So.... Is anyone interested in a thread where we all say what we are having for tea / dinner depending on where you live, and I can steal your lovely ideas. Hopefully we could share ideas?
We are having turkey burgers in buns with corn on the cob and salad tonight, homemade pizza tomorrow.

I had lamb chops earlier to serve a bit with dds veg pasta dinner and once she's asleep I'll be having a bowl of lovely Korean instant spicy noodles.

I will plan something proper for tomorrow!

I really must do something to improve my meals when dh is away. I used to love cooking for myself but now choose a quiet cup of tea and a super early night over dinner!

Pork chops, and I'm making a herby crusty cheesy topping for them. Leeks and sage potato wedges on the side, and an apple-cider sauce to go with. DP very excited.

Except I haven't started yet as I flopped on the sofa with a glass of wine after a stressful day. DP shuffled to the kitchen and very quietly assembled half a jam sandwich while he waits Grin

I made hairy bikers Cornish pasties with some left over roast beef and Delia's quick flaky pastry. Had them with purple sprouting broccoli and buttered carrots.

Never made them before and I don't make pastry very often but they were delicious, will definitely make them again.

Chickpea, sweet potato and spinach curry with basmati rice. Was lovely, even gobbled down by my three year olds.

Me:
Chilli and lime mackerel with 5 pan fried garlic prawns with salad leaves
DP: same but with noodles instead of salad.

We'll both have a slice of pineapple after.

Love summer food!

Doing an end of the week roast.
Chicken rubbed with: onion and garlic powder, thyme, salt, black pepper, cayenne and paprika. Mix spices with some softened butter.

Dry the chicken well with paper towels.

I cook a roast with my la creuset pot. letting the veg roast in the fat drippings. Spoon out potatoes half way through to crisp up separately.

then I half the vegetables and some continue to roast among the chicken, the rest get blended with a stock cube and make vegetable gravy. I'm also going to try stuffing, which I havent done for ages.

will probably be eatting it at midnight. but the bonus of leftovers....

I've got a cooked chicken that I've pulled apart, I was thinking of making a chicken pie but I've never done one before. I've got broccoli and cauliflower and carrots I was going to put in it and puff pastry for the top. But what do I do about a sauce? I've got the bistro white sauce and parsley sauce granules and chicken stock but haven't a clue what I'm doing.

It's dinner Wink

Homemade lasagne tonight.

Well, I say homemade - the lasagne sheets are from a packet and the bechmal (sp?) sauce is from a jar Blush

Need to pop to the shops, so will probably get some garlic bread and salad to go with it.

Nacho night tonight at our house!

Topped with fajita chicken, homemade guacamole which is amazing if I do say so myself, salsa, sour cream, diced red peppers, and loads of jalepenos! Not the healthiest of teas but it's Friday so it doesn't count Wink.

It's meant to be homemade burgers....
DH was also meant to be home at lunchtime so we could go grocery shopping before family show up for the weekend....I don't think we will be having homemade burgers Sad probably end up with what ever shit is in the freezer or a takeaway Angry

Jacket spuds, barbecue chicken and home made coleslaw here today. Usually have an easy meal on Friday instead of a takeaway which we are trying to avoid. That way I get a break from the cooking and we save money as well.

Piri piri roast chicken legs with spicy baked fries.

Trying to use all my Nandos marinades up before they go out of date.

Then I can come to the UK and get some more....
