I just made a really quick meal which my children loved! Share your after-work quick tea successes!

After work quick tea, wolfed down by the DC!

Cooked some pasta
Chopped up a couple of tomatoes and a ball of mozzarella
Fried up a box of lardons
Mixed the pasta, mozzarella, toms and lardons together. Added a few black olives, a couple of abel spoons of philly and a blob of pesto
Stuk it in a dish
Cover in grated cheddar
Grilled it

I thought I'd made enough for DH's tea too, but there's hardly any left. This never happens! They both ate it all up, even DS who "doesn't like tomatoes".

I called it "Pizza Pasta" because its all the stuff you'd usually get on a pizza, but in pasta.

Pasta and peas cooked together and drained. Add flaked smoked mackerel and grated parmesan. 10 mins max.

Also works with rice or noodles for variety.

Or hot smoked salmon for even more variety!

Slight faff but always wolfed down - salmmash. Salmon cooked till a bit crispy mixed up with mash and peas, the kids will eat it all!

Tray of ready to roast Mediterranean veg in oven. 5 mins before its done squirt some tomato puree and break a ball of mozzarella on top and return to oven.

Cook some pasta. Stir veg into pasta. Cheesy veggie pasta.

Pasta, olive oil, garlic and a pinch of chilli flakes. Topped with a bit of cheddar. Yum

Our fave is mini pancakes.

Three tbsp plain flour in a bowl
Add an egg
Mix
Add three tbsp milk
Mix
Throw in a bit of chopped ham and grated cheese
Spoon into hot pan. One spoon per pancake
Turn over when bubbles appear on surface

Takes less than five mins and washing up is only a bowl, a spoon and a frying pan with no residue as they don't stick.

large frying pan with a bit of olive oil, fry onion, prawns and chorizo sliced peppers, tomatoes add some micro rice or pre cooked rice, voila delicious Spanish type dish in around 15-20mins, everyone loved it.

Chicken noodle soup.

Sauté finely chopped onion,carrot and celery. Add chopped chicken (raw or roast left overs)

Add chicken stock-pot, boiling water and broken up spaghetti.

Simmer until pasta's soft.

Another one I call 4,2,1. We do this for breakfast if it is not a rush.

4 tabs SR flour
2 tabs. caster sugar
1 egg.

Beat up until a smooth batter, put a little butter in the frying pan to melt and coat, then a tablespoon of the mixture into the pan, flip over when bubbles appear. Heap up on a big plate, let them loose on honey, golden syrup, they wolf them down.

Fry bacon bits/pancetta and some chopped shrooms
Add half bottle of tomato passata (& a bit of sugar to take the edge off)
Add half tub of marscapone
Add a handful or 2 frozen peas
When heated through mix into cooked pasta
Grate on Parmesan

My kids fave tea

My favourite super quick tea is:

Couple of handfuls of sliced frozen mushrooms and plenty of garlic in a saucepan and cook til most of the liquid has gone. Add a couple of the little packs of Boursin (the individual portion ones).

Whilst the above is doing cook pasta, adding a couple of handfuls of spinach for the last couple of minutes.

Drain pasta/spinach, tip mushroom mix in and mix.

Voila.

Ok. Here's my speedy one which now requested.
Cook lots of fish fingers.
Pan of water and cook instant/quick noodles and lots of peas.
Chop fish fingers.
Mix with noodles and peas and lemon juice.

I don't fancy it myself but do not like peas or fish fingers, but apparently it's ace!

I have a couple of quick ones. Carbonara (fry lardons and garlic, mix eggs, extra mature cheddar and Parmesan in a bowl, mix everything with cooked pasta) and baked salmon fillets (butter, garlic and squeeze lemon over for the last 2 minutes of cooking) with new potatoes and green beans. Guaranteed crowd pleasers if a little basic, perfect for midweek.

I'm going to lower the tone here.

Cook pasta
While it drains pour tinned tomato soup into the pan to heat.
Add pasta.
Stir and serve.

My children love this, it's their favourite. They think it's a special and very complicated recipe. When they leave home I might let them in on my dirty secret.

Tin of black eyed beans, tin of chick peas, tin of lentils. Put in a pan. Add crushed garlic (lots), sweet chilli sauce, half a block of creamed coconut. Add chopped carrots and chopped tenderstem broccoli. Simmer while rice cooks. Vegetarian curry - done. (I have a vegetarian DD, but DD2 who is a raging carnivore also loves this). Serves 4 including 2 hungry teenagers.

Egg Fried rice
Leftover boiled rice best if kept in fridge beforehand so goes very cold
Heat oil (1 tablespoon per person) in a wok until smoking and stir in beaten eggs (1 per person) cook until lightly scrambled. Throw in some chopped spring onions, some frozen mixed veg, cold meats/ham etc and stir for a few minutes. Add the cold rice (1 bowl per person) and stir fry until rice is thoroughly hot. Add soy sauce and stir until all the rice is coated

I absolutely hate eggs unless they are in quiche or cake, but I need a protein boost after the gym.

My DC love a cheat's version of egg fried rice:

Cook rice and add peas for the last minute
Drain, then return to the pan with some butter and an egg
Cook gently and stir well
Serve with ham or leftover roast chicken.

Roast Veg and Halloumi Cous Cous

Chunky chopped up peppers, courgettes, onions, whole garlic cloves, carrots

Drizzle with olive oil, chilli powder and paprika

Roast in oven - halfway through, add cubes of halloumi and give it all a shake around. Total roasting time about 20 mins.

While that's cooking, make up some cous cous.

Open up a tin of mixed beans, then add that and the roast veg and halloumi to the cous cous, stir it all around, hey presto.

I usually make extra so I can have it for my packed lunch the next day too.

My ultimate lazy meal though is cook fresh pasta, add some frozen peas whilst cooking, drain and mix through with pesto and black pepper, add some chunks of feta and a handful of rocket with balsamic vinegar.

Takes about 5 minutes to make, and it's green and healthy!

2 Ingredient pancakes

1 slightly brown banana - mashed up in a bowl
1 egg whisked
combine the two and spoon into a hot frying pan to make pancakes. Best to keep them quite small so they're easier to flip.
My boy loves them, and refuses sugar or honey (unheard of) as they are so sweet
