What is in your "massive salad" ?

I'm looking for inspiration for my lunch salads as I've gotten into a bit of a rut.

I'll go first, today I had: chicken breast, salad leaves, grated carrot, tomato, radish, spring onion, beetroot and grated cheese

Lambs lettuce, chilli honey halloumi, grated beetroot, roasted peppers and grilled spring onions, courgette and asparagus. Yum, yum, yum!

Vegan here.

Currently enjoying taco salad- pretty much what we’d have in tacos in a salad so with lettuce instead of on wraps!

Roasted seasoned cauliflower & chickpeas, Mexican rice, lettuce, tomato, cucumber, red onion, fresh chillies, spring onion, avocado & sour cream. If it having it for dinner rather than lunch I might add some refried beans too.

Chicken, tomatoes, a cronchy lettuce, onion, cucumber mixed through with hummus and olive oil
Bonus with croutons

Also love Watercress and a horseradish cream and sliced steak

Mixed leaves, cucumber, tomatoes, grated carrot, a pulse based item like butter beans/chickpeas/falafel, peppers, olives, sweetcorn, spring onions, pumpkin/sunflower seeds, and hummus/avocado/tzatziki or olive oil as a dressing Smile sometimes have it with toasted wholemeal pitta bread, bulgur wheat or pasta - my fave for salad is wholewheat farfalle.

Usually I stick to the same base, rocket or little gem, sweet corn, red onion, capers, pine nuts, cucumber. Then I'll just add what ever protein I'm having to it.

My favourites:

'Harvester' salad - shredded iceberg lettuce, tomato, cucumber, onion, green pepper, grated carrot, sweetcorn and diced beetroot. Topped with BBQ chicken, ranch dressing and crispy bacon and onion sprinkles.

Avocado and Mango salad...peppery salad leaves, sliced avocado, mango and red onion, I usually add tomato, cucumber and red or yellow pepper. Lovely with seafood or chicken.

Nutty salad...shredded white and/or red cabbage, raw broccoli broken into small florets, grated carrot. Dressing made from equal parts mayo, natural yoghurt and onion relish, sprinked with dried cranberries and salted roast cashews...really nice with cold roast pork.

I tend to roast loads of veg on a Sunday then mix with leaves, green beans and whatever protein I fancy. I think the secret to a great salad is the dressing, I love tahini dressing or just olive oil and balsalmic

Chop cucumber and tomatoes into little square and mix with freshly cut corriander, a bit of salt and some cumin. Put over lettuce leaves and take falafels separately- add later (to preserve crunch) can top with humous and toasted croutons made from a tortilla wrap or pitta bread! Delicious Wink

My main go to lunch salad is smitten kitchen's broccoli slaw. It's very moreish and works well as a side dish.

Bag of cesar salad, cucumber, tomatoes, chicken, bacon, roasted peppers, onion, chilli, avocardo, black pepper, garlic salt.

My fave is:
Crispy chicken, bacon, cubes of roasted sweet potato, avocado, coriander, cucumber then whatever salad leaves we have around.

I also recently started buying Caesar salad dressing, it’s so much better than whatever I was making I don’t know why I didn’t do it sooner!

Other nice additions:
Fried or grilled Halloumi
Fennel
Cheddar
Crushed peanuts
Pork belly
Apple
Garlic bread croutons
Edamame beans
Red onion
Chives
Honey roasted salmon
Prawns

Really we just get whatever lettuce or salad leaves we have in the fridge, then top with whatever’s around.

Green mango, carrot, onion, radish, white cabbage, sauerkraut (cos kimchee is hard to get) all dressed with lime and fish sauce plus chillies garlic etc. Add lettuce, spinach, honey roasted peanuts and a random leftover protein source to serve. Clears the tubes

I can heartily recommend a Glasgow salad if you need filled up. You most likely won’t even need a massive one

I Edinburgh-ise it by dolloping on a big dod of brown sauce. The spices give it a certain je ne sais quoi.

Very cosmopolitan of you! I'm reminded of my student days in Glasgow now and I really want a battered sausage supper!

Very nice Spanish canned beans & tuna, roast courgettes, peppers and spring onions, many leaves. Part of a cold supper last night and will be amazing for lunch today. Yours sounds lovely.
This sounds delicious! Do you use any herbs or dressing? We're the beans cooked or just fresh from the tin?

Green salad leaves, mixed peppers red and yellow usually, tomatoes, thinly sliced cucumber as a minimum. Then either feta, a little couscous and roasted chickpeas or kidney beans, feta and avocado. Dressing is lemon juice, a little olive oil and a pinch of salt.
