Good news about your friend Ellie! I hate it when doctors say things like that! All that worry for nothing! I had a growth which I had cut out and sent of for testing as the doctor thought it might be cancerous - it wasn't thankfully but I nearly worried myself sick! I was really angry afterwards with him for making me so scared for no good reason - he could have just said it was routine to send these things off and not mention the C word!
Molly - the cupcakes I made are just regular ones - but really delish! Here is the recipe:
175g plain flour
1 tsp baking powder
A pinch of salt
25g cocoa powder
150g caster sugar
100g unsalted butter, very soft
2 large free-range eggs
125ml milk
A 12-hole muffin tray lined with paper cupcake/muffin cases
- Preheat the oven to 180 degrees C (350F, Gas mark 4)
- Place a large sieve over a mixing bowl. Tip the flour, baking powder, salt, cocoa powder and sugar into the sieve as you measure them, then sift into the bowl.
- Add the butter to the bowl. Break the eggs into a small bowl then beat with a fork until a bit frothy.
- Pour the eggs and milk into the bowl. Use a wooden spoon to mix all the ingredients together to make a smooth cake batter.
- Carefully spoon the cake mixture into the paper cases, putting an equal amount into each one.
- Put the cakes in the preheated oven to bake for 20 minutes, until just firm to the touch. Remove the tray from the oven and leave to cool for about 2 minutes. Transfer the cakes to a wire rack and leave to cool completely.
I took mine out after 18 min as I personally think 20 min is too long and makes them a little dry.
Cream cheese frosting:
125g cream cheese
30g unsalted butter
225g icing sugar
1 teaspoon vanilla extract (I add 2 as I like the flavour)
pinch salt
1.5 tbs milk or cream - only if you think the consistency needs it
- Blend softened cheese and butter in mixer
- Blend and whip in the sugar and vanilla
- Beat in enough cream to arrive at the right spreading consistency
- Ready to spread
I added a few blueberries as a topping.. yum!
