What is in your "massive salad" ?

I'm looking for inspiration for my lunch salads as I've gotten into a bit of a rut.

I'll go first, today I had: chicken breast, salad leaves, grated carrot, tomato, radish, spring onion, beetroot and grated cheese

I have bean sprouts, quinoa, sunflower seeds, lemon juice and Tofu.
With a sprinkling of my soul that I have sold to the devil.
I follow this with an hour of Pilates.

I can really recommend this book Salad Love by David Bez

It contains 260 salad ideas (one for every week day of the year) but just as important IMO he has a section where he describes his formula for putting together a salad. After a while of following his recipes I was able to adapt and make up some based on his ideas.

Actually another thing I sometimes do if I really need inspiration is to go for the alliterative salad. I.e. pick a letter and then have all ingredients starting with that. For example,

  • Pastrami, peach, pea shoots and pecan nuts
  • Melon and mozzarella balls
  • Chicory, chick peas and cheddar cheese

Honestly, this works surprisingly well to give some interesting combinations

I’ve not got much to add as 180 posts on salad pretty much cover every possible combination!
However, a few bits I like, M&S do a jar of sliced, pickled red onions. But there’s some kind of chilli in the pickling vinegar so they have a bit of a kick. They really add something to a salad.
Also if you like the crunch of croutons, but are trying to be healthy by having having a salad, a couple of the seeded Riveta Thins crumbled up are great.
My favourite salads are Monday salads, I use up left over veg from the Sunday roast. Today I had left over cooked cauliflower and carrots which I sprinkled with turmeric and cumin, sprayed with oil and baked until the cauliflower started to brown.
I love it when we have left over stuffing that crumbed and crisped a little more added to a salad is fab.

Big fan of julienned veg in my salads

Chicken and bacon with avo, lettuce, cucumber and sundries toms

Shredded carrot, beetroot, turnip, radish, mange tout and cucumber, coriander, soy, sesame, garlic and chilli with a tuna steak

Shredded courgette and tomatoes with feta, lemon, chilli and salt

Shredded beetroot and celeriac with goats cheese and walnuts

Tinned tuna with bean salad, celery, peppers, carrot, gherkins and cucumber

Nashville chicken with coleslaw, iceberg and tinned sweetcorn

Mixed leaves, carrot, peppers, coriander, tomato and avo with Mexican spiced chicken and pink citrus pickled onions.

This is my go to, that the thread inspired me to have tonight that I haven't had since summer but have a couple of times a week during!

Quinoa, kale, broccoli, carrots, baby leaf salad, roasted yellow peppers, avocado, falafel and pomegranate. I mix Greek yog with a bit of olive oil, lime juice and salt and pepper for the dressing. It's lush.

40g rice
tin of tuna in spring water
100g red pepper
25g red onion
100g celery
70g avocado
10g pumkpin seeds

Prawns, diced chorizo, bistro salad, red peppers and balsamic dressing.

Falafel, houmous, couscous, salad leaves etc.

Tuna (with Mayo) or chicken breast. Lettuce, cucumber, tomato, bell peppers, black olives, feta cheese and drizzled with Honey & Mustard dressing

Or Tuna Niçoise salad. Tuna steak, usual salad, olives, long green beans, new potatoes. You can add boiled egg too but I don’t usually bother

My fave salad, as a whole meal not a side is usually;

Romain lettuce, baby spinach, rocket, grated carrot, finely chopped tomato, onion, cucumber, beetroot, crispy bacon, hard boiled egg, cooked mushrooms and cubed fried potatoes. With a honey/mustard dressing.

I’ve got one in the fridge which is shredded cabbage, carrot, red pepper and spring onion, a load of rice noodles and a peanut dressing (peanut butter, sweet chilli sauce, chinese five spice, let down with water)

Looking forward to it for lunch tomorrow!

Mine are mostly the same all the time. Always use rocket because I don’t really like lettuce. Chop everything very finely.

So: rocket, radishes, cucumber, celery, three colours of capsicum, sweet corn, sugar snap peas (cooked and cooled) or raw snow peas, carrots, snow pea sprouts. Balsamic dressing and some cheese or boiled eggs.

Like the sound of the peanut dressing above through I might try that.

Can I also recommend Ottolenghi’s wasabi dressing for salad which is Greek yoghurt, olive oil, wasabi, lemon, salt + pepper.

It went with some kind of apple and radish slaw originally.

Today was raw kale, red pepper , carrot, avo, tuna, chilli, tomato, cucumber ,celery and fennel with red wine vinegar, olive oil and basil. Chopped up last night, chucked in the fridge and devoured at lunchtime. Anything in the fridge drawer is fair game (except beetroot) round here!
