Would you mind if I joined in? I was in another meal planning thread but @IJumpedAboardAPirateShip kindly pointed me towards this thread. Your menus look fantastic and have given me lots of inspiration!
I cook pretty much every day, so I meal plan and shop for specific meals to make things simpler. I cook a lot of Middle Eastern and Mediterranean food (family background), as well as some Indian dishes. I love looking for ideas in books and magazines, so I usually only repeat one or two meals every month. I'm always on the lookout for new ideas, therefore - especially if they fit into the hectic hour or so after school/work, or can be cooked in advance!
This week has been a visit atypical because the DCs returned to school, so I wanted to keep it fairly simple:
Sunday: Chinese five spice pork belly with sweet potatoes, pak choi, ginger and garlic (adapted from a recipe in The Roasting Tin because DD finds pork chops too dry - she LOVED the pork belly, so that's definitely one to keep on the list!)
Monday: pasta with leeks, mushrooms, pancetta and crème fraiche
Tuesday: roasted carrot, halloumi, cannellini bean and walnut salad (from The Roasting Tin Around the World)
Wednesday: toad in the hole, steamed broccoli (and onion gravy)
Thursday: butternut squash and sage ravioli with butter and green vegetables
Friday: duck breasts with blackberry sauce, buttered new potatoes and Savoy cabbage
I'm trying to find rice flour locally so I can make egg hoppers or dosas next week but with no joy!
