great, and something a little different.

DiggoryVenn · 25/05/2025 18:29

Sticky Lemonade Chicken with Rainbow Slaw, Sainsburys Magazine
I loved the slaw more than the chicken actually - I just found that the marinade didn't permeate the chicken enough.

Silky Courgette & Salmon Salad, from Ottolenghi Comfort
This one was gorgeous. I served the salmon as a whole, rather than broken into pieces. I think this is the nicest courgette recipe I have ever made.

One pan dumpling dinner
Saw this on TikTok and I liked the concept but would make some changes. The amount of Thai curry paste plus the spicy dumplings we had in made it way too spicy for me. I think it would have been better served over rice. It took way longer to cook in the oven than suggested, and I think making the whole thing in a covered pan rather than the oven would be better.

Marble cake with chocolate frosting - Nicola Lamb, Sift
Simple and delicious. I did notice afterwards there were some revisions which I didn’t do, but it was still excellent with the book recipe.

Steamed Cod with Spring Onion & Ginger, Xiengni Zhou, mob
Simple, nice, and light - perfect midweek meal.

Daydream Syrup, Ana Valdez
Pretty obsessed with the Daydream Iced Matcha from Blank Street, this at home version really hits the spot (while being much cheaper and more convenient).

Crispy Pork Gyoza, Marions Kitchen
Brilliant! I am a sucker for dumplings and the crispy skirt on these was so nice.

Pecan, miso & honey sable, Nicola Lamb, Kitchen Projects
Really good biscuit! Not much more to say.
