With supermarkets slightly better stocked I’m back to meal planning

Please share yours!

Mine was/is

Yesterday: lentil shepherds pie with green beans
Tonight: teriyaki fried rice
Tomorrow: dahl with garam masala roasted cauliflower
Wednesday: fajitas
Thursday: falafel and hummous salad

Tomorrow: getting a takeaway Grin
Saturday: teriyaki aubergine stir fry and rice noodles
Sunday: tabouleh, hummus, falafel, pitta
Monday: veggie sausage, olive oil mash and onion gravy
Tuesday: gnocchi with sundried tomato pesto (home made obvs)
Wednesday: Sri Lankan sambar curry.
Thursday: leftovers I expect

We’re off in a camper van Saturday to Saturday, here’s our camping meal plan:

Sat: pasta pesto
Sun: Moroccan couscous with chickpeas and fire roasted peppers
Mon: campfire steak, corn on the Cobb and baked potatoes (tofu skewers for me)
Tues: campfire lasagne
Weds: Italian tofu scramble and rice
Thurs: bean chilli and rice
Fri: mushroom risotto

Probably order in a pizza when we get home and not cook for a week 😆

Morning all, are meal plan this week is:
Saturday - beans on toast, cheesy pasta or ready meals
Sunday - Burgers, rolls, salads onion rings and beans.
Monday - Takeaway
Tuesday - Hunters chicken,vegetables and mash potatoes
Wednesday - sweet and sour chicken with rice
Thursday - Fish, peas and chips
Friday - Chill/Spaghetti, from the freezer already cooked with rice and pasta.
Saturday - Sausage pasta bake

Haven't been camping in years but when I did it was generally pasta, pasta, pasta.
This week:

  • coconut and sweet potato chicken (doctors kitchen)
-baked cauliflower pizzaiola (v)
  • indian take away
  • sticky aubergine with rice (v)
-honey mustard chicken thighs -slow cooker vegetable lasagne (v) -bolognese stuffed peppers

Saturday: vegan pasta Alfredo and rocket and cherry tomato salad
Sunday: veggie pot pie with roasted new potatoes and veg
Monday: tofu cashew curry
Tuesday: chilli and lime jack fajitas
Wednesday: tomato risotto
Thursday: leftovers probably

  • Morroccan lamb with cous cous
  • chicken burgers, mango salsa, sweet potato fries and salad
  • ras el hanout turkey with Bulgur wheat
  • sea bass with ginger
  • slow cooker risotto (v) (experimenting with a low cal risotto here)

@mamapants loving all the Moroccan vibes. I’m working long hours this week and feeling meal plan unmotivated so it’s all quick and easy stuff:

Sat: skillet lasagne
Sun: hm pasta with fresh tomato and tofu ricotta “sauce” and a big kale salad
Mon: mushroom risotto
Tues: ramen
Weds: Japanese curry
Thurs: not sure yet, prob get a veg box delivery and have a mountain of veg
Fri: pad Thai and Thai aubergine

Sunday - portobello pizza and salad
Monday - bacon and egg sandwich - need to make bread to enable this
Tuesday- falafel, houmous, pittas, salad
Wednesday - pasta or something from the freezer

Shopping coming Wednesday and veg box Thursday so will replan then

Got a bit morroccan obsessed. Love lamb with Moroccan flavours and found a nice recipe for morroccan bulgar wheat to try.
I also ended up trying the chickpea shakshuka someone posted on here for lunch the other day, was delicious. Thank you.
How do you make skillet lasagne?

I’m vegan now but one of those vegans who still salivates over the stuff I no longer eat, I miss lamb and especially in a tagine so much now you’ve said that!!

I just layered up the lasagne (using fresh pasta sheets made by DH) in a skillet and whopped it in the oven. Didn’t bother with a white sauce, just layered pasta, ragu (cheated and used tinned mushrooms and pre-steamed lentils) and mozarella

Tomorrow: meeting a friend for a meal out
Saturday: falafel wrap with hummus, pickles, salad and chilli sauce
Sunday: veggie sausage and bean stew with olive oil mash
Monday: pad krapow tofu and rice
Tuesday: kale, lentil and roasted beet salad
Wednesday: spag bog
Thursday: onion bhaji burger with vegan raita

I so much prefer meal-planning in the autumn! Hearty warming dishes are just more exciting somehow.

Tonight (Friday): pineapple glazed gammon with green veg
Sat: greek salad with crusty bread
Sun: creamy mushroom tagliatelle
Mon: sea bass alla puttanesca
Tue: macaroni cheese
Wed: pesto chicken with asparagus and roasted tomatoes
Thu: teriyaki tuna steak with rice and tenderstem broccoli

Think I’ll theme each night this week and then work out the details later, weekend is sorted though:
Sat: picnic on the beach - I’m bringing falafel, hummus, pita, tabbouleh and watermelon
Sun: roast chicken (tofu for me) dinner followed by banoffee pie
Monday: Persian mung bean soup
Tuesday: puttanesca pasta
Wednesday: lentil masala
Thursday: maybe a bean chilli? Trying to go through store cupboard stuff

Would you mind if I joined in? I was in another meal planning thread but @IJumpedAboardAPirateShip kindly pointed me towards this thread. Your menus look fantastic and have given me lots of inspiration!

I cook pretty much every day, so I meal plan and shop for specific meals to make things simpler. I cook a lot of Middle Eastern and Mediterranean food (family background), as well as some Indian dishes. I love looking for ideas in books and magazines, so I usually only repeat one or two meals every month. I'm always on the lookout for new ideas, therefore - especially if they fit into the hectic hour or so after school/work, or can be cooked in advance!

This week has been a visit atypical because the DCs returned to school, so I wanted to keep it fairly simple:

Sunday: Chinese five spice pork belly with sweet potatoes, pak choi, ginger and garlic (adapted from a recipe in The Roasting Tin because DD finds pork chops too dry - she LOVED the pork belly, so that's definitely one to keep on the list!)
Monday: pasta with leeks, mushrooms, pancetta and crème fraiche
Tuesday: roasted carrot, halloumi, cannellini bean and walnut salad (from The Roasting Tin Around the World)
Wednesday: toad in the hole, steamed broccoli (and onion gravy)
Thursday: butternut squash and sage ravioli with butter and green vegetables
Friday: duck breasts with blackberry sauce, buttered new potatoes and Savoy cabbage

I'm trying to find rice flour locally so I can make egg hoppers or dosas next week but with no joy!

Welcome!! Do you have any West Indian or world food type shops near you?
I live in an area with a huge south Asian and East African population and the grocery stores run by them are incredible, and have every breed of flour under the sun. Often very cheap.
