With supermarkets slightly better stocked I’m back to meal planning

Please share yours!

Mine was/is

Yesterday: lentil shepherds pie with green beans
Tonight: teriyaki fried rice
Tomorrow: dahl with garam masala roasted cauliflower
Wednesday: fajitas
Thursday: falafel and hummous salad

I saw rice flour in the world food section of asda the other day. Dosa are usually made by soaking while rice overnight and then whizzing it up in a blender or food processor. You could try that if you can’t get the rice flour.

Back at work, so back to meal planning!
Today: Mushroom bourguignon (adapted from Hairy Bikers recipe to make it vegan) with mash and vegetables
Tomorrow: M&S vegan pizza
Sunday: potato, cauliflower and lentil curry with flatbreads
Monday: vegan lasagne with salad
Tuesday: minestrone soup with focaccia
Wednesday: Tofu fajitas
Thursday: Vegan macaroni cheese with random green vegetables (whatever we still have in the fridge/freezer)

Thanks, lastqueen and karma - there are lots of Asian and Middle Eastern shops in the city where I work, but I'm still WFH so can't go. However, DH found some rice flour in Sainsbury's last night and forgot to tell me, so it's all fine.

I've made dosas and hoppers before by soaking rice and dhal or coconut and grinding them, but the recipe I was going to try next week (from Meera Sodha's Fresh India) uses rice flour in the hopper batter. I'll report back about which one works best!

Sunday: homemade tofu ricotta stuffed ravioli with fresh tomato and balsamic sauce
Monday: tofu and oyster mushroom Chinese stir fry with rice
Tuesday: think lasagne
Wednesday: lentil masala
Thursday: might end up going out for omusabi (stuffed rice balls)
Friday: pizza night
Saturday: taking DS to my fav restaurant for lunch and he then wants to cook something from their cookbook for dinner

Bit behind with my lists this week! We had/are having:

Saturday: Miso chicken with mushrooms, pak choi and rice
Sunday lunch: Squashed tomato uttapam (from Meera Sodha's Fresh India - decided to make these instead of dosas, and they were great).
Sunday dinner: Sweetheart cabbage okonomiyaki (Japanese omelette, also from Meera Sodha) with carrot and sesame salad
Monday: Fish tacos with pineapple ketchup and salad
Tuesday: Beetroot and feta galette with za'atar and honey, green salad
Wednesday: Korean beef and rice; stir fried cabbage
Thursday: Carrot, courgette and bulgar wheat salad with pistachios and mint (from The Roasting Tin Around the World)
Friday: Smoked haddock florentine with crusty bread

Tomorrow: trying to make vegan korma, might me a disaster
Saturday: out for a meal
Sunday: carrot and coriander soup with fresh baked sour dough
Monday: tahini tofu stirfry
Tuesday: gnocchi with home made basil pesto
Wednesday: baked sweet potato fajitas with guac and salsa
Thursday: breakfast for dinner or similar

Sat: Chinese tofu and veg story fry
Sun: walnut toast, macadamia butter and radishes (trialling a recipe from a new cookbook, DS choices, having a hearty picnic on the beach for lunch!)
Mon: vegan moussaka and salad with orange blossom dressing, pistachios and pomegranate
Tues: Japanese fried rice
Weds: v sausage and bean stew with mash
Thurs: DH sorts the kids, think I’ll make gazpacho as I’ve been craving it for a while
Fri: pizza night as per for the kids,pumpkin curry for us

Saturday: apparently DH and D.C. will be cooking!
Sunday: HFW roast new potatoes, lettuce and spring onions with swordfish for the omnis and grilled tofu for me
Monday: spaghetti squash chow mein
Tuesday: jackfruit and black bean tacos
Wednesday mushroom and acorn squash risotto
Thursday: warm mushroom and parsnip salad if I can find some parsnips, might do a chilli if not
Friday: pizza night as per!

Hello everyone! I'm facing into a winter of routine so I need to get on top of my meal game.
Mon: sweet potato and lentil curry (Roasting Tin recipe)
Tue: beef bourginon and mash
Wed: ditto as long as the kids don't wolf it all on Tuesday
Thurs: 'turmeric rice dinner' (chorizo, onion, peppers, rice, tomatoes, peas, turmeric, rice and stock, a real store cupboard staple)
Fri: Beans and sausages (Donal Skehan's Uncle Frank's beans) with crusty bread

That's as far as I have. Some of your recipes here sound fab. Following for ideas.

S - lamb koftas / vegan sausages, spicy cous cous, peas and carrots
M - lamb meatballs / vegan balls, bottom of the fridge veg sauce and pasta
T - gammon / vegan burger, chips and salad
W - Quorn shawrama, red pepper hummus, roast veg
Th - Quorn cajun pasta with salad
F - Pizzas, garlic bread, coleslaw, salad
S - steak / mac and greens, sweet potato fries, broccoli and carrots

Tonight - slow cooker chicken and paneer korma with paratha
T - out for lunch so leftover chicken noodle stew from Tuesday
F - chicken Kiev’s with tomato and mozzarella gnocchi bake
S - chicken burgers and wedges
S - sausage pasta bake

Tomorrow: sweet potato satay curry
Monday: spinach and pea pesto risotto
Tuesday: Singapore noodles
Wednesday: lentil and walnut chilli
Thursday: leftovers (there should be lots!!)

Tu: mushroom and broccoli oven baked risotto
W: beef and broccoli noodle stir fry
Th: freezer tea (probably a veggie chilli from the last batch cook)
Fri: baked fish, homemade wedges and peas
Sat: take away or eat out

I’m supposed to be following a fat loss plan but have been off the wagon for ages. I’ve been doing a bit better the last couple of weeks but my protein is way below my goal so tomorrow I’m buying a boatload of chicken breast. In no particular order (will see what dates are like) the weeks meals are:

Chicken curry, Dahl and saag paneer for a dinner and then lunch for me for a day or two.
Chicken breast topped with pesto and mozzarella with roasted cherry tomatoes and new potatoes
Chicken chow mein
Spicy chicken with rice and salad
Homemade pizza

DH is predominantly in charge this week but I also have a few nights where for various reasons I’m catering for myself:
Sat: empanadas
Sun: vegan cassoulet crumble
Mon: lasagne
Tues: soyrizo hash
Weds: DH cooking (hopefully including an apple pie)
Thurs: prob mung bean soup
Fri: always pizza night for the others but I haven’t actually had pizza in ages so if I stick to not drinking this week I’ll treat myself
