What is in your "massive salad" ?

I'm looking for inspiration for my lunch salads as I've gotten into a bit of a rut.

I'll go first, today I had: chicken breast, salad leaves, grated carrot, tomato, radish, spring onion, beetroot and grated cheese

I Edinburgh-ise it by dolloping on a big dod of brown sauce. The spices give it a certain je ne sais quoi.

My favourite salads are tasty, but not necessarily the healthiest...

Camembert salad: basic salad ingredients and leaves (bonus points for addition of rocket), dried cranberries, walnuts, caramelised onions and 1/4-1/2 a baked camembert served on top with some warm crusty bread (sourdough is my favourite).

I also rather like a bacon and egg salad (hot bacon, hot egg with runny or soft yolk, sliced).

Just had tuna, lentils, chickpeas, pepper, cauliflower and Brussels sprouts with a honey/ginger dressing. Proper filled me up.

Today I had salad leaves, tomato, cucumber, radish, puy lentils and boiled eggs. Olive oil and white balsamic dressing.

It's far too cold to eat salad.

I've just had pea and spinach soup with 2 slices of bread and butter. Yum yum.

Salad leaves, grated carrot, red onion/spring onions, tomatoes, cucumber, pomegranate, feta cheese and chickpeas. Sometimes add in cooked:cooked pasta.

Great - my kind of salad.

But we won't score many Mumsnet virtue points with that.

Think we'll have to add a token sprinkling of pomegranate seeds, goji berries and shredded kale if we wish to enhance our MN credentials.

I'm very keen on Puy lentils as a base or more interesting rice like black rice. You can add protein ( chicken, salmon, prawns,), olives, cucumber, carrots, celery, whatever you like.

Couscous, tuna, cucumber and mixed salad leaves

Cucumber, mixed peppers, tomatoes, mixed leaves, fried/grilled halloumi and thousand island sauce

It’s the Tesco simple salad with a can of tuna on top of it. I have it everyday for lunch

After seeing this thread, and with my nearly empty fridge, just made a salad, too, which was very uninspiring.

But our favourite salad at the moment is this one from Olive Magazine. We make it at least once a month, and it keeps super well in the fridge, even when fully dressed: www.olivemagazine.com/recipes/healthy/gochujang-cabbage-coriander-and-apple-salad/

I like salad leaves, tuna or cold cooked salmon, avocado, beetroot, hummus, olives, lots of cucumber and cherry tomatoes, sometimes celery or cold leftover broccoli, sometimes pumpkin seeds, (and baby pickled onions).

The perfect salad contains:
Baby spinach leaves
Avocado
Cherry tomatoes
Baby beetroot
Cubed mozarella
Black olives
Cold roast sweet potato
Pine nuts
Balc
Balsamic honey & mustard dressing.

Unfortunately it costs a bomb so I don't often make it, but I fancy it now...

Ooh also not really a salad, but - new potatoes/Charlotte potatoes, onion, garlic and chorizo/salami all fried in the pan with a teeny bit of oil, then tossed with salad leaves

Not sure I can be doing with all that veg so I have just had 3 slices of Mothers Pride for lunch.

But it was healthy because I had some jam, for Vitamin C and that
