I just made a really quick meal which my children loved! Share your after-work quick tea successes!

After work quick tea, wolfed down by the DC!

Cooked some pasta
Chopped up a couple of tomatoes and a ball of mozzarella
Fried up a box of lardons
Mixed the pasta, mozzarella, toms and lardons together. Added a few black olives, a couple of abel spoons of philly and a blob of pesto
Stuk it in a dish
Cover in grated cheddar
Grilled it

I thought I'd made enough for DH's tea too, but there's hardly any left. This never happens! They both ate it all up, even DS who "doesn't like tomatoes".

I called it "Pizza Pasta" because its all the stuff you'd usually get on a pizza, but in pasta.

Pasta or Noodles cooked.
Packet of vegetables - peas and sweet corn or M& S broccoli, peas and carrots cooked.
Drain
Add prawns and a few squirts of sweet chilli sauce.

Easy peasy cheesy pasta. (Shamelessly inspired by / copied from Bing the annoying bunny!)

Boil pasta, plus some suitable veg together in a pan. Obviously take note of relative cooking times - carrots need longer, peas & broccoli need less time, etc.
When done, drain & place back in the pan. Add some cream cheese, grated cheese, & stir through to melt.

Stir Fried Salmon with noodles (easy way to use left over of past-its-best veg)

Make a quick marinade - chilli sauce with soy sauce (tomato ketchup with a splash of something spicy) a stock cube, little garlic...

Heat sauce in a wok, add fresh salmon chunks, stir fry 2 minutes.

Add chopped veg (onions, peppers, spinach, leeks, green stuff, peas)
Add soft noodles ( I use the ready-to-wok type packets) stir to heat through.
Add a splash of boiling water to loosen it.

Pasta with canned ratatouille topped with grated cheddar. It's the only cooked veg they'll eat.

We call it 'Italian sauce' because DD was doing project on Italy when I discovered they'd eat it.

I used to have to blitz the ratatouille, but I can get most of it past them now.

Am placemarking - but also bemused at people who say they can't be bothered/haven't time to make.. omelettes?

Small frying pan on hot, tiny bit of oil
Two eggs in a glass, whisk with a fork
Pour eggs into hot pan, turn down to medium
Grate cheese on the back/ham/whatever
Slide onto plate then roll up
Serve with salad

Takes 3 mins max. So what's the advantage of using a toastie maker?

THANK YOU for this thread! So far I've made two recipes from it (egg fried rice and mini savoury pancakes), both of which have gone down well with 18mo DD and allowed me to get some vegetables into her!

I make fry chicken pieces and mushrooms and then add soy sauce, honey and ketchup, put in some fresh egg noodles and sweetcorn and stir fry for 3-5 minutes. V tasty and my daughter loves it.

Tin of tuna, drained and flaked, mixed with a tin of condensed mushroom soup - do not dilute - warm together in saucepan.

Mix with freshly cooked pasta and serve with frozen peas.
Very tasty - my two used to woofle this up - v good cupboard/freezer standby. I still make it now and then.

Chicken noodle soup - scissor cut up a chicken breast and fry on low heat in a saucepan, chop up carrot and broccoli head and stalk, add stalk. Give it a few mins (I chop small to cook faster) add a tea spoon of bouillon and some boiling water then add broccoli and 3 min noodles - chicken noodle soup! Went down a treat

A favourite here is pitta pockets. Thinly slice peppers (red, orange or yellow - not yucky green) and sauté the strips in a splash of olive oil. Do the same with red onion, either in a separate pan or mixed with the capsicum (works best separate though, as different cooking pans). Finely grate a carrot and chuck in microwave for a minute to soften a bit. Cut pitta breads in half so that you have two pockets and toast lightly. Add a little oil to a pan and heat; cut a block of halloumi into thin slices and place them face down in the hot pan for a couple of minutes and then flip and cook for another minute or so - you want the cheese browned on both sides.

Now assemble the pockets: spread one of the inner sides of each pocket with hummus, sprinkle on some sumac, then layer up the peppers, red onion, halloumi and carrot. Serve with cucumber slices and halved cherry tomatoes.

Sounds a faff but honestly, it's so easy and takes 15-20 mins because you don't need to continually stir whatever is in the frying pans. As long as you have pittas and hummus, you can vary the other fillings as you wish - chopped feta, halved olives, sundried tomatoes, whatever you fancy. Healthy, loads of veg and so quick!

There is a tasty chicken salad which is mega easy to make especially for parents on the go. Also soaked oats for a tasty breakfast (or meal any other time of the day!) enjoy the read!

Beany burrito....

Dollop a couple of spoons of baked beans (straight from the tin) in the centre of a wrap. Add a slice of roast beef and a generous handful of grated cheese. Wrap and microwave for a minute... SO quick, easy, nutritious and delicious - approved by my very fussy 10 and 12 year old.

Chopped onions and 2/3 sausages out of their skins in a big frying pan. Separate the sausage meat and fry until cooked add a sprinkle of fennel seeds and then tin of chopped tomatoes and a squeeze of ketchup. Mix. Meanwhile boil pasta and add to pan and combine. Serve with a bit of grated cheese. Mine all love this and is quick and easy. (I add finely chopped carrots/courgettes before the tinned tomatoes too if I'm feeling bothered!)

Gosh. I wish I had a family that eat stuff. The OH won't eat anything with garlic, onion or pasta in. One child doesn't eat any form of veg (apart from sweet corn and cucumber) he won't eat anything on pasta he likes it plain. Also won't eat meat. Oldest child is great, eats most things. Middle one is fussy but not like youngest. I have looked at 2 pages of these recipes so far and not found one they'd all eat. 😡😡

Pizza toast is another one that gets thumbs up: lightly toast slices of bread in the toaster, or under the grill if you've got a baguette to use up. Mix tomato purée with a generous glug of Worcestershire sauce and a dot of garlic purée and spread over one side of the bread. Add loads of grated cheese and whatever chopped veg you fancy - onions, tomato, mushrooms etc. Sprinkle on some dried herbs and whack under the grill until the cheese is melted and bubbling. Yum!

Boil penne or fusilli pasta. Once drained pour in a tin of chopped tomates and lots of grated mature cheddar cheese. Heat up until the cheese melts. You can serve it straight away, or alternatively put it in a dish and put more grated cheese on top (best is if you mix 50% grated mature cheddar with 50% grated parmesan for the topping ) and bake in the oven til the cheese melts & goes brown.

Fish finger pie.

Fish fingers on bottom of pie dish.
Pour over baked beans.
Spoon thick layer of mashed potatoes.
Sprinkle cheese
Oven bake.

Serve with buttered white bread if you really want to add insult to injury.
