With supermarkets slightly better stocked I’m back to meal planning

Please share yours!

Mine was/is

Yesterday: lentil shepherds pie with green beans
Tonight: teriyaki fried rice
Tomorrow: dahl with garam masala roasted cauliflower
Wednesday: fajitas
Thursday: falafel and hummous salad

Tonight - chicken, noodles and lots of veg stir fry (Ds is cooking)
Tomorrow - chicken tikka masala, naans, bhajis and poppadoms
Monday - Thai green chicken curry with jasmine rice and sharwood Thai crackers (these are amazing, I get them in Waitrose)
Tuesday - pasta, tomato and basil sauce, Parmesan to top and garlic bread
Wednesday - lasagne
Thursday - IKEA meatballs and chips
Friday - Waitrose ready made Chinese bits (sweet and sour battered chicken, duck spring rolls), tempura tiger prawns from m and s frozen, sharwood prawn crackers

With stewed apple and custard, stewed rhubarb and custard, and raspberry trifle at various points during the week

Monday: Dan Dan noodles
Tuesday: curried jackfruit burger
Wednesday: satay sweet potato curry

Friday: sausage and mash

Next couple of days:
Tonight: roast broccoli and lemon spaghetti
Tomorrow: sushi for a change
Saturday: DS’s birthday with lord of the rings themed murder mystery so am making a meal fit for a hobbit: leek and potato soup, “rabbit” (jackfruit) stew with mash AND roasties (because “taters three ways”) birthday cake and cheese and apples
Sunday: black eyed peas and spaghetti squash
Monday: a chilli out of the freezer and rice

This has reminded me to do mine.

Sat: Pasta with tomatoes, olives and spinach

Sun: roast cabbage and tartare mash, thanks for the recipe!

Mon: Buddha bowl with rice, smoked tofu, sweet potato, cabbage and sweetcorn, with tahini and soy yoghurt sauce

Tues: same again

Weds: Fry's burger with little potatoes and sprouts

Thurs: Squash and lentil stew, broccoli, crusty bread

Fri: Leftovers - fridge-clearance Friday!

Saturday - pork medallions in creamy mushroom sauce
Sunday - Roast chicken and all the trimmings
Monday - linguine with tinned sardines, pine nuts, raisins, anchovies
Tuesday - green lentil dhal, aloo gobi and Roti
Wednesday - green mac 'n' cheese

Done mine today as busy tomorrow so won’t have time to plan
Saturday: pasta with rocket pesto
Sunday: carrot and harissa salad with hummus and pitta
Monday: aubergine balti
Tuesday: blackbean and sweet potato tacos
Wednesday: Pealla
Thursday: chilli (from the freezer) with tortilla chips
Friday: veggie sausage, chips and beans (toddler tea!)

Bolognese tonight though. Doing a big batch to freeze portions so that'll be weekly for a while.

Monday - same as we had today as I made double, which is 24 hour ham (with treacle and cloves), roast potatoes and parsnips, carrots and swede

Tuesday - sausages, mash and carrots

Wednesday - chicken tikka masala, rice and poppadoms

Thursday - fajitas

Friday - IKEA meatballs and chips

Saturday - steak suet pie, mash, carrots and runner beans

Sunday - burgers and salad

Also making banana and sultana cake at the start of the week and trifle at the end of the week

Sat - chicken shawarma kebabs

Sun - roast chicken and all the trimmings

Wednesday: veg soup for me, DD chooses on weds and it’s usually meat heavy!
Thursday: African Peanut Stew
Friday: usual pizza night, might suggest build your own for a change and get a veggie crust

I need to get out of a lunch rut, what’s on people’s lists this week? So far I have lentil soup, quesadillas, falafel wraps and usual marmite sandwiches

I lurk often on this thread, fishing for meal inspiration. I just made the African peanut stew from the recipe someone kindly shared and it’s delicious! I’ve only eaten about a fifth of it though, can it be frozen ok? I might get a bit sick of it if I have it for 5 meals in a row Grin

Monday - pasta amatriciana
Tuesday - chicken tikka masala and samosas
Wednesday - fajitas
Thursday - ham and pepperoni pizzas and salad
Friday - burgers and chips (this has been on my meal plan for a couple of weeks, but we have had a substitute)
Saturday - DH is cooking (he doesn't know this yet)
Sunday - chicken, chorizo and prawn paella (with enough leftover for the next day as I am working late)

Lunches - we are working our way through Waitrose and M&S fresh soups! This one is by far my favourite, if you eat chicken.

I admit to cheating - I have simply cook sauces/spices so it's pad Thai tonight, chicken korma tomorrow, spaghetti with pesto (jar) and mushrooms, west African peanut stew, spaghetti puttanesca (my recipe) and then I need to shop!

I haven't looked at, or posted on, this thread for ages and feel like I'm in a rut with cooking at the moment - especially on weekdays, so I really need to read through and get some inspiration.

Had roast lamb last night so using the leftovers in a curry tonight with lentils and spinach.
Tomorrow will be oven baked fish and chips/potato wedges with peas and broccoli
Wednesday - leftover Thai chicken from the freezer with either rice or baked potatoes depending on family preference.
Thurs - pasta & cheesy butternut squash bake
Fri - crispy gnocchi with squash and mushrooms.
Sat - no idea
Sun - roast chicken, Greek style.

Aaargh. Just went to the fridge for curry ingredients and noticed the peppers, courgettes, chicken and other bits I had bought for fajitas. I only had this conversation and went to the supermarket yesterday ffs. So that's fajitas tomorrow, fish on Wednesday and the Thai chicken will continue its frozen existence until next week.
