What is in your "massive salad" ?

I'm looking for inspiration for my lunch salads as I've gotten into a bit of a rut.

I'll go first, today I had: chicken breast, salad leaves, grated carrot, tomato, radish, spring onion, beetroot and grated cheese

Mine today had shredded iceberg, cucumber, baby plum tomatoes, chicken and green lentils. Was tasty!

Usually I make a chicken Caesar, because the half a packet of Parmesan is deliciously filling, or one I nicked from Tossd which is:

Leaves
Tomato salsa
Avocado
Shredded chicken
Grated cheese
Crushed tortilla chips
Ranch dressing

In summer I like courgette, cucumber, pea, mint, feta and lemon

Mixed grains in a microwave pouch. Stick some chopped up peppers and aubergine in the oven. Mix all together with a big bag of salad leaves, feta, cherry tomatoes and a big squeeze of lemon juice. A healthy hearty salad that’ll last days and fill you up too. You can add chopped chicken too or a piece of/tin of fish on top

Greek salad
Tuna, canellini beans, red onion and mayo
Pan fried chicken breast, green stuff, ton of garlic and lemon juice
Halloumi, chorizo and rocket

None of which are low cal but they're filling!

My current favourite is quinao, tenderstem brocoli, salad leaves, avocado, tuna, soft boiled egg and some seeds scattered over. Lemon-mustard dressing. It's one I have when I know I have an intense afternoon.

I also like quite a few of the Roasting Tin more salady recipes, there's one which is some kind of grain, halloumi, avocado and mango. I find you can make a batch and eat over a few days.

Tin of mixed beans, cucumber, tomato, tin of tin & feta cheese. Was yummy!

I can heartily recommend a Glasgow salad if you need filled up. You most likely won’t even need a massive one.
Never heard of that *@RJnomore* an am fae glesga. Looked it up and it gave me a good laugh.

Chicken or hardboiled eggs, crispy bacon bits or croutons, parmesan shavings, olives, anchovies, little gem lettuce, Caesar dressing.The lettuce is basically there solely so I can call it a salad.

I’m having lettuce, tomatoes, pepper, cucumber, olives, roast spicy chickpeas, grated cheese, some blobs of honour and some quorn ham with a splash of lemon juice over it all. The chickpeas make it, would be great otherwise!

Highly recommend the salad lab on tiktok. Unfortunately I don't think she has a website with the recipes so I find myself having to pause the videos to try and follow along making them myself.
Is the recipe not just... Chop it all up and mix it together? Surely you just need to know the ingredients? Confused

@RJnomore1 I had to google it! I thought it was something I'd never heard of 🤣 but like the first time I saw a Waldorf salad or something.

My kinda salad though!

Base of mixed leaves,
chopped cucumber
finely grated carrot about 2 tbs
a layer of grated chedder cheese
chopped, hot roast med veggies (frozen ones from sainos, peppers, courgette and aubergine roasted in oil for 20mins
then 4 chopped hot chicken pakora (again sainos)
this is topped with a heaped tablespoon of ff mayo with a teaspoon pf saracha chili sauce which is then stirred in.

I'm doing keto if anyone cares!! :)

Fig, pear, lettuce, spinach, cucumber, tomatoes, grated carrot, walnuts and some blue cheese today, little balsamic vinegar and a few pumpkin seeds on top.

dressing of lemon juice, white wine vinegar and garlic oil
A bit of an effort but lasts a couple of days.

My favourite one at the minute is a little gem lettuce, rocket or spinach, cucumber, cherry tomatoes, red onions, celery, carrot, beetroot, olives, 1-2 new potatoes, chicken and a little bit of parmesan. I chop it all up into quite small pieces and mix it all together with either a tablespoon of honey mustard or caesar dressing, it's lovely and surprisingly filling!

I do love a salad but at this time of year I just can't face them! I eat more veggies than salad in winter.

In warmer weather my go to is:

Rocket
Beetroot (not pickled)
Salad cheese (like feta but not sheepy)
Cherry toms (room temperature Blush)
Cucumber
Red onion
Red or yellow pepper (also room temp)
And then it will be whatever the main item is ie chicken tuna salmon etc
Dressing is always a teaspoon of either extra virgin or avocado oil, squeeze of lemon juice and salt (maldon flakes) and black pepper (coarse ground)

Halloumi, spring onions, ribbons of cucumber and sliced avo, dressed with lime, olive oil, black pepper.

Roasted cubes of sweet potato or butternut and beetroot, feta, baby spinach, dressing of lime, chipotle paste, honey and oo. Few tortilla chips and quick lime juice pickled red onion on the side.

Cauliflower roasted with chickpeas bit of harissa, spinach, raisins/pomegranate, feta.

Lots of leaves grated carrot, red onion, cucumber, hot broccoli and green beans, a poached egg with runny yolk. Sometimes with fried chorizo. And always with balsamic and extra virgin olive oil dressing. Sometimes yeet some seeds on too.
