With supermarkets slightly better stocked I’m back to meal planning

Please share yours!

Mine was/is

Yesterday: lentil shepherds pie with green beans
Tonight: teriyaki fried rice
Tomorrow: dahl with garam masala roasted cauliflower
Wednesday: fajitas
Thursday: falafel and hummous salad

Yeah we’ve planned this week, need to go shopping on Thursday (didn’t quite make it to 2 weeks) because we ran out of fresh fruit and veg a few days ago and lunch supplies have dwindled but I think we can do dinner for at least another week:

Tonight:
chickpea masala, mustard seed green beans, rice and naan

Tuesday:
L: lentil soup
D: homemade ravioli stuffed with tofu ricotta and parsley pesto

Wednesday:
L: butternut and sweet potato coconut soup
D: sheperdless pie

Thursday:
L: bagels and hummus
D: sushi takeaway!

Friday:
L: pasta and pesto
D: pizza night

After this I don’t know about lunches but have planned dinners around what’s in the freezer:

Saturday: mushroom and pea risotto
Sunday: African Peanut Soup
Monday: sheperdless pie

Today: saag aloo and yoghurt. Leftovers tomorrow lunch in wrap probably with cheese all melted and filthy.
Tomorrow: homemade chicken goujons and poss potato salad (vinaigrette not mayo) and tomato and avocado salad
Thurs: chilli chicken (Nigel Slater recipe from Real Fast Food) with spring onion raita and salad in pitta bread
Fri: bacon and pea risotto
Sat: something involving stewing beef, maybe a pie
Sun: lots of antipasto
Mon: aubergine parmigiana
Tues: some sort of chicken curry
Wed: pasta bake
Thurs: chorizo, potato and tapenade tray bake

I think some of these might slip, because there will be enough food to go another day so will rollover.

Tuesday: chicken tikka style curry with broccoli and rice
Wednesday: spag Bol with garlic bread and salad
Thursday: chicken Thai green curry with spinach, rice and broccoli
Friday: beef steak stir fry with egg noodles
Saturday: BBQ if weather is nice!
Sunday: roast beef (rest of joint being used to make Cuban chilli for freezer)

After a few weeks of emptying the freezer of our batch cooking, it's time to fill it again, with each of these meals (except stir fry obvs) being enough for 3/4 more meals as well as the night in question! We are sick of cottage pie etc so looking forward to filling it with curry Grin

How do you know what you feel like eating in advance, does it not get boring?

This is this week's meal plan:

Monday- meatloaf for lunch and prata with salmon for dinner
Tuesday- spinach for lunch and a vegetable stir fry for lunch
Wednesday- egg sandwiches for lunch and chicken and onion soup for dinner
Thursday- fried fish for lunch and noodles for dinner
Friday- spaghetti for lunch and pizza for dinner
Saturday- broccoli and lentil with rice
Sunday- salad for lunch and fake away for dinner

@Devlesko - my way of doing it is to accept that I may wake up feeling like I don’t want what I had planned and swap things around if and when. So I have the meals planned but the days might change. I got a click and collect order from Sainsburys that I picked up this morning, so I had to plan roughly so I knew what I was ordering, but things may change or slip, so not set in stone.

Aw, I get you, it's just to be organised a bit.
I struggle with organisation and dh has been suggesting we did this for ages.
His idea is having the same dish on the same day, each week.
I used to see the meal planning threads on here when everyone was working, and think I must try doing that, but never seemed to link to my shopping list Grin

We’re the same, I have a meal plan, sometimes it changes days sometimes a different meal altogether but probably using similar main ingredients, just keeps my good shop a bit lower in cost!

My meal plan always used to be based around getting home very late on Tuesday and Thursday, and stuff that needed to reheat well.
I am also so indecisive so if I don’t meal plan I don’t shop properly and live off bread.
It also saves a fortune

This weeks
Tomorrow: jalapeño popper Mac and cheese (trying to veganise a recipe I used to make all the time when I was a veggie, we’ll see if it works)
Saturday: leek and potato soup (home made) with crusty bread
Sunday: lentil and mushroom wellington with green veg and roasties
Monday: saag aloo and rice
Tuesday: garlic sesame noodle stir fry
Wednesday: leftovers as my freezer is full of them
Thursday: gnocchi with home made rocket and walnut pesto

@develsko I definitely couldn't eat the same thing each day of the week! MEal planning for me means writing a shopping list based on what we have in already and then thinking what I could add to that to make meals and then thinking of what we want for the rest of the days. I don't plan what day we will eat things on, it is usually dictated by dates on vegetables.

This is what we do as well. I thought people were talking about the same meal on the same day each week.
I don't plan actual meals, but would really like to start, as I think it would make life easier.

I just plan everything out as it’s one less thing to think about as I’m running about like a blue arsed fly all week generally

I never stopped. With shortages it's even more important - I write down a list of a few swap outs e.g. if I can't get carrots I'll get a sweet potato/ swede etc....

We're emptying the freezer next week. That'll be fun.

DH is going to the shops today, first time in 2weeks and I’m desperate for fresh fruit and veg and salad!

Joining for inspiration - some amazing sounding dishes here. I'm really enjoying the fact that I can meal plan a bit now, rather than throwing together weird bits of food. I feel like I've got some control back over the situation.

My week is/has been:

Monday
Lunch - tomato pasta
Dinner - pitta bread with halloumi, greek salad and hummus

Tuesday
Lunch - mushroom soup (tin)
Dinner - spinach and ricotta tortellini with pesto and salad

Wednesday
Lunch - cheese sandwich and crisps Blush
Dinner - chicken kiev and lots of veg (roasted mushrooms, peppers and courgettes and steamed carrots and green beans

Thursday
lunch - carrot and lentil soup (homemade) with bread
Dinner - "Greek Salad pasta" - penne with diced feta, cherry tomatoes, olives and lemon juice

Friday:
lunch - carrot and lentil soup
Dinner - I had planned a mushroom omelette with new potatoes and veg but DH wants fish and chips...

Saturday
Lunch - carrot and lentil soup
Dinner - spaghetti and meatballs

Sunday
lunch - cous-cous with roasted veg
Dinner - venison stew (not very seasonal but I'm trying to use up freezer stuff) with kale and crusty bread.

Meal planning is even more essential now that popping to the shops is not possible and delivery slots need to be booked 3 weeks ahead to ensure them.

The upcoming week looks like this:

Friday:

  • L: salad with roast veg, charcuterie, and fresh mozzarella
  • D: pork carnitas with DS made flatbreads

Sat:

  • L: DSs are making pizzas (bases, sauce, assembly)
  • D: slow roast salmon over buckwheat galettes (Ocado substituted buckwheat flour for 00 flour, so needs must!)

Sun:

  • L: quesadillas using up leftover carnitas
  • D: chicken and sausage cassoulet

Mon:

  • L: tuna melt sandwiches
  • D: pasta with nduja and caramelised fennel

Tues:

  • L: sesame noodles with cucumber, spring onion, and sugar snap pea
  • D: toad in the hole with greens

Wedn:

  • L: using up veg fritters
  • D: pasta bolognese

Thursday (fresh delivery day!!!)

  • L: red lentil stew
  • D: beef with broccoli and white rice

Friday:

  • l: Veggie burger served with crudite
  • d: pan fried sea bass with spring veg and new potato
