I just made a really quick meal which my children loved! Share your after-work quick tea successes!

After work quick tea, wolfed down by the DC!

Cooked some pasta
Chopped up a couple of tomatoes and a ball of mozzarella
Fried up a box of lardons
Mixed the pasta, mozzarella, toms and lardons together. Added a few black olives, a couple of abel spoons of philly and a blob of pesto
Stuk it in a dish
Cover in grated cheddar
Grilled it

I thought I'd made enough for DH's tea too, but there's hardly any left. This never happens! They both ate it all up, even DS who "doesn't like tomatoes".

I called it "Pizza Pasta" because its all the stuff you'd usually get on a pizza, but in pasta.

Pesto Whatever Pasta:
Cook pasta shapes in boiling water for around 9 mins. mins (usually fusili or penne.) After 5 mins add a couple of handfuls of frozen peas & tinned/frozen sweetcorn to the pasta.
Drain pasta/peas/sweetcorn & return to the saucepan.
Add pesto (however much you want.) Can be basil, tomato or red pepper pesto or even a mix of leftover pesto varieties.
Chop some fresh tomatoes (any type/size/however many you want.) Add to mix.
Add a few slices or chopped up ham or chicken or even a tin of tuna.
Add as much freshly grated parmesan/parmigiana or even cheddar to mix.
A bit of salt & pepper.
Make sure it's all mixed together.
Return to low heat for about 2/3 mins stirring & add more pesto if needed.
Serve in pasta bowls or whatever you have & grate cheese over it if you wish.
Done in under 15 minutes & wolfed down.

Lioneggmeg seriously chuffed for you and your offspring that it was a hit. I was pulling my hair out before I discovered it. Eggs are such a simple protein to get down the little darlings. Grin

Depending on feelings of laziness...

Make cheese sauce / heat shop bought cheese sauce
Cook pasta
Stir sweetcorn into cheese sauce

And serve to happy sunshiney faces Grin Hmm .

Broken lasagne:

Fresh lasagne sheets, ripped up into 6-7 random pieces, boil for 3-5mins.
Drain, mix with ready made bolognese sauce, pour over ready made white sauce, top with cheese and bake for 15 mins.

Can vary it with cooked chicken, pesto and cream or roast veg and tomato sauce.

Boil pasta. In another pan, put those 'scan' meatballs in enough passata to cover them and heat through gently. At the end you can put some beans or broccoli in with the pasta to save on pans. Drain pasta/veg and pour meatball and tomato sauce on top.

Frankfurters, wrapped in strips of bought puff pastry, brushed with egg yolk and baked. Serve with vegetables to counter the guilt.

For 'speedy I can't be bothered to cook' meals we have pizza wraps. Tortilla wrap with tomato purée, topped with whatever pizza topping you like and then cheese, salad bits on the side.

Also do tuna mayo pasta with sweet corn and peas. So quick and lazy.

Also as others have said, omelettes are a quick favourite too.

Definitely going to try some of the other ideas here. The fried rice sounds great for using up leftover veg.

Not tried on children but as a student my go to was pasta beans and cheese with vinegar and black pepper.

bung a jacket potato in microwave and whilst it is cooking chop onion and mushroom in frying pan with bit of oil or butter, add handful of frozen peas and/or sweetcorn. When jacket is cooked- chop up and add to pan and cook till lightly brown, add a glug of cream or a spoonful of philli and bubble away. chop some cheddar and bung it in till meted (too lazy to grate) serve with ketchup if being really dirty. You can add cooked ham/sausage/hotdog etc

Rice and bits - cook rice in microwave (rice with double amount of boiling water and stock cube cook 12 min) whist this is cooking get a large saute pan and cook chopped veggies e.g onion, carrot, celery, mushroom, peppers, add handful frozen peas, sweetcorn green beans etc.when this is cooking make up Chinese curry sauce using paste or powder using remainder of water in kettle. when rice is cooked combine with veggies and serve with curry sauce. Again you can add meats/bacon/chopped hot dogs (either meat or veggie alternative/quorn)

Prawny pasta or noodles.

Simplest version is pasta/noodles, some frozen prawns, some frozen peas and a spoonful of red pesto - for some reason it works better with red.
You can add in more veg if you wish - it works with sweetcorn/broccoli/carrots...

Once the pasta is cooked, put the other ingredients in the pan with a little bit of the cooking water, make sure everything is defrosted, and then add the pasts back in.

Easy quiche
In a bowl 6 eggs, 30g butter, 30g flour, tub cottage cheese - beat, pour into quiche dish, dot in tin drained salmon/some ham cubes/tomatoes etc and scatter over grated cheese - cook for 30-40 mins at 180deg. The flour/butter forms a crust on the edge and it saves the faff of pastry

quick quesadillas

pack of tortilla wraps - big frying pan - warm wrap both sides, add cheese, olives, ham - what ever - sprinkle cheese over the top - grill till it melts - top with another warm wrap

2 pieces of Salmon, on a large plate
Squeeze lemon juice, plus a sprinkle of salt and pepper
Cover with a similar large plate, upside down
Microwave for 1 minute per piece - in this case 2 minutes

While this is cooking, steam some broccoli for 2 minutes

Serve with tomatoes and/or beetroot

Salmon cooked like this is SO soft and creamy - delicious

I get so many brownie points when I cook this for my wife !

I love this thread. My 7 year old DD and I just made savoury pancakes and everyone loved them! Yay a new quick meal!
