I just made a really quick meal which my children loved! Share your after-work quick tea successes!

After work quick tea, wolfed down by the DC!

Cooked some pasta
Chopped up a couple of tomatoes and a ball of mozzarella
Fried up a box of lardons
Mixed the pasta, mozzarella, toms and lardons together. Added a few black olives, a couple of abel spoons of philly and a blob of pesto
Stuk it in a dish
Cover in grated cheddar
Grilled it

I thought I'd made enough for DH's tea too, but there's hardly any left. This never happens! They both ate it all up, even DS who "doesn't like tomatoes".

I called it "Pizza Pasta" because its all the stuff you'd usually get on a pizza, but in pasta.

Sigh. Lots of lovely ideas. My 15 year old would refuse them all I think other than the fried rice ones.

Where did I go wrong?! Did the whole Annabelle Karmel thing when he was a baby. Salmon was a regular. As was the curry recipe she did. He has gradually over the years reduced the variety of foods he will eat. Drives me mad.

I get so bored cooking him the same stuff all th time!

But I will have another look through and see if there is anything new I can use from this thread.

I'm also lowering the tone here but Morrisons do a good Spanish omelette which takes a couple of minutes in the microwave, we usually serve with beans and corn on the cob (cooked in a microwave steamer). We also eat quite a lot of quorn which cooks very quickly.

Ok phone, you got me.
Butter one side of a wrap. Stick in a dry frying pan, butter side down.
Grate a very tiny amount of cheese over, and let it just melt.
Fold in half, use a plastic spatula to cut into wedges.
Devoured with snacks salad bits on the side.

Boil pasta, drain and put back on the heat.
Add a tin of condensed tomato soup, 2/3 carton of garlic and herb Philadelphia cheese and a splash of milk.

This is my go to quick, filling meal and I always have the stuff for it in the kitchen. It takes about fifteen minutes max.

Doesn't matter what I cook though, DD refuses anything that isn't chips or a chicken nugget 😒

Roast veg and sausages all in the same dish.

Layer of small whole new potatoes, or chopped in half if they are bigger, in the casserole dish with a knorr stock pot, in the oven on about 190 while I chop a red onion and a few carrots ( or substitute for whatever veg will be eaten)

All other chopped veg goes in too on top of the potatoes. Give it all a stir to coat everything in the now melted stock pot. Let all the veg 'roast' for about 40 minutes then chuck the sausages on top. Roast more until sausages cooked. Serve with bisto gravy.

Supernoodles with pepperami

Cook super noodles according to packet. Once cooked add chopped pepperami (one pepperami per packet of noodles)

Loving this thread...great slimming ideas if you tweak them a bit

Lat night we had turkey risotto. Stir fry some sliced turkey breasts, onions leeks. Cook some arborio rice. Add peas when nearly ready to serve , then mix with the turkey

Add any other flavourings your partial too..a bit of curry powder maybe

Delicious. That rice gives a lovely creamy texture to the dish. Without the calories

Omloaf sounds ace, definitely trying that.

Mine seem to like frittata as a quick easy supper.

Fry an onion, add in any veg lurking in fridge, peppers, courgettes etc. Or any cooked leftovers, peas, sweet corn, roast pots. Tip into an oven dish, add 5-6 beaten eggs on top of veg, grate cheese on top and pop in oven for 10-15 mins or until eggs are cooked through.

I serve with buttered bread and baked beans. Gets wolfed down!

Open up a chicken breast and bat it out a bit flatter

Mix some Philadephia cheese with some grated parmesan and put a generous blob in the middle of the chicken, then top that with a slightly smaller blob of Jamie Oliver Red pepper and walnut pesto.

Fold the chicken over and wrap snugly with a some streaky smoked bacon, (you can secure with a soaked cocktail stick or wooden skewer if you like but I find so long as the open end of the bacon is underneath it's usually fine.)

Whack in the oven on a bout 180 for about 25 minutes then turn it to grill setting for the last 5 mins to brown the bacon nicely.

When you plate up the chicken there will be lots of bacon and chicken juice left in the bottom of the roasting pan with escaped oozy cheese and pesto mixture. Give it all a stir to combine it into a nice sauce and spoon it over the chicken. My kids LOVE this.

cheese on a plate

Thinly slice cheese all over a dinner plate-put a few bits of butter over the cheese.Then put under the grill-keeping an eye on it until its melted and bubbling- only takes a few minutes.Watch because the plate will be hot-warn the kids-serve with bread a butter eat with a knife a fork.Really tasty- you can add tomatoes -or ham if you fancy.

My favourite quick lunch for the ds when they were younger was mashed avocado and houmous on toast, then cut into fingers. Now they are older they won't eat it, will have to try again!

We do something we call pizza chicken. Not entirely a quick meal but definitely easy.

Chicken breasts in an ovenware dish.
Cover with passata.
Throw in any veg - mushrooms, courgette, peas, chopped baby corn/sweet corn, etc.
Top with grated cheese of any kind.

Often accompanied by wedges with oil, salt, paprika and chilli powder/flakes.

Roughly 40 minutes. No left overs.

Chicken pie
Chopped onion, chopped leek, chopped mushrooms, diced chicken
Fry it all in a big pan, then add a tub of Philadelphia, a bit of water and a stock cube (you can chuck bacon or lardons in as well if you want)
Put it in an oven dish and scrunch up sheets of filo pastry to put on top, then wash with an egg
15 mins in the oven, while you do some green veg to go on the side
It's under 30 mins from starting it to eating

If you like spinach, luckily DD does...
Boil fresh pasta for three mins with couple of big handfuls of spinach, meanwhile heat olive oil and a bit of garlic, dried chili if you want, in a big frying pan Drain pasta (reserving some liquid) toss in pan so spinach pasta and olive oil and garlic are combined. Serve. Add parmesan if you can be bothered to grate some.
Ready in 5 mins from start to finish.

Peel and boil a sweet potato in some veg stock. When soft, mash with a little bit of the stock. Stir in some creme fraiche. This makes loads which I freeze and freeze. I then boil pasta, throwing in peas at the last minute, and stir in the sweet potato sauce then grate parmesan on top. My kids love it. No doubt because it's so carby!

Corn salsa.. no onions.

-corn (can use tinned)
-tomatoes
-cucumber
-peppers
-squeeze of a lime and some coriander.

Had this with cheese and egg quesadilla... with tomato relish as a dip (made with a small whole meal wrap)
done on a sandwich toaster Smile.

My mum used to make spaghetti & tomato soup and i loved it.

I still have it now occassionally with serious amounts of grated cheese

@CiderwithBuda, same for me, really. Luckily I don't mind eating exact same things daily. And DC do eat a reasonable range of vegetables... just not the veg people mentioned or prepared as described here.

My eldest teen would scoff almost any of it, though. Teenagerness makes them less fussy I've found. Not the baked beans, mind.

Funnily enough we also had a very quick and successful tea last night but it was virtually the same thing i.e. pasta with pesto, cream cheese, olives and red peppers. I also chucked in a bit of feta that needed using up.

Boil pasta, add peas / brocolli for the last couple of mintues. Drain. Add some chopped up chorizo.

Or

Cook pasta, add can of condensed mushroom soup, peas, tin of tuna. Top with crunched up crisps and grated cheese, grill.

Number 1 dinner on our house.

My kids wouldn't touch mackerel with a barge pole!!
