Polish Sausage or Chorizo or similar: How do I skin them without destroying the shape of it?

If it's so thin you can snap it in half, I'm not surprised you're disappointed.

Try Sicilian Salumi. Much girthier and far better finish on the palate, especially when it comes with nuts, too.
