What is in your "massive salad" ?

I'm looking for inspiration for my lunch salads as I've gotten into a bit of a rut.

I'll go first, today I had: chicken breast, salad leaves, grated carrot, tomato, radish, spring onion, beetroot and grated cheese

The salad I'm just making will have boiled egg, tomato, cucumber, lettuce, sweetcorn, beetroot and a dessert sppn of coleslaw.

Very nice Spanish canned beans & tuna, roast courgettes, peppers and spring onions, many leaves. Part of a cold supper last night and will be amazing for lunch today. Yours sounds lovely.

I can heartily recommend a Glasgow salad if you need filled up. You most likely won’t even need a massive one.

Highly recommend the salad lab on tiktok. Unfortunately I don't think she has a website with the recipes so I find myself having to pause the videos to try and follow along making them myself.

Grilled halloumi, walnuts, sultanas, pumpkin and sesame seeds, green leaves, cucumber, tomato, balsamic. Nom.

Or your basic salad veg with tuna mayo and grated cheese

I’m just roasting sweet potato (on its own) and chickpeas in harissa paste for a salad tomorrow. Will add leaves, toms etc, then feta and pickled red onion. It’s delicious! And def the fanciest salad I make - am usually leaves/Tom/cucumber kind of girl!

Mmmm, salad, yum.

I usually have little gem lettuce, a handful of spinach, watercress, and rocket, spring onion, cucumber, radishes, pickled beetroot or gherkins, finely chopped up capers, green olives, and anchovies, with some chicken or prawns and some orzo or wholegrain rice. I'll make a dressing out of olive oil, mustard and lemon juice.

This is all chopped and mixed together in a mixing bowl, which I proceed to eat it out of Grin

Or it gets crammed into a tub for lunch the next day.

2 favs are:

chicken, mixed beans, salsa, red onion, rocket, spinach, jalapenos and some crushed tortillas for texture and loads of tobasco

sliced cabbage, carrot, red onion, grated ginger, protein of choice, vinegar, sesame oil, soy sauce and some cold vermicelli noodles.

Rocket, avocado, sesame seeds, brocoli and pickled ginger is my favourite. My other go to is rocket, beetroot, walnuts and goats cheese

Leaves, cucumber, tomato, beetroot, olives, dressed bulgar wheat or chickpeas (garlic, lemon, a little bit of good olive oil), feta, grilled chicken

Red onion, cucumber, cherry tomatoes and feta cheese with olive oil and red wine vinegar.

Alternatively mixed leaves, shredded chicken, avocado, grated emmental and quartered hard boiled eggs with vinaigrette

Alternatively diced orange and yellow pepper, diced cucumber, ready cooked quinoa and sliced black olives with olive oil and posh balsamic vinegar.

I'm very boring and low carbing but

Feta, ham, egg, turkey or chicken

Spinach, rocket, watercress, unknown red leaves (in Sainsburys bistro salad) little gem lettuce, sometimes a bit of tomato, shredded beetroot in small amounts

15ml full fat mayo

salt + pepper

or sometimes I have just feta and watermelon

I have 4/5 leaves of little gem, 2 cherry tomatoes, 1/2 inch of cucumber and about 1/4 inch of carrot. A stick of celery adds lots of crunch.

I find once it’s chopped up it’s absolutely huge, all the water / nutrients fills me up until breakfast the next day.

Salad leaves/spinach, tomatoes, cucumber, peppers, spring or normal onion and any other fresh veggies we happen to have all chopped up quite small, can of lentils, couscous, feta cheese, olives and coriander. Sometimes I will add nice smoked ham chopped up small too.
Substitute/miss out ingredients as needed.

Mmmm I might just need to make it again today!
