With supermarkets slightly better stocked I’m back to meal planning

Please share yours!

Mine was/is

Yesterday: lentil shepherds pie with green beans
Tonight: teriyaki fried rice
Tomorrow: dahl with garam masala roasted cauliflower
Wednesday: fajitas
Thursday: falafel and hummous salad

I made enough for 3 meals and every evening have sneakily had another small bowl as a midnight snack 😬

@LauraMipsum I do the Oh She Glows recipe but also add lime which is an additional level of inauthenticity but I like it

Mon - lentil spag bol
Tue - sweet potato and black bean rice bowl
Wed - vg sausage and potato
Thu - lasagna
Fri - Leftovers

Saturday: curry take away
Sunday: roast carrots, parsnips, tofu/tempeh and quinoa (finishing off crap in the fridge!)
Monday: red lentil lasagne
Tuesday: mushroom risotto
Wednesday: DD’s birthday so guacamole and crisps followed by fish fingers and chips and green beans followed by birthday cake on her request!
Thursday: THANKSGIVING! Turkey for the omni’s, happy pear Christmas wreath for the vegans, green bean casserole, cornbread, mashed potatoes, stuffing, pumpkin pie and bourbon slushies
Friday: thanksgiving leftovers and/or pizza

But vegan butter, and I used a mix of mushroom stock and a slug of red wine vinegar instead of veg stock and red wine, and shortcrust pastry as DD isn’t keen on puff.

This thread is so inspiring! I'm feeling a bit rough so lounging in bed and making lists. Aiming to plan until end of Christmas holiday if possible, have done this previous years and it massively reduces stress for me.

Can't wait to try the peanut stew but we only have crunchy peanut butter so will have to be next week.

This week:
Saturday - meatballs and pasta (made with a packet of sausages skinned and rolled into balls) DD pasta and pesto, DS2 pasta and grated cheese
Sunday - chicken stir fry with noodles and prawn crackers, DD veg stir fry, DS2 chicken noodles and prawn crackers
Monday - spaghetti and cannellini beans, DS2 mac cheese and bacon
Tuesday - tomato and lentil soup and toasties, just toasties for DS2
Wednesday - pizza and salad
Thursday - cottage pie with carrots and peas, DS2 roast beef, yorkies and roast potatoes
Friday - fishfingers, chips and beans

Meal planning in this house is made more complicated by vegetarian DD and DS2's very limited diet!

I made the mistake of going to the supermarket after the school run this morning without a plan, freezing cold and hungry. So it’s comfort food all week!

Tomorrow - chilli with wraps or rice, tortilla chips salsa etc

Sun - Roast chicken, I’m trying a stuffing recipe before Christmas

Mon - baked potatoes with tuna/cheese/beans

Tues - curry night, I have plans for 2 chicken curries, Dahl and saag paneer so enough to freeze leftovers for another night.

Weds - home made pizza

Thurs - freezer roulette

Fri - probably a takeaway

I have all the stuff in for peanut stew but there’s been leftovers from the night before for my lunch every day this week so haven’t made it yet. I also may have bought enough cheese to be eating cheese and biscuits every day through to Christmas! Blush

Tuesday - sausages, possibly toad in the hole with onion gravy but could turn into mash and baked beans

Thursday - chicken in breadcrumbs with new potatoes and salad

Friday - smoked haddock, cod and salmon fishcakes with broccoli and peas, homemade tartare sauce.
Saturday - spaghetti carbonara
Sunday - brisket, roast potatoes, carrots, sprouts, cauliflower cheese
Monday - m'hanncha (Moroccan vegetable pasty with filo pastry), spicy tomato sauce

Tonight - cheese and onion pie from local farm shop, baked beans
Sat - creamy salmon pasta, peas, pesto and garlic bread, salad
Sun - whole roasted piri piri chicken with root vegetables and new potatoes
Mon - Nigel Slater hearty party veg stew
Tue - sausages, not sure what with yet
Wed - cottage pie (still dining out on last Sunday's beef joint, a £10 joint has made 8 meals and 4 portions of gravy, stuff like that makes me happy!)
Thursday - it was chicken thigh and chorizo tray bake but chicken was out of stock on my click and collect. Will probably throw together a pepper and chorizo pasta bake.
